Yesterday, we attended the special screening of the documentary “Wasted!” about food waste. Wasted food is a growing problem in our modern society. In US, 50% of produce is thrown away (20% by the consumers). Reducing food waste not only saves money, it is also good for the community by donating to hungry people and the environment. Food waste won’t reach landfills where they don’t decompose due to the environmental conditions. Did you know that it takes 25 years for a head of lettuce to completely decompose in landfills? #rethinkfood#lamppostcheese
At the presentation of their book, “Reinventing The Wheel”, @bronwenpercival and Francis Percival told us that #rawmilk is alive with microbial presence. They did a little experiment. They stored some raw milk at room temperature and after a few days, the milk coagulated naturally due to the microbial activity present in the milk. We were curious and we did the same thing with the milk we use to make cheese from Swallow Hill Dairy Farm. Here is the result.
