You asked for the recipe for Steve and here it is:
175ml of olive oil
2 Small apples, cored and grated
100g carrots grated
100g raw beetroot grated
1 inch raw ginger finely grated
40g chopped walnuts
Zest of an orange
1tbsp ground ginger
1tsp ground cinnamon
1/2tsp ground nutmeg
80g coconut flour
1tsp bicarbonate of soda
1tsp baking powder
Preheat your oven to 180c fan and grease and line your baking tin (8inch or similar)
Whisk the xylitol, eggs and oil together until fluffy. This will take quite a while and looks like batter for a long time first. You need an electric whisk!
Add in all the vegetables and fruit, stir gently to keep in as much air into the mixture.
Sift in the remaining ingredients then sprinkle in the walnuts and stir gently until well mixed.
Pour into the baking tin and cook for approx 40minutes. You need to check a skewer comes out clean as this can be quite wet, so don’t be afraid if it takes more like 50minutes. This will struggle to rise but makes like a pound cake style cake rather than a typical fluffy sponge. Enjoy!
Leftovers for lunch. Vegetable stir fry with garlic, ginger and fresh turmeric. Coconut oil for the frying. Chicken with lime and Himalayan pink salt. Easy peasy. Oh and some leftover scrambled egg in there too... just can’t bring myself to waste an @clarence_court egg!
