Had boatloads of fun making these Zucchini Pizza Boats 🚣
1. Cut in half and scoop out zucchini’s. Place on baking sheet with 1/2 inch of water on bottom of the pan. Cook in preheated 375 degree oven for approx. 20 mins. This step is crucial for drying out the zucchini’s before you make the boats!
2. Cook ground chicken or turkey, chopped zucchini meat (from when you scooped it out), chopped onions, garlic, and red bell peppers with olive oil, salt, pepper, red pepper flakes, and Italian seasonings until meat is cooked through. Add half of a can of tomato sauce and one diced tomato, season to taste.
3. Scoop filling into boats, overflowing with extra filling. Top and surround with the extra tomato sauce. Bake approx. 15 mins or until zucchini’s can be easily cut through.
4. Top with shredded mozzarella cheese and/or parmesan and oregano. Replace in oven until cheese melts. Cut in half and serve!
These boats are the perfect way to feed that cravings for Italian food, while keeping it light and healthy. Bellissimo!

Homemade pork (almost) ramen
We didn’t have ramen noodles, so I used a delicious spinach noodle and it did not disappoint. Soup featured corn, spinach, carrots, celery and onions. Cooked the outside of the pork on cast iron skillet for flavor and then finished in the broth. Topped with half a hard boiled egg to serve. I present to you one of the TASTIEST salads I’ve ever made: the Pesto Portobello.
Yes, this was inspired by sweetgreen but no, it’s not a copycat. 😂
Salad base: mixed baby lettuces and radicchio
Toppings: red onions, shredded Parmesan cheese
Chicken: cooked in cast iron skillet, finished in a bit of pesto
The main event: Portobello mushroom roasted in the over with olive oil, salt, pepper, and sliced garlic.
What’s it wearing? Pesto vinegrette! I cheated and used pre-done pesto cuz my food processor is packed but it was still SO INCREIDIBLY DELICIOUS. Mix olive oil, pesto, and red wine vinegar, salt and pepper to taste.
Egg-egg white veggie scramble, crispy sautéed kale, and half a whole grain English muffin. Rolling into that weekend like ❄️💪🏼🥚🥗🍅☕️☃️🌪 Scramble made 2 part egg, one part egg white (for 2 servings) with tomatoes, mushrooms, onions, and cheddar cheese.

How to make turkey burgers better: 1. season with Worcestershire sauce 👍🏼, 2. Add chopped veggies to the patty 👍🏼, and most importantly 3. serve with a tomato-basil-Avocado salad ✅✅✅ Made this for my sisters bday in October, and she still raves about it! Turkey is lean so it can be hard to make sure the burgers have enough juice... I add things like hot sauce and Worcestershire, as well as some seasonings to kick up the flavor and keep the juices in. Cut peppers and cooked sausage into bite sized pieces (personally love the Garlic sausage), sauté in olive oil with minced garlic. When the peppers look almost cooked, add some water and bullion, salt, pepper and parsley to taste. Thicken, throw spinach in at the last second and stir in the sauce until spinach wilts. Serve with yellow rice. 💛

I know I promised this recipe a few days ago but better late than never, right?! This meal is quite indulgent, because it was @redroll 's birthday dinner!
Brendan prepared the steak perfectly, it was so incredibly tender to cut and had drool-worthy flavor! Steak was seasoned with truffle salt, black pepper, and olive oil for about 8 hours, then cooked "Pittsburg style": heat a cast iron skillet with a touch of olive oil for 5 mins. When the pan was really hot, added the steak. We like ours medium rare so all it took was 4 mins & 3 mins on each side. Finally, we sprinkled just a touch more truffle salt before serving. 😍
For potatoes, I boiled pealed red potatoes, then tossed in melted butter-parsley-salt&pepper combo.
As for the veg, I halved the sprouts, added diced pancetta, garlic, salt, pepper, and olive oil. Tossed the mixture on a baking sheet and roasted. If you've never added pancetta to sprouts, you're missing out! #steak#potatoes#meat#pancetta#pittsburgstyle#birthdaydinner
Pesto Cod with garlic asparagus and rice pilaf. 🐟
After a crazy summer/september of moves and new beginnings, #pellisbelly is back! Last night's dinner was a perfect quick and easy weeknight meal. My mom was looking for a new way to do fish, and I think we found it! Just add your favorite Pesto, top with some fresh summer tomatoes, and bake at 350 about 20 minutes or until the cod is cooked through. For sides, we chose to sauté asparagus with fresh garlic and olive oil, and paired with rice. Have a favorite way to prepare fish? Poached egg over tomato & Arugula salad; mexi style potatoes; and peaches.
I'm just so peachy keen on this dish. 😉
#Arugula salad tossed with lemon, salt & pepper, topped with a sliced tomato and the poached egg. To make the potatoes, first peal and grate potatoes. Then pat dry to get the starch out so the potatoes will brown. In a cast iron skillet, heat some olive oil. Add grated potatoes, black beans, cilantro, avocado, jalapeño and some shredded cheddar cheese. Let it sit on the fire to brown, then use a spatula to flip parts of it so each side is browned. Finish the plate with some juicy ripe peaches! Enjoy!
