📌...one of my favorite things: I spend a lot of time in the kitchen and most nights, Brad will stand at the bar in our kitchen and just talk to me as I cook or tootle in the kitchen. He’ll be on his phone, but he’s choosing to be where I am. I’m so thankful. I’m not sure he even knows he does it.
I’ve learned in our seasons of infertility to really enjoy each other and to notice the little things that may not happen when these seasons end.
Sometimes I’m too observant for my own good. Always trying to create good, see goodness. My brain gets tired BUT I can usually always find the good. Tonight it was looking over as I was making these @primal_noms mug cakes to see Brad choosing me again.
Remind me of this post when I’m knee deep in baths, dirty diapers and those kids that don’t cooperate at bedtime. I’ll find the goodness in that too, or at least try.♥️
Living in a van doesn't exactly make it super easy to eat healthy, move everyday, and stay low carb. Thankfully, we have a microwave so we can enjoy our delicious low carb mug cakes to satisfy our sweet tooth and keep us on track! What is one appliance you couldn't live without on your low carb / keto journey?
This weekend we parked the van and went backpacking on a 22 mile loop (a section of the Appalachian trail)...we met so many thru hikers...people who have been hiking 15 miles a day since March! I kid you not. It was impressive to say the least. One thing I noticed though is that everyone's main macro was CARBS! Carbs are easy while backpacking-- peanut butter filled pretzels, tuna wraps, instant mashed potatoes, Mac n cheese, oatmeal, etc...and the thing is they are definitely burning these carbs! But I was left wondering how much better they'd feel if they added some more FAT to their diet. I'm thinking cheeses, oils, nuts, avocados...these are all things that could be carried days at a time! Do you have any ideas for high fat alternatives that could withstand a backpacking trip?! I'd love to hear some suggestions!
I love my body and my belly still has rolls. I remember as a kid I would look down and squeeze the rolls, hating them because I thought they weren't supposed to exist. Now I realize they are healthy and supposed to be there. Even when I'm at my fittest, my belly still rolls! What is one part of your body you've learned to embrace?
