¿Cómo podría yo describir el placer abrumador y la sensación de triunfo apabullante que me ha regalado esta delicia de versión paleo low carb de las croquetas negras de sepia en tinta? Hhhmmm... .

¿Os imagináis un torneo de ajedrez de croquetas? ¿Sí? Pues en una final entre estas y las blancas tradicionales de cocido de la abuela, no me atrevo a afirmar que las negras cantarían el "jaque mate" (porque en esta vida nunca se sabe), pero sí proclamo rotundamente que se alzarían con un "jaque" mínimo.

Y es que otra de las ventajas de mi bienamado aguacate, que su exiguo sabor le capacita para ser "saborizado" con casi cualquier cosa.

Así que aseguraos de atesorar un pequeño tupper de sepia en tinta cuando la hagáis (ved la receta en el blog) para vuestros suertudos y felices "yoes del futuro comedores de croquetas". Y es que es tan fácil como triturar los alegres restos de sepia en tinta que consiguierais atesorar con un aguacate hermoso y madurito. No creo que las cantidades vayan a influir mucho, pero yo mezclo un aguacate por tupper (para el plato de la foto, bastó medio tupper y medio aguacate), le echo un toquecillo de zumo de limón y lo salpimento. Y una vez lista la farsa, me limito a sumergir cucharaditas de masa, primero en huevo batido y después en la mezcla de rebozado. Hoy he optado por la infalible mezcla de semillas de lino molidas y harina de almendra.

Si se os desmoronan, la estrategia infalible es darles unos minutos de congelador antes de freírlas en aceite abundante. Nadie se enterará, independientemente de su habilidad para jugar al ajedrez 🙄 .

Sumi-ika (Japanese Cuttlefish). Note: This is a late-season cuttlefish (season starts in the Fall, where the cuttlefishes are still young and are more tender) We got this in mid-Jan.
Overall, it has a satisfyingly crunchy texture, while the mellow sweetness of the cuttlefish contrasts with the salty, umami shoyu really well. The warm sushi rice does two things here, first by adding that flavor contrast of umami-tang, as well as being a thermal contrast by itself, so you get the warmth of the rice contrasting with the “room-temperature” cuttlefish. Quickly blanching the thick-cut cuttlefish in sake, shoyu and sugar gives it that crunchy texture, while providing the cuttlefish subtle flavors, which accentuates the cuttlefish’s sweet flavors even more. Our chef also scored the muscles in order to make it more tender, while also adding surface area for the shoyu to be absorbed. However, I feel that this time the cuttlefish was too thick-cut, that its flavors overwhelmed the rice. Could be because it’s a late season cuttlefish. Still an amazing nigiri though!
