Iโ€™m at FNCE and Iโ€™ve been doing tons of learning! One of the things that stood out to my today was a session I went on mindful eating presented by @allisonteppernutrition and Elizabeth Cotter.

One of the metaphors they used to describe mindful eating was that it was like a gym membership for the mind.
I could not agree with that statement more!

By that I mean - out of exhaustion I would have chosen to eat out and out of exhaustion, I wouldnโ€™t have advocated for myself to the extent that Iโ€™d need to and thus, end up being exposed to gluten.
.
BUT NOW Iโ€™m happy to say, despite this past crazy week, I stayed safe.
.
How I did it?
- I prioritized my health!
- I meal-prepped
- I honored my body
.
Itโ€™s funny how in the times where you need to be your optimal self, are the times that you tend to engage in behavior that risks that. But this week, I stayed strong ๐Ÿ’ช๐Ÿป
.
What was one success you had this week?
One year ago, if I had a hectic week like this one, I probably would have engaged in a questionably safe eating situation... . By that I mean - out of exhaustion I would have chosen to eat out and out of exhaustion, I wouldnโ€™t have advocated for myself to the extent that Iโ€™d need to and thus, end up being exposed to gluten. . BIRTHDAY CAKE BATTER OVERNIGHT OATS ๐ŸŒˆ๐Ÿฐ

I have this problem where I have my food meticulously set up/styled for pictures and then either my dog or I, bump the table and everything goes toppling down.๐Ÿคฆโ€โ™€๏ธ

And as frustrating as it is, it reminds me to stay positive even when things donโ€™t go my way. There is beauty in chaos and so I decided, instead of trying to salvage and restyle this, that it looked interesting enough on its own!
So here is an overnight oat version of a birthday cake HULK SMASH! If only I had used @colorkitchenfoods purple๐Ÿ’œ and green๐Ÿ’šfood coloring on my oats for added effect ๐Ÿ˜‚
