Today’s the last day of my Erasmus year in England 🙈 I still don’t realise that I’m going home now for good ... Beeriger Kaiserschmarrn 🍓🇦🇹 .
This is a vegan recipe for a famous dish from Austria called „Kaiserschmarrn“ which is basically a sugared pancake 🥞 and I served it with a raspberry-rosemary sauce 😍
* 120 g flour * 1 1/2 tsp. baking powder * 130 ml plant based milk (I used almond milk) * 1 ripe banana * 100 ml sparkling water * Coconut oil (or vegan margarine) * 4 tbsp. Sugar (I used Vienna icing sugar) * 100 g blueberries * 100 g raspberries * Vanilla | cinnamon * Pinch of Salt . .
🥞 mash the banana .
🥞 froth up with milk, salt and sugar .
🥞 mix together the flour, baking powder, vanilla and cinnamon (separately).
🥞 stir the dry ingredients in and add the sparkling water - stir until the mixture is homogeneous.
🥞 Heat up the coconut oil in a pan and fill in the mixture .
🥞 Add 1/2 of berries and let it bake for few minutes (3-4) until bubbles start appearing and the bottom is golden .
🥞 flip it and fry the other side until golden .
🥞 shred the pancake into pieces and add the leftover berries .
🥞 serve on a plate and dust with icing sugar.
