Rainy day taco party! Sautéed Poblano peppers, shallots, mushroom, kidney beans and sweet corn rolled up in mini corn tacos. I added fresh salsa and CHILLED avocados to cool down the habanero lime hot sauce 🌱
Whether I’m feeling phat or fat this is my go to skinny drink. High quality maple syrup, peeled ginger, lemon juice, and lemon pulp all blended with ice. It’s makes a frothy yummy detox drink and I always feel better!
I snuck some pumpkin purée into my Goan curry simmer sauce along with chickpeas, onions, cucumbers, coconut cream, parsley and just a splash of cognac for a light lunch. 💡 This is a basic red curry paste local to Goa, India. Positioned on a warm coastline, ingredients typically include the meaty portion of the coconut, tamarind, ginger, and other spices. Traditionally, this is used in many fish dishes like prawn curry but can be easily adjusted to fit a vegan diet.
Salad prep for the weekend so I can be healthy and still have fun for the last weekend of September! Mixed greens dolled up with some collard greens, red cabbage, and pickled shallots. Bonus item: dried apricots! (Because they are orange and I’m feeling festive, you know)
As a foodie, hell I even went to culinary school, I hate when people post things that they didn’t make themselves. I hate it, I hate it. How dare you post store bought food for likes. That being said... to push the vegan movement forward... I guess I can look past it. If it means spreading awareness... and giving recognition to stores that offer kind options. So here it is ladies and gentlemen.... a falafel bowl from @rotimodernmed that I slammed in between appointments. I did not make any portion of it, my apologizes.
Homemade vegan egg rolls made heathy by baking them instead of frying- the baked ones actually take water instead of oil! Of course I made a veggie full stir fry and even I subbed in hearts of palm for a firm tofu feel, rolled them up, baked them and garnished them with micro greens. I dipped them in everything sriracha, soy sauce, mustard, and even extra peanut sauce I had in the fridge 🌱
Vegan chili not missing any of the goodness (aka toppings!) Dairy free sour cream, avocado, croutons, roasted butternut squash, green onion, fresh rosemary and cracked pepper 🌱
Scary movie night with the roomie 💀 🍿 🎃 Instead of a tub of popcorn I went with a tub of G R E E NS. I charred 3 heads of broccoli in the oven then tossed it with puréed artichokes, vegan pesto, balsamic glaze, fresh thyme, almond milk ricotta, fresh basil, micro greens, cracked pepper, and crushed flaxseed crackers on top for some crunch. I paired it with an old vine Argentinian Malbec and stayed full the whole movie 🌱

Hello fall! First order of business... start my weekly roasts! I always make homemade croutons and roast a pan of pumpkin, squash, sweet potato, etc. I make sure to keep both of these on hand to top dishes from salads to soups to pasta or to be eaten alone. It’s a fall/winter routine you need to start ASAP 🌱
It’s always really hard not to put cheese on salads but look at those colors... clearly pickled shallots can fix almost anything 🌱
Amen to salted cinnamon pine nut peanut butter sourdough toast with fresh berries. So easy to make! 🌱
Being bad with a 3am vegan snack... A little plate of medjool dates, moon drop grapes, vegan/gluten free crackers, and almond milk ricotta drizzled with balsamic glaze and thyme. Paired with a red blend with notes of cherry and dark fruits 🌱
For the record I didn’t not eat this! However, this dish turned out fabulous and I had to share. For my friends who are not vegan I at least try to give a seafood option as a lesser evil. White wine, lemon, vegan butter, parsley, and of course vegan butter 🌱
🚨 VEGAN RESTAURANT ALERT 🚨 sEiTaN & cAsHeW vEgAn NaChOs: Honestly could not tell these were meat or dairy free and got worried I was breaking my green streak but here almost all menu items can be made vegan if they are not already. It’s always cool to find a vegan restaurant but it’s electrifying to find a vegan bar! My new favorite place in town @handlebarchicago 🍻🌱
Totally looks like chicken, right? Today I was already late to work when I made this salad but my garlic tofu and shallot soy sauce scramble was well worth it. Tasted amazing and filling despite having to eat it at the red lights in my car 🌱
