Green Posole (Posole verde) is my favorite version of #posole, for 2 reasons: 1) It uses FRESH, lots of #green vegetable, ingredients, and 2) It’s just the most delicious version (maybe for this exact reason). I made #posoleverde from scratch tonight. I feel so accomplished; lately I have been assembling uneventful yet healthy, balanced piecemeal meals/snacks for my children from each food group and I forgot the last time I actually made something that I craved where I was satisfied with the outcome. (What’s funny, though, is that this is also a healthy, balanced, meal; it’s also incredibly yummy). I usually crave other people’s food, not my own. Tonight marked a milestone for me: I made something out of authentic ingredients, honored a #process (not an instant pot nor slow nor pressure cooker), and was very pleased with the flavor. Patience truly is the essence of fine Mexican food (in the words of @lolitastacoshop)!! Green enchiladas for dinner. You know that sounds delicious and you want them. If you have never had green enchiladas bless your heart. Run to the store now. Buy the ingredients. .

Ingredients:
1. Low carb torts
2. Salsa verde from @traderjoes
3. Guacamole salsa from @herdeztraditions
4. Cheese--honestly I use whatever I have--today I used monterrey jack, cheddar, and cojita.
5. Chicken is from the breasts that hubs grilled yesterday. .
I heated up the whole jar of salsa verde, a splash of heavy cream and as much guacamole salsa as you want spice wise. Tight roll those suckers like they are your jeans and you are going to an NKOTB concert and lay in the pan seam down. Spread the sauce across the top and cover with cheese 🧀🧀🧀I baked at 425 for probably 15-20 mins.

Note these tortillas do have wheat so if you dont dabble in wheat, these are not for you. They are 5 NC and I'll eat 1 probably. .
