Feeling a bit festive today! Christmas themed bliss balls, I got this recipe from the very talented @tasty.twinsss, and then put my own little spin on it πŸ’ in these little Christmas puds are oats, dates, cinnamon, allspice and either cranberries or apricots (I made two different flavours), then I topped them with some white chocolate, a little cranberry and two pumpkin seeds! Aren’t they cute β˜ΊοΈβœ¨πŸŽ„

Chocolate chickpea cookies πŸͺ not gonna lie I was a little sceptical about making these... but they were so delicious!!! Lower in sugar and higher in protein and fibre than your usual chocolate chip cookie, very impressed! Recipe from @nadialimcooks in her Fresh Start cookbook πŸͺπŸͺπŸͺ

Dinner the other night from @hellofreshnz was absolutely delicious!!! Tahini marinated pork with a couscous tabouleh, yoghurt drizzle, feta and fresh parsley. Sooooo yummy and healthy as well! 10/10 🀩

Fresh rice paper rolls πŸ₯‘πŸŒΆπŸ₯’πŸ‹πŸ₯• easy and healthy lunch idea! In these ones I used leftover beef strips from last night, cucumber, carrot, capsicum, avocado and mint. The dipping sauce was garlic, lemon juice, fish sauce, brown sugar and chilli flakes. Delish!

Yes this has sugar in it (maple syrup is just sugar people), but it also has complex carbohydrates, fibre, vitamins, minerals, and plenty of protein. Sometimes we need to think about a meal as a whole to decide it’s healthiness! Perspective is key. Happy Monday everyone! ✨

Thai beef salad πŸ₯— A great summer/ spring dinner idea, just add some brown rice on the side and you’re good to go. The recipe for the dressing I used was: 1 finely chopped kaffir lime leaf (remove stem), good sprinkle chilli flakes (or can use fresh chilli), 2 teaspoons finely grated ginger, 1 clove garlic (minced), juice of 1 lemon, 2 teaspoons fish sauce, 1 tablespoon sweet chilli sauce and 1 tablespoon olive oil. Yum yum! πŸ₯‘πŸ₯’πŸŒΆπŸ₯—πŸ‹
