Hey guys! 👋🏾 Happy Thursday! Let's go into the weekend with something lite and heavenly.😇 Try this Lemon Basail Pesto Spaghetti 🍝 recipe from wholeandheavenlyoven.com Lemon Basil Pesto Spaghetti with Bursting Tomatoes

Ingredients

Lemon Basil Pesto

Juice from 1 lemon

1 cup loosely-packed basil leaves

1/3 cup pine nuts (or sliced almonds)

2 cloves garlic

1/4 cup olive oil

Salt and pepper to taste

Spaghetti and Bursting Tomatoes

1-1/2 cups cherry tomatoes

1 tablespoon olive oil

Salt and pepper to taste

12 oz spaghetti, cooked according to package instructions and 1/2 cup pasta cooking water reserved

1/2 cup grated Parmesan cheese

Instructions

Lemon Basil Pesto

In a food processor, process lemon juice, basil, pine nuts, and garlic while drizzling olive oil through top until pesto is completely smooth. Season with salt and pepper to taste and set aside.

Spaghetti and Bursting Tomatoes

Toss cherry tomatoes with olive oil and salt and pepper to taste. Lay in a single layer on a baking sheet and broil under high heat 2-3 minutes or until slightly charred and bursting.

Toss hot spaghetti with pesto until combined and then toss in reserved pasta cooking water. Season spaghetti with salt and pepper to taste and top with bursting tomatoes and grated Parmesan cheese. Serve hot and enjoy!

Sweet 'n' sticky grilled honey garlic chicken is a perfect match with sweet mango and flavorful cilantro dressing in this gorgeous grilled chicken mango salad!
Ingredients

Honey Garlic Chicken

1/4 cup honey

4 cloves garlic

2 tablespoons soy sauce

1/4 cup vegetable oil

Salt and pepper to taste

1-1/2 lbs boneless skinless chicken thighs

Salad

4 cups chopped romaine lettuce

2 medium mangos, peeled, pitted, and diced

1/4 cup crumbled feta cheese

1 small red onion, thinly sliced

Cilantro Vinaigrette

1/2 cup fresh cilantro

1 clove garlic

3 tablespoons lemon juice

1/4 cup olive oil

Salt and pepper to taste

Instructions

Honey Garlic Chicken

In a medium bowl, whisk honey, garlic, soy sauce, oil, and salt and pepper to taste. Add chicken to bowl and toss to combine. Let stand 30 minutes in the refrigerator

Remove chicken from marinade and grill over medium-high heat 4-5 minutes per side, flipping once until chicken registers 160F. Cool chicken a few minutes then dice into medium chunks.

Salad

In a large bowl, combine all salad ingredients and top with grilled chicken. Refrigerate until ready to serve.

Cilantro Dressing

In a food processor or high-speed blender, blend dressing ingredients until smooth. Season with salt and pepper to taste.

When ready to serve, toss dressing into salad until combined. Serve immediately and enjoy!

Roasted Red Pepper Avocado Chicken Burgers

Unbelievably juicy and packed with summer flavors, these roasted red pepper avocado chicken burgers are a lighter and SUPER flavorful burger to throw on the grill all summer!

Ingredients

1 lb ground chicken

1/4 cup breadcrumbs

1 large egg

1-1/2` teaspoons salt

1/2 teaspoon pepper

1 tablespoon soy sauce

2 cloves garlic, minced

4 slices provolone cheese

1/2 cup baby spinach leaves

4 hamburger buns, lightly toasted

1/2 cup jarred roasted red peppers

2 medium avocados, pitted, and sliced

Instructions

In a medium bowl, combine ground chicken, breadcrumbs, egg, salt, pepper, soy sauce, and garlic until combined. Shape into 4 hamburger patties.

Grill hamburgers over medium-high heat, flipping once until meat registers 160. Top burgers with cheese and broil under high heat 1 minute until cheese is melted.

Place spinach leaves on toasted buns and top with burgers. Top with roasted red peppers and sliced avocado. Serve immediately and enjoy!
