Loading up on all the summer berries.
Here I combined blackberries, raspberries, blueberries, golden raspberries and a couple kinds of cherries with a basic chia pudding. The berries have a plethora of antioxidants (varying by berry and colour) and the chia pudding adds in extra fiber, healthy fats, protein and their own antioxidants for a filling, healthy and balanced snack.
Summertime homemade fast food.
Andrew grilled up some lemon marinaded chicken breasts and meanwhile I tossed a couple handfuls of baby kale and micro greens in creamy Caesar dressing then added in some chopped tomatoes, sliced avocado and chives from our garden. We had a big plate of broccoli with hummus on the side for extra nutrients and satiation.
It all came together in 20 minutes with little effort. I used to be adamant about making everything from scratch but I’ve found some pre-made sauces, vinaigrettes and marinades made from good oils and quality ingredients that I turn to now when I don’t have as much time. Luckily they are becoming more widely available and more companies are making different versions- a great example of education leading to consumer demand for better food products.
Quick and healthy family dinner.
We grilled bacon wrapped, seasoned steaks and then served them with a simple salad, corn on the cob and a crudité platter. The salad came together quickly with a clamshell of baby kale, a small packet of pre-cut golden beets, red cabbage and broccoli stems, a generous drizzle of creamy Caesar dressing, a couple handfuls of blueberries and a chopped apple tossed in lemon juice.

Energy balls with a blue coconut coating (naturally dyed with blue algae) along with iced tea made from blue butterfly tea that I brewed then froze into iced cubes for easy access.
Home is where the giant plates of vegetables are.
For a simple, seasonal dinner we had this pile of homemade Greek salad served on a bed of baby kale. We finished it off with some fresh lemon wedges and some chicken skewers that I marinaded in a creamy balsamic vinaigrette.
From the expanse of lush fields speckled with grazing sheep and cows, to the endless rock walls, to the tunnels of trees, to the frigid blue sea, the Irish countryside is filled with endless beauty and charm.
From the butter to the yogurt to the ice cream, all the dairy in Ireland is exceptionally delicious.
You can’t drive more than 3 or 4 minutes in the countryside without seeing a herd of cows and/or sheep grazing. The free ranging and natural diet makes for milk that has a more beneficial nutritional profile and a much richer taste. This ice cream was some of the creamiest and most wonderfully textured I’ve ever had.

We rode through the forested mountainside, making our way through the lush landscape to view the highest waterfall in Ireland. 🌲
I had a gentle, calm horse while Andrew’s was most notably characterized by his persistent appetite. His name is Guinness and if he is not left with enough food for midnight snacks he’ll kick at the door until someone wakes up and brings some for him. 🌾
After driving 1,605 kilometres around Ireland, on the wrong side of the road and with long days of exploring we happily made it back to Dublin in one piece for a few more pints and strolls around town.
