There was NO oven in my previous house and oh boy, how I missed out! It’s convenient, time saving and above all; roasted veggies are bomb 💣!Period. •
Roasted rosemary potatoes (slice into quarters - mix with oil, salt and rosemary —> oven), roasted bell pepper and onion (chop some peppers, mix with oil, paprika powder and salt —> oven), lettuce, cucumber with vinegar and sesame, Brussels sprouts, avocado, salted smoked almonds and hummus.

Well.. if you’re looking for a warm, sweet and comforting breakfast - this is the meal to go for!
It’s @alpro soy yogurt and warm pan fried apple and banana 🍌 with cinnamon, agave syrup, a pinch of salt and some muesli. Oh - and I added some mini cookies from @ikwilbolletje to top it off.. They’re so yummy 😋 - if you’re ever in the Netherlands - go and get them! •

It’s the weekend!! And I’ve got a new phone 📱 to celebrate 🤪.
I’ve had so much trouble with my phone lately I finally decided it was time to buy a new one (omg - why are those things so crazy expensive 😫), still don’t know exactly how it works but I’m getting there.
At least I’m able to take and upload pictures again and it also feels good I don’t have to wait five minutes before an app opens. Sigh. First world problems, right?

I’m with my son today, just me and him and we’re going to enjoy this day to the max! 💕 Cuddles in bed, tea for him - coffee for me and a smoothie bowl on his request. We have plans to go to the cinema 🎞 later. Has anyone seen either “Hotel Transylvania 3” or “Smallfoot”? 😆 We’re still in doubt which one to go for.. Have a wonderful Sunday!!

I guess I’m the last person 😆 in the Netherlands to try this @devegetarischeslager vegan roockworst (type of sausage they veganized) cause I couldn’t get my hands on it before. 😬
I decided to go for a traditional Dutch meal with a twist to go with it: sweet potato 🍠 and endive mash.
For everyone who’s not from the Netherlands: do you ever eat endive? 🇳🇱 En voor de Nederlanders onder ons: want vonden jullie van deze worst? Ik vind dat ie hoort in de categorie “wel oké”, zeker omdat ie ergens bij zo’n gerecht ‘hoort’, hij was lekker, maar het is niet mijn favoriet.. Hij is me net een tikje te flauw geloof ik. Ben benieuwd wat jullie vinden!

This is how simple a meal can be. All you need is an oven and some spices.. 🤣
I love it when the oven takes over the cooking so I have time for other stuff and it all comes down to the herbs 🌿 and spices if you ask me. Make sure you’re not too careful with those spices - go for it!

Oven roasted pumpkin 🎃 with rosemary, oven baked potatoes 🥔 with thyme, a simple tomato, cucumber 🥒 and onion salad with mint, cilantro and lemon and a @vivavivera vegan steak. And spicy 🌶 hummus. Of course..
It’s a grey and windy day today and every time I think about doing something interesting, it starts to rain. But then it will stop. And then it will start again so I‘m already spending a lot of time thinking about doing things but I’m actually not doing anything.
Maybe this breakfast is getting me somewhere.. •

We’re off to the North of Holland this afternoon- it’s where my family comes from and we will spend the night at Opa Snor (Granddad Mustache 🤣). It’s how my son calls my father.. Have a lovely day!!
Hasselback potatoes (see recipe in older post), quinoa, oven baked bell pepper and red onion, greens, tomatoes and hummus..
Hasselback potatoes! 🥔 Who has made them before? This was my first time and I’m so happy with how they turned out. It’s really easy to make and they look so pretty don’t you think?
Place a potato between the handles of 2 wooden spoons (or 2 chopsticks or 2 cutting boards). Slice the potato into thin slices, leaving 1/4 inch at the bottom unsliced; the spoon/chopstick/cutting board will prevent you from slicing the potato all the way through. Repeat with the remaining potatoes.
Put the potatoes on a baking sheet and brush on some olive oil, making sure to get in between all the slices. Sprinkle some salt&pepper over the potatoes and add some thyme as well. Bake until tender and crisp (45 minutes).

Made them the day before yesterday with @purechimp matcha and some @terrasana_positive_eating poppy seeds and I had no recipe but just did what I thought was right and they turned out pretty yummy! Next time, I’ll write down the recipe so you can make them as well.. 🙃
It’s tricolor coconut quinoa porridge for breakfast 🥣 today..
Throw some coconut milk in a pan with quinoa (I used @naturecrops quinoa), add some cinnamon, agave syrup, vanilla extract and a pinch of salt en let it thicken. Add you’re favorite toppings and you’re done! •

Wow that weather. 🌧 We came back from sunny Lisbon and immediately got treated by some welcoming rain and delightful cold temperatures. So we spend the whole day indoors (except for some grocery shopping and the usual dog walks). And we made a snack plate cause that weather asked for it!
Also, I got my blood tested 💉 to see if I’m living my vegan life the right way. Results will be back in a week or so, I’ll definitely keep you posted! Exciting! 🤗 Do you ever do a blood test and if so; how were your results?
These @vegafit nuggets are completely plantbased and just need a couple of minutes in the oven. My son loves them. (Yeah - my BF and I do to) And I made some vegan tzatziki 🥒 to go with the veggies: it was soo good! •
- 100 ml of soy yoghurt (I used plain @alpro)
- 1/4 of a cucumber in tiiiiiiny pieces
- 1/2 a teaspoon of garlic powder
- 1/2 a teaspoon of onion powder
- Splash of lemon juice
- Salt & pepper

Some days I just can’t stop worrying and huge storms are brewing in my head. Little things can get so big and it can be sooo hard to step out of it. •
I’m on holiday at the moment -and will be for another four days ☺️- and even in a beautiful place like this I worry. •
Mostly about random stupid things, sometimes about a few things that deserve some worrying.
But still.. Every so often you need to give yourself a break, don’t you think?
Just be. Look around you and tell yourself you’ll deal with your thoughts at a different time when your mind will work much better and things will be a lot clearer.
It’ll help, because some of those worries will suddenly look a lot less important... 😘
