I swear there’s a turkey burger patty under there 🙈😂 Topped with a slice of sharp cheddar 🧀, a slice of tomato 🍅, homemade guacamole 🥑 (onion and garlic free), and a homemade spicy sauce 😋 Served with sautéed red peppers and broccoli 🥦 This weather has been crazy hot but perfect for playing in the kiddie pool with our pup Mowgli 🐶 I hope everyone had a safe and happy 4th of July! 🎉🇺🇸
Yesterday’s lunch was 💥🎉😋 A slice of gluten free bread topped with spring mix, a slice of cheddar cheese, and an over easy egg with the most 🤤 yolk- plus a side of broccoli cooked in olive oil, salt, and pepper. I’ve been experimenting with hard cheeses to see how I react, and so far so good with sharp cheddar and parmesan 😋 What have you been adding in to your diet lately?
This past weekend I celebrated my 25th birthday 🎉 My family made me a delicious low FODMAP birthday lunch and even got me a gluten free cake! 🎂Discovering my food intolerances and changing my diet to fuel my body with foods that I can easily digest has been one of the most empowering experiences. Before I was diagnosed with IBS, I was so frustrated with my body and sick way too often. Now, with diet changes alone, I’ve been able to manage my symptoms and feel great again! I’ve been eating a low FODMAP diet for almost 3 years now, and while it was stressful and embarrassing when I first started, I now feel confident and empowered. Food is medicine, and I’m so thankful to my supportive family who have helped me get to this point. Cheers to 25 incredible years 🎉💕🎂
My current favorite breakfast is so delicious and tastes even better in the sunshine (duh ☀️)! Unsweetened coconut milk yogurt, a little maple syrup, lots of fresh fruit, and some gluten free granola 😋 It’s the perfect start to my day and so easy to whip up!

Happy hump day 🐪💕 I’ve been MIA for well over a week now and I wanted to be totally transparent with you all and fill you in on why. I have been very sick with infectious colitis and experiencing some of the worst abdominal pain of my life. I wouldn’t wish this sickness on anyone! My symptoms have been gradually getting better after a series of antibiotics so I’m finally getting back into the kitchen! This type of colitis has an acute onset and is typically caused by food poisoning so I avoided people and kitchens the whole time to not get anyone else sick. 😷 I was living off of unripe bananas and Gatorade, so I’m thrilled to be back to normal eating! Anywhoooooo back to regular programing 😋 Today on the blog I’m posting a recipe for baked veggie egg muffins 🍳These muffins are the perfect quick and easy breakfast for busy mornings!
