✨GLUTEN FREE FRIENDLY IN SALT LAKE CITY✨
.
.
I used my #glutenfree restaurant cards for the first time at a local restaurant @taqueria27 and they were able to accommodate me really well. Their tacos and churros were 🙌🏻
.
.
After reading the card the manager told me they would have to tell the chef to do the following things:
▪️Ask them to leave off the seasoning “chilito” that they use on most of their proteins because it is a commercial blend seasoning and could possible contain gluten.
▪️Ask them to warm up the corn tortillas in a separate pan on the grill instead of the flat top. They warm up both flour and corn tortillas on the same flat top. ▪️Avoid the Gorgonzola. They outsource it and sometimes wheat flour is used in the aging process🌾
.
.
I would have never known to ask about these things (and the waiters wouldn’t either) without having this card to give the manager instead of having a really long uncomfortable conversation. You can download this GLUTEN FREE RESTAURANT CARD for free by clicking the link in my bio👆🏻

✨FULL TIME TRAVEL IN AUSTIN✨
.
.
Last year we rented out our house and took life on the road for 6 months. We started our adventure in an RV🚐 and our first stop was the beautiful Austin, Texas❤️
.
.
This is a small clip of some footage I finally put together (it only took me a year) of us exploring McKinney Falls State Park just outside of downtown Austin✨
.
.
Yes we threw our 2 year old son across the water, but I promise it isn’t as bad as it looks😉

Mixing things up this Friday night and making this Pepperoni Pizza Pasta🍕
.
.
I used @againstallgrain recipe and substituted my favorite #glutenfree pasta @andean.dream for yellow squash noodles and it was👌🏻

My husband won’t ever eat leftovers, but after this meal he was disappointed that there weren’t any leftovers.

✨GLUTEN FREE RESTAURANT CARDS✨
.
.
When traveling or dining with friends and family it can sometimes be awkward when you have to explain all of your specific needs to the server, manager or chef. These Gluten Free Restaurant Cards will help take the attention off you and make sure the chef knows all the details of your requests👊🏻
.
.
It took me a while after my diagnosis to figure out that I was accidentally still eating gluten through hidden sources and cross contamination. A lot of restaurants think that gluten is simply bread and pasta. I’m hoping these cards help educate them in a way that avoids awkward attention✨
.
.
Guess what?? You can download these for free on me website to use when you dine! Just click the link in my bio and wait for them to arrive in your inbox 💌

Right now I’m working on my Gluten Free in Philly City Dining Guide and @foxandsonphilly is a Celiac’s DREAM✨

They serve all the carnival type foods that we normally would NEVER be able to eat: corn dogs, funnel cakes, poutine and so much more🙌🏻

Anyone been here before? I’m drooling over these corn dogs! 📷credit: @trycaviarphilly

✨GLUTEN FREE HOME COOKING✨
.
.
95% of the food I eat I make at home. Having Celiac Disease learning how to cook is essential! I have grown to really love cooking over the past 5 years. I’m not one to create my own recipes but I love following other people’s amazing recipes and tweaking them every now and then👍🏻
.
.
Any form of tacos and taco salad are a favorite around here! The slow cooked steak in this 🌮salad is from @againstallgrain, the chips are my fav @sietefoods and the dairy free ranch is the amazing @primalkitchenfoods 😋

A few days ago I posted about the raw and real of Celiac Disease. I loved reading everyone’s comments and could truly relate to how everyone is feeling✨
.
.
But it got me thinking....what would I do differently if I woke up tomorrow and magically didn’t have Celiac Disease❓
.
.
Well first of all I would devour this amazing gluten filled pizza and love every bite. But more seriously, I honestly would eat pretty similar to how I do now. I love the way I feel and I love that I know I am putting real healthy foods in my body for fuel. That is one of the true BLESSINGS I have been given with this disease. I would definitely not miss the stress that social situations bring into my life with Celiac Disease and I would love to travel and not have to spend hours researching where I can eat safe so I don’t get glutened from cross contamination. But I am truly grateful for my diagnosis and everything I have learned through my healing journey. It has been truly eye opening and I would never take that away! I can not express how much I have loved this amazing Celiac community I have found through social media. I love you guys 💕

Nothing is more magical then escaping to the mountains and being disconnected⛰
.

My extended family took a trip up to the Colorado Mountains and rented a VRBO cabin that was just beautiful. My mom and brother also have Celiac Disease so it was so nice to have a HUGE kitchen to cook in for all of us🍽
.

Scroll ➡️to see the beautiful cabin we stayed in up at Vega Lake near Collbran, Colorado. They had mountain bikes, canoes, life jackets, a fire pit all at our disposal! It was such a fun trip!

✨100% GLUTEN FREE IN SAN FRANCISCO✨
.

@thegameparloursf is a Celiac’s paradise. Not only do you get to play games and socialize but you get to do it while eating these amazing gluten free Mochi Waffles. Usually eating and socializing don’t go hand in hand for people with Celiac Disease, but this place is different 🙌🏻

I just wanted to say HI👋🏻 to all my new followers and those of you who have been with me for a while💕
.
.
My name is Courtney and I have Celiac Disease. I also am a mom to 3 amazing kids, a wife to a wonderful man and I love to travel🛫
.
.
Most of the time I am pretty positive and love finding tips and tricks to managing this gluten free lifestyle but today I am going to be a bit raw and real😳
.
.
Having Celiac Disease is really hard. It’s hard when you are traveling, it’s hard when you are out socializing and it’s even hard when you are at home. It’s often misunderstood by other people. People often think you are being a bit crazy, especially when you are always the one that brings your own food to social events or politely declines food other people so kindly tried to make gluten free. If you are still reading this novel I just want you to know that it’s okay to think sometimes that your life sucks! It’s okay to wish you didn’t have Celiac Disease and wish you didn’t have to spend half your paycheck on groceries. It’s okay to feel completely overwhelmed. Some days are good and some days are bad! There is nothing wrong with having a bad day. So if you are having a bad day and want to vent please do so below👇🏻I welcome it!

✨GLUTEN FREE AT HOME✨
.
.
A lot of people ask me if I eat out a lot since I mostly post food that I eat at gluten free friendly restaurants when I travel, but honestly when I’m at home I go out to eat maybe 3 times a month. When I do dine out I only go to really safe places, but eating out too much just honestly makes me feel kinda crappy 😣
.
.
I like to know exactly what ingredients go into my body when I can. Anyone else with me?🙋🏼‍♀️

I’m currently working on my Gluten Free San Francisco Dining Guide and started looking through our photos of our trip there this past May🌁

One of my favorite things we did in San Francisco is visit the Ferry Building! It’s like a mini version of New York City’s Chelsea Market and everyone can choose what they want to eat while they walk around so it isn’t super awkward when you go with a bunch of people and can’t eat at the same restaurant. The 100% gluten free @mariposabaking is there and it was AMAZING✨

This girl just started 1️⃣st grade and I’m really missing my crazy sidekick. Why does school have to be all day long?? I’m having a hard time. Anyone else feel this way?🙋🏼‍♀️

✨GLUTEN FREE FRIENDLY IN NEW YORK CITY✨

Brunch at @friedmansnyc is a must while in New York City! They make their own gluten free flour blend for all of their waffles, pancakes and fried chicken🙌🏻 They do have wheat bread in their kitchen but they are VERY good about preventing cross contamination. One of the early pioneers of this restaurant has Celiac Disease and wanted to make sure others have a safe haven to eat out! There are 5 locations throughout Manhattan so definitely check it out while you are there!
And if you are fan of chicken and waffles this is the place to go!

✨LET’S TALK TRAVELING WITH OTHER PEOPLE WHEN YOU HAVE CELIAC DISEASE✨
.
.
Can I first just say how amazing it was to travel with my brother and sister-in-law to NYC. I am the only one of the group with Celiac disease and I was so nervous. They made sure we went to restaurants that I could eat at safely and never once made me feel like an inconvenience. Does anyone ever feel that way when traveling with others?🙋🏼‍♀️
.
.
Also I made an interactive google map of all the safe restaurants before hand so that it was really easy to see what was close by when it was time to eat. If anyone is interested in having access to this interactive google map click on the link in my profile and sign up for updates so you know when it is up on my website!
