Broccoli Cheddah Soup | Feelin’ on the up & up, but don’t think for a minute I’m not milking this cough for all it’s worth & making my man spoon feed me soup. Yessiree. 🥦 #ontheblog now!
This past weekend I discovered the wonders of smoked tofu for breakfast and I feel like I’m living in a whole new world 🙋🏼♀️ I made up this breakfast bowl on Sunday when I had pretty much no food left in the fridge and had to get creative 🤔 I had a potato, an onion, a block of smoked tofu, and an avocado 😅 I decided to put a fun twist on my regular breakfast veggie bowl and thus, this was born! 😜 Also since I’ve been trying to eat more plant based, discovering that I can have smoked tofu in place of eggs has me not missing eggs at all because it is soooo good 😍 .
For this bowl I cooked some chopped potatoes in my cast iron skillet on medium heat in some olive oil until they were mostly cooked all the way through, and then added the chopped onion and smoked tofu. I let them cook until they tofu was browned on all sides (roughly 5-7 mins), and then served this up with some sliced avocado topped with everything bagel seasoning and some ketchup 🤩 .
Hope you all are having a great Thursday! I went for my first run since my half marathon on Sunday and let’s just say it did not go as planned 😅 I had hiccups for 20 minutes and also realized I am definitely not recovered from the half marathon and need to spend a couple more days resting because my legs were NOT happy with me 🙈 Just a reminder that it’s okay to take days off from exercise if your body needs to heal! 🥰 I’m definitely guilty of over exerting myself in the past, and today I knew it was best if I stopped at 5km instead of my regular 12km. Sure I felt slightly defeated, but that’s much better than risking an injury. I’ll try again this weekend and see how it goes ☺️

🍆 cozinhar 2 berinjelas grandes com casca 👉🏼 não deixo cozinhar muito pois gosto mais ao dente.
🍆 em outra panela cozinhar 500 g de patinho moído com molho de tomate 🍅 natural.
🍆 em um refratário, ir montando a lasanha 👉🏼 camada de berinjela + camada de carne + camada fina de queijo canastra ou coalho.
🍆 terminar com uma camada de queijo e colocar no forno para gratinar por uns 20 min.

The carnivore chip...ice! 😂 Added another burger patty try to our list and it was disappointing. @dairyqueen 👀 Definitely had some sort of vegetable oil or something on them despite being 100% beef. Thankfully we had no noticeable adverse effects. Adam ordered a whole side of ribeyes (knows the way to my 💜🙇🏼♀️) AND requested to have them dry aged. Can not wait to try them! .

Dinner in 15 🙌 I was recently gifted an Instant Pot from @wanderloverxo and have used it every single day since. ❤️ Let me tell you....all of the great things you hear about it are so very true! It has made my meals SO much easier.⠀

I took this salmon out of the freezer and cooked it on manual high pressure for 7 minutes with olive oil and lemon. 7 minutes, people! From frozen! #magic The broccoli was steamed then drizzled with olive oil and garlic and I served it alongside 1/4 avocado and leftover salad greens with olive oil and balsamic vinegar. So good, so easy, so quick.
Growing food and teaching our children that process is so satisfying. Seeing their face when we find our first red strawberry of the year, or the excitement that comes from the sweet taste of that juicy berry.

When I plant something and it does well, there is a sense of pride and a feeling of good furtune, because lots of factors could affect the out come of that plant.

Different plants do well at different times of the year. Some plants prefer a more nitrogen rich environment, while others may need a bit more potassium or calcium. Pest can also be a major factor in the out come of those plants. .

Plants can be a lot like people. If given the right TLC they are more likely to thrive. But did you know, that often times farmers loose up to 20% of their crops due to environmental factors. .

This is why when our garden does well, I feel blessed. I feel as though “We were the chosen ones” lol as funny as that seems. .

Mulberries ripening on the tree! Mulberry trees are beautiful and the fruit is such a treat! They’re sweet, juicy and dark fruits can stain your clothes (mulberries come in different colors depending on the type). Getting purple hands is worth it every time 😂🙂

dinner tonight was 🔥🔥🔥@eatbanza chickpea pasta + sautéed mushrooms and spinach + @applegate spinach & feta chicken sausage + @raoshomemade pasta sauce + garlic salt 😋
A perfectly balanced pasta dish! (which only took 20 mins to make btw) I used to try to stay away from pasta because of how fatty of a meal I thought it was. Every time I would eat it I’d feel somewhat guilty. However, last year I started to change my mindset about pasta. Which led me to actually enjoy it & not feel guilty. Especially when you balance the pasta out with some healthy veggies! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
LEMON GARLIC PASTA
Water
Salt
Broccoli (Add as much or as little as you want)
Whole wheat pasta (I did half a container of pasta)
Kale (Add as much or as little as you want)
2 tbsp Ghee
1 Lemon (zested & juiced)
1 garlic clove
Crushed red bell pepper
Parmesan cheese
Olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a large pot boil the water + salt. Add the pasta to the boiling water & boil on high for 4 min. Then add in the broccoli & continue to boil on high for 3 more min. Drain the pasta & broccoli. Return to the pot & stir in the kale. Sprinkle in the lemon zest. In a small skillet melt the ghee then add the garlic & crushed red bell pepper. Sauté for about a minute or two. Add the ghee mixture to the pasta & about 2-3 tablespoons of freshly squeezed lemon juice. Stir everything together & transfer to a plate. Season with salt + pepper. If you’d like, add parmesan cheese & a drizzle of olive oil as well. •

Sliding dinner onto the pizza stone...eating healthy doesn’t have to mean giving up your favorite treats. Get creative! We made these pizza crusts from almond flour, coconut milk, and tapioca starch. Then we add pizza sauce, homemade pickled onions, vegan mozzarella, fresh basil, and a tiny bit of bacon. Can’t wait to eat!
My Health Journey – Installment #7
The next two years were pretty freaking amazing. I spent 6 months traveling through Mexico spending half of that time in Oaxaca. I got an apartment and took some Spanish lessons and ate a lot of GREAT food. Lawdy, Oaxaca is to Mexico what New Orleans is to the United States from a food perspective and I was in heaven. I had wanted to visit for over a decade and every day of the three months I was there I pinched myself. I couldn’t believe my good fortune.
Eventually I moved South down to the coast and spent a month in Puerto Escondido, a/k/a the Mexican Pipeline. A cool surf town on a beautiful stretch of Pacific Coast.
There is a little town further East on the coast called Mazunte. I spent three weeks there and would definitely go back in a heart beat. There was an energy there that was palpable. Healing, grounded and powerful. I could have stayed longer but the road kept calling and I followed.
I moved over through the isthmus and into the jungle for the first time in my life. I could write a book about my 5 days in Palenque and Panchan. So gorgeous and so great to wrangle a fear. I was terrified of all things jungle related. Bugs, snakes, animals…but so curious, too.
All the while I journaled every day…every day
I then moved up and all away around the Yucatan Peninsula. Campeche, Merida, Cancun, Isla Mujeres, Tulum (and a bunch of small towns in between) before plummeting into Belize and further onto Central America.
I saw shamans and healers of all flavors along the way but during my Mexican journey I couldn’t find anyone who could help me with me nagging issues of post nasal drip, tightness in my neck/throat, hoarseness, exhaustion and inflammation.

For now, enjoy these Chocolate Caramel Bites:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 ½ cups pitted dates
¼ cup almond or coconut milk
½ tsp vanilla
Pinch salt
2/3 cup dark chocolate
1 tsp coconut oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a blender or food processor combine dates, coconut milk, vanilla and salt until smooth to make the caramel.
Transfer into a bowl and freeze for hour. Then roll the caramel mixture into 1 inch balls, place on a tray and put back I the freezer for another 10-15 minutes.
Melt chocolate and coconut oil under a double broiler then using a spoon pour the chocolate over each caramel ball to fully cover. Place back in the freezer to harden the chocolate before eating.

👩🏻🍳 Procedimiento:
En un bowl, mixear/batir la zanahoria rallada con el huevo y claras junto al endulzante (usé dos cucharaditas) y la vainilla. Tamizar el cacao amargo y la harina de soja, después revolver hasta que se vuelva una mezcla homogénea - sin grumos. Agregar el bicarbonato y el vinagre, batir muy bien y verter la mezcla en una wafflera caliente y engrasado. Recuerden cocinarlos durante 3-4 minutos. Tampoco olviden que la versión de pancakes siempre está disponible 🤩. ¡A disfrutar! 🥞 Yo toppineé con mantequilla de maní y pera 🍐.

This scan takes your hair, saliva and nail samples to determine different imbalances in your body. It was a complete game changer for me because it’s how I first discovered that I had serious hormonal imbalances and that my cortisol levels were out of whack (thanks, anxiety!)

1- Mexican pizza- done in the air-fryer! The 2 in 1 air-fryer+conventional oven is the next big thing in kitchen appliances and thanks to my cousin @tiizzlee & @romaray85 Who own one, this Mexican pizza was bomb😋The tortilla was so crispy and crunchy and we topped it with black beans, Mexican cheese, jalapeños (of course) tomatoes, & onions. •
2- Tostado Bowl- done in the oven! We placed organic tortillas in the baked tortilla/taco shell pan and baked them for literally 10 min! You got this crunchy taco shell and threw in shredded chipotle chicken, black beans, cheese, sour cream, pico de Gallo, guac and of course jalapeños! •
3- Taco- done on the pan! We heated up organic corn tortillas on the stove and topped it with everything from the kitchen😆 curried cauliflower with black beans, onions, scallions, cheese, sour cream, and salsa!

Somedays I cook up a storm- and inspiration kicks in... yesterday was one of those days. I have always believed that food doesn’t have to be complicated to be good. If you use fresh products and put a little bit of love (I know it sounds cheesy, but you can transmit it through your food) there is no way to go wrong. These are King Oyster mushrooms- our favorite from @virtudmilhongo prepared with a little garlic and some olive oil- yup that’s it! And they were dreamy! Do they look like baby octopus or like baby squids? 🤔 Should we add them to our menu- like a “seafood” inspired dish?

This past weekend I discovered the wonders of smoked tofu for breakfast and I feel like I’m living in a whole new world 🙋🏼♀️ I made up this breakfast bowl on Sunday when I had pretty much no food left in the fridge and had to get creative 🤔 I had a potato, an onion, a block of smoked tofu, and an avocado 😅 I decided to put a fun twist on my regular breakfast veggie bowl and thus, this was born! 😜 Also since I’ve been trying to eat more plant based, discovering that I can have smoked tofu in place of eggs has me not missing eggs at all because it is soooo good 😍 . For this bowl I cooked some chopped potatoes in my cast iron skillet on medium heat in some olive oil until they were mostly cooked all the way through, and then added the chopped onion and smoked tofu. I let them cook until they tofu was browned on all sides (roughly 5-7 mins), and then served this up with some sliced avocado topped with everything bagel seasoning and some ketchup 🤩 . Hope you all are having a great Thursday! I went for my first run since my half marathon on Sunday and let’s just say it did not go as planned 😅 I had hiccups for 20 minutes and also realized I am definitely not recovered from the half marathon and need to spend a couple more days resting because my legs were NOT happy with me 🙈 Just a reminder that it’s okay to take days off from exercise if your body needs to heal! 🥰 I’m definitely guilty of over exerting myself in the past, and today I knew it was best if I stopped at 5km instead of my regular 12km. Sure I felt slightly defeated, but that’s much better than risking an injury. I’ll try again this weekend and see how it goes ☺️

Dinner in 15 🙌 I was recently gifted an Instant Pot from @wanderloverxo and have used it every single day since. ❤️ Let me tell you....all of the great things you hear about it are so very true! It has made my meals SO much easier.⠀ ⠀ I took this salmon out of the freezer and cooked it on manual high pressure for 7 minutes with olive oil and lemon. 7 minutes, people! From frozen! #magic The broccoli was steamed then drizzled with olive oil and garlic and I served it alongside 1/4 avocado and leftover salad greens with olive oil and balsamic vinegar. So good, so easy, so quick.

Growing food and teaching our children that process is so satisfying. Seeing their face when we find our first red strawberry of the year, or the excitement that comes from the sweet taste of that juicy berry. . . It’s funny because we often think that all that is required to grow food is sun, soil, and water, but there is a little bit more that goes into it. . . When I plant something and it does well, there is a sense of pride and a feeling of good furtune, because lots of factors could affect the out come of that plant. . . Different plants do well at different times of the year. Some plants prefer a more nitrogen rich environment, while others may need a bit more potassium or calcium. Pest can also be a major factor in the out come of those plants. . . Plants can be a lot like people. If given the right TLC they are more likely to thrive. But did you know, that often times farmers loose up to 20% of their crops due to environmental factors. . . This is why when our garden does well, I feel blessed. I feel as though “We were the chosen ones” lol as funny as that seems. . . Today, we are extra grateful for these sweet little berries. A perfectly balanced pasta dish! (which only took 20 mins to make btw) I used to try to stay away from pasta because of how fatty of a meal I thought it was. Every time I would eat it I’d feel somewhat guilty. However, last year I started to change my mindset about pasta. Which led me to actually enjoy it & not feel guilty. Especially when you balance the pasta out with some healthy veggies! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ LEMON GARLIC PASTA Water Salt Broccoli (Add as much or as little as you want) Whole wheat pasta (I did half a container of pasta) Kale (Add as much or as little as you want) 2 tbsp Ghee 1 Lemon (zested & juiced) 1 garlic clove Crushed red bell pepper Parmesan cheese Olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a large pot boil the water + salt. Add the pasta to the boiling water & boil on high for 4 min. Then add in the broccoli & continue to boil on high for 3 more min. Drain the pasta & broccoli. Return to the pot & stir in the kale. Sprinkle in the lemon zest. In a small skillet melt the ghee then add the garlic & crushed red bell pepper. Sauté for about a minute or two. Add the ghee mixture to the pasta & about 2-3 tablespoons of freshly squeezed lemon juice. Stir everything together & transfer to a plate. Season with salt + pepper. My Health Journey – Installment #7 The next two years were pretty freaking amazing. I spent 6 months traveling through Mexico spending half of that time in Oaxaca. I got an apartment and took some Spanish lessons and ate a lot of GREAT food. Lawdy, Oaxaca is to Mexico what New Orleans is to the United States from a food perspective and I was in heaven. I had wanted to visit for over a decade and every day of the three months I was there I pinched myself. I couldn’t believe my good fortune. Eventually I moved South down to the coast and spent a month in Puerto Escondido, a/k/a the Mexican Pipeline. A cool surf town on a beautiful stretch of Pacific Coast. There is a little town further East on the coast called Mazunte. I spent three weeks there and would definitely go back in a heart beat. There was an energy there that was palpable. Healing, grounded and powerful. I could have stayed longer but the road kept calling and I followed. I moved over through the isthmus and into the jungle for the first time in my life. I could write a book about my 5 days in Palenque and Panchan. So gorgeous and so great to wrangle a fear. I was terrified of all things jungle related. Bugs, snakes, animals…but so curious, too. All the while I journaled every day…every day I then moved up and all away around the Yucatan Peninsula. Campeche, Merida, Cancun, Isla Mujeres, Tulum (and a bunch of small towns in between) before plummeting into Belize and further onto Central America. Minimal cooking has gone down in my kitchen this week because I’ve been busy working away on something new 🙌🏼 All the deets coming next week 💗 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ For now, enjoy these Chocolate Caramel Bites: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 ½ cups pitted dates ¼ cup almond or coconut milk ½ tsp vanilla Pinch salt 2/3 cup dark chocolate 1 tsp coconut oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a blender or food processor combine dates, coconut milk, vanilla and salt until smooth to make the caramel. Transfer into a bowl and freeze for hour. Then roll the caramel mixture into 1 inch balls, place on a tray and put back I the freezer for another 10-15 minutes. Melt chocolate and coconut oil under a double broiler then using a spoon pour the chocolate over each caramel ball to fully cover. Somedays I cook up a storm- and inspiration kicks in... yesterday was one of those days. I have always believed that food doesn’t have to be complicated to be good. If you use fresh products and put a little bit of love (I know it sounds cheesy, but you can transmit it through your food) there is no way to go wrong. These are King Oyster mushrooms- our favorite from @virtudmilhongo prepared with a little garlic and some olive oil- yup that’s it! And they were dreamy!
