-
Also Happy Fathers Day to my bomb ass Dad and all you other Fathers out there! Hope you guys had a great one!

Extra Crispy Potato Stacks! πŸ₯”πŸ”₯
-
Had to give these a go after the master @byrontalbott created some delicious looking Potato Stacks on his Youtube Channel!
-
These are actually super easy to make and I highly recommend you do it if you want a fancy looking side thats super tasty! Just grab a few Yukon Gold Potatoes and slice lengthwise on the lowest setting on a mandolin. Then grab some slices and make sure they are all even on top of each other and cut around to create a perfect square. Once you have a few, brush with olive oil and bake on the top rake at 400 for about 50-60 minutes. Once the edges are super crispy and it becomes golden, you are good to go! Sprinkle with salt then enjoy! The outsides are nice and crispy and the insides are fluffy like a nice ass pillow! And seriously go check out @byrontalbott Page and YouTube for some deliciousness!!!

Super pumped with how this recipe test turned out! I used Boneless Chicken Thighs and cut them into strips and they were so damn juicy! Recipe notes are below and I hope you guys enjoy!
-
Grab 2 lbs of Boneless Chicken Thighs and slice into long strips. Throw in a plastic ziploc bag and set aside.
-
Marinade: Grab a bowl and throw in 1/3 cup Coconut Aminos, 3 tbsp of Red Curry Paste, few dashes of fish sauce, small pour of Sesame Oil, 1/2 tsp turmeric, nice sprinkle of Cumin & Coriander, and Salt, little pour of rice wine vinegar. Mix up then pour over the chicken. Marinade overnight then grab a grill pan and get it super hot! Brush with some Avocado oil and start searing the strips for 3-4 min each side! You could also use wooden skewers to do true Chicken Satay but I was too lazy! Tune in tomorrow to see what dish I paired this Chicken with! πŸ˜ƒ

Big ass bowl of my Spicy Turkey Bolognese with Zoodles topped with some Crispy Oven Baked Fries because why not! 😎
-
This is one of my go to dishes when I want something that is comforting but also super easy to make! Just get a thing of ground Turkey, Sweet Onion, 2 Carrots, package of Cremini Mushrooms, Spicy @raoshomemade Sauce, and Pancetta. -
I grabbed my @staub_usa Dutch oven and threw in the Pancetta and cooked until crispy then removed the Pancetta and added in the ground turkey to brown. Remove that when it’s done then add in some Olive oil and throw in the diced carrot, half the onion chopped up and the mushrooms slices. Cook for 5-7 min then add the Turkey and Pancetta back in and add the Spicy Marina Sauce. Give a nice stir and let simmer for 30 min stirring every now and then! So damn good! Top with some Baked Fries if you want to make it extra hearty and comforting! πŸ‘

Whole30 Shrimp Tempura Lettuce Cups🍀 -
This was a tasty little snack that was super simple to make! I made an easy Tempura Batter that consisted of mixing up an egg yolk with 1/4 cup @ottos_cassava_flour and half a @topochicousa Water. Make sure not to over mix the batter! Then I added in my cut up shrimp then pan fried them in some Avocado Oil. They came out nice and crispy and had a nice light crust on them! I tossed them in some of my homemade Creamy Chili Garlic Sauce to complete this dish! πŸ˜ƒ

Whole30 Poke Bowls for the win! 🍣πŸ”₯
-
This Poke Bowl was definitely a treat! It was packed full of Ahi Tuna Poke, Cauliflower Rice, Carrot Sticks, Avocado, Tempura JalapeΓ±o and Shallot, and a Creamy Chili Sauce.
-
Tips for a perfect bowl:
Find a really good poke spot around you and just get the Ahi Tuna Poke Plain then add in some sesame seeds, Scallion, Onion, and Sesame Oil. If you order it Shoyu style with no sauce, should come like that! Just ask!
-
I like to roast my Cauliflower Rice for 20-30 min at 400 to make it soft and it gives it more of a rice texture!
-
I made a super simple Tempura using 1/4 cup of @ottos_cassava_flour and about half of a @topochicousa. Lightly stir then you could add in the Sliced JalapeΓ±o and Shallot. I then coated in some Arrowroot Powder and Pan fried in some Avocado Oil.
-
The crispness of the JalapeΓ±o and Shallot gives a nice texture to the bowl! At the end of the day add your favorite Whole30 stuff in their since its endless with what you could create! πŸ‘

Pork Panang Curry with Green Beans and Cauliflower Rice!
-
This was one of my most favorite Whole30 dishes that I’ve made so far! Recipe is below and you could easily make this with any type of protein that you want! πŸ˜ƒ
-
Panang Curry:
Add 2 tbsp of Thai Kitchen Red Curry to a bowl, mortar a small handful of cashews to powder and add to the red curry, add in a nice sprinkle of coriander and cumin. Mince up a Serrano or Fresno pepper and add that in. Give it a nice mix to make sure everything is combined.

Steps:
Get a Dutch oven and drizzle with a little olive oil on medium heat then add in the curry paste that’s been mixed up. Cook for a few min then add in 4 spoonfuls of the top of the coconut cream and cook until that reduces and a paste is formed and you will then want to cook that for a few min. (Tip: don’t mix the coconut cream when opening! You want to use that thick cream)
Now you could mix up the cream after adding the scoops from the above step and add in the rest of the coconut cream and cook until reduced a bit. I used about 18 oz of Coconut cream in total. Now add in 3 lbs of pork that’s been sliced into strips and a yellow onion and red pepper that’s been sliced, cook until meat is almost cooked though, then add in a little fish sauce and a spoonful of tamarind paste, and 6 basil leafs that have been roughly chopped. Mix up and let simmer for a bit covered. Check the broth for flavor. Could add cayenne if you want it more spicy. Add salt if it needs it. Then plate it up and top with some Ground Cashew! I added a scoop of Cauliflower Rice that I baked until soft and some Roasted Green Beans to this! Hope you enjoy!
