The perfect, chewy and gooey chocolate chip cookies 🍪
Combine 150g granulated sugar, 150g light brown sugar, 220g softened (but not melty) salted butter, 1 medium egg 🥚and 1tsp vanilla extract and mix until creamy and all combined. Add in 280g plain flour,
1tsp bicarbonate of soda and combine thoroughly - try to keep the mix cool - the mix will be pretty solid and may be difficult to stir🥣 but keep at it! Then add 100g milk chocolate chips🍫,
50g dark chocolate chips, and 100g white chocolate chips. Bake🔥 for 8-10 minutes at 190 degrees, or until slightly browned. Don’t bake until they are hard, as they will harden when they are cooling and if you take them out when they are hard they will just be rocks.

Never underestimate the transformative powers of a piece of bread 😳🍞 As a kid this was referred to in my family as ‘gypsy bread’ or ‘eggy bread’ - but really it’s just a super sugary, pimped up French toast. Really bad for you, but full of flavour and one of the best comfort foods around!
Recipe (serves 2):
Whisk together about 3 eggs🥚 and a cup of milk🥛 in a deep, flat based container - a brownie tray is perfect for this.
Soak a piece of bread 🥖 in this on both sides, but not for too long - you want it fully covered, but not soggy.
Melt a tablespoon of butter in a hot pan and fry the bread. Sprinkle a generous (seriously, generous) teaspoon 🥄 or two of sugar, and another generous teaspoon of cinnamon on the bread. Leave the bread in there for as long as possible without it burning, and then flip, and repeat with the sugar on the other side. This side will cook a lot faster 🔥 so keep checking the under side of the bread. Repeat with more bread - 2 per person should be enough. Don’t forget to add butter each time!
Serve with maple syrup🍯, fruit🍓 and icing sugar and enjoy 😋😋😋
