Making ‘sundried’ tomatoes in the oven to prolong our massive tomato haul front he garden this season. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
So easy to do. Cut in half, put on oven tray. Sprinkle with fresh thyme and salt. Stick in the oven at 140C for 1.5-2hours. And Voilà!
I then turn the oven off and let the cool there.
Transfer to jar, add some crushed garlic cloves in the mix and cover with olive oil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
They are so sweet and delicious. I’ve been having them for breakfast, in eggs. Lunch on biscuits with cheese and homemade pesto, and dinner with spelt pasta or with rice and tuna. #sogood ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Have you got any ideas/recipes for prolonging your #gardenhaul? Sick plants need to be taken care of, and preferably separated from other plants to avoid spreading the problem. I feel very happy to get involved with a colleague from work, on his project of launching his artisan fruit & veg spread,(100% natural); following a traditional Venetian recipe of Vincoto.
Under the name of ‘Venice Purple’, He reproduces & recreates the flavours of the Venetian countryside.
Traditionally it was produced in Autumn, when the ingredients were picked in season by expert hands.
Vincoto constitutes a fine balance of grape juice, quince, pear, pumpkin and sweet potato, without added sugar.
It’s very low in calories and high in fibre.
It’s suitable for vegans and it’s gluten free.
It’s very low in sugar content, and the absence of salt makes it something which can be enjoyed daily: spreading on bakery and using it as a cake filling.
Versatile enough to be added to flavour yogurt, used as ice cream topping, and in hot cereal.
Delicious as well with cheese.
Vincoto is homemade, and it has been tested by the food laboratory for nutritional content and meets food safety standards.
I have tried it, and I think it’s delicious.
