Fermented Cucumber Tomato Salad
Mix the following in a large bowl...
•3-4 medium/large tomatoes, cut to desired size
•1 whole cucumber, peeled and diced
•1/2 purple onion, diced
•2 Tbsp Bubbies Sauerkraut Juice
•pinch of pink Himalayan sea salt
•cracked pepper to taste
•top with cilantro, avocado, sauerkraut or whatever your heart desires

Get ready friends... Fall is officially here. There is a chill in the air in my neck of the woods. That means I’m about to explode your feed with #allthefallthings
And that includes pumpkin everything 🎃 These are on my list to make.
Paleo Pumpkin Muffins with Cinnamon Streusel
•3 large eggs
•1 cup organic pumpkin puree
•1/3 cup organic coconut milk full fat
•1/3 cup organic coconut sugar or maple sugar
•2 Tbsp pure maple syrup
•1 tsp pure vanilla extract
•1 3/4 cups blanched almond flour
•1/4 cup tapioca flour or arrowroot
•1 Tbsp coconut flour
•1 tsp baking soda
•1 Tbsp pumpkin pie spice
•1/2 tsp cinnamon
•pinch fine grain sea salt
•3/4 cup blanched almond flour
•1/3 cup maple sugar or coconut sugar
•1 tsp pumpkin pie spice
•1/8 tsp sea salt
•1/4 cup grass fed butter or ghee or coconut oil, solid and chilled
prepare the streusel first:
In a medium bowl, use a pastry blender or fork to combine the cold butter or ghee (or coconut oil) with the almond flour, sugar, pumpkin pie spice and sea salt. Blend until a crumbly mixture forms, then refrigerate until ready to use.
1.Preheat your oven to 350 degrees F and line a muffin pan with 12 parchment liners.
2.In a large mixing bowl, whisk together the pumpkin puree, eggs, sugar, maple syrup, coconut milk, and vanilla, until very smooth and well combined
3.In a separate bowl, blend the 3 flours, baking soda, salt, cinnamon and pumpkin pie spice until well combined, then stir this into the wet mixture, beating by hand until smooth and well combined.
4.Fill the liners 3/4 of the way with batter (it will make enough for 12-14 depending on how high you fill them)
5.Top each muffin generously with the chilled streusel, then bake in the preheated oven for 22 minutes or until they rise and a toothpick inserted near the center of one comes out clean.
6.Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Paleo Pumpkin Granola...
•2 cups chopped raw pecans
•1 cup chopped almonds or cashews or a mix of both
•1 cup dried cranberries or raisins
•1 cup unsweetened shredded coconut
•1/3 cup coconut flakes
•1/2 cup canned pumpkin
•1/2 cup maple syrup
•2 tablespoons coconut flour
•1 tablespoon pumpkin pie spice
•2 tablespoons melted coconut oil
•1/2 teaspoon salt
1.Preheat oven to 325° and line a sheet tray with parchment paper.
2.In a large bowl, combine chopped nuts, shredded coconut, coconut flakes, canned pumpkin, maple syrup, coconut flour, pumpkin spice, melted coconut oil, and salt. Stir until everything is coated evenly.
3.Place on sheet tray and bake for 20 minutes.
4.Stir and bake for another 10 minutes for soft granola or 20 minutes for crunchy granola.
5.Let fully cool and store in air tight containers.

Buffalo Chicken is my husband’s favorite. He loves a “cheat day” at BW3’s… Boneless wings as hot as they come. However, you really don’t want to be in the same room with him after he eats those things.
Franks hot sauce is one of his favorite things in the world. He puts that stuff on tuna, eggs, burgers… you name it, he adds it. When I say he adds hot sauce, I mean like half the bottle. We go through hot sauce like water. So when I surprised him with Buffalo Chicken Salad Sandwiches for dinner one night, I instantly became his favorite person that night. I write this for my husband. I write this because he has served his community proudly for 18 years as a Police Officer. I write this because he deserves so much more. I write this because my heart swells with pride. He is a wonderful man. He is a wonderful Police Officer.
Like every police officer who chooses this career path, putting their life on the line to serve and protect the community… the job is so much more than “just” a job. It’s a lifestyle. It’s a mentality. It’s how you think. It’s how you react. It’s how you interact. Because let’s face it, many days it feels like it’s you against the world. It’s the calls that leave a forever imprint on your heart. Like the one where my husband held a small child’s head as it slipped from this life to heaven after being run over by a car. Or the man he gave CPR and saved his life. It molds and shapes you to be the best Police Officer you can be.
And that my friends is exactly what my husband was… the BEST Police Officer.
But life brings the unexpected sometimes... and that’s where we must trust that His plans are greater than our own.
