I used the $1.99 mini eggplants to make a low carb eggplant parm ๐Ÿ˜ instead of breading, the top is sprinkled with a mixture of almond flour & Parmesan cheese. Keep in mind to use tomato sauces that are low on sugar, many canned tomato sauces are laden with added sugar. ๐Ÿ˜ฃ

#ProTip check out your local farmers market for great deals on produce ! My farmers market has a clearance corner that you can get produce that is perfect if you're shopping on a budget. Just keep in mind you need to use them in a timely manner but if you pick them up on your meal prep day you're set. ๐Ÿ˜‰๐Ÿ‘๐Ÿผ got both this head of cauliflower & eggplants for $1.99 each. I took advantage of the gorgeous weather this morning when I got off work and napped in my backyard after down this yummy parfait I made myself. I was really sick of eggs and craving some berries so I treated myself. Layered some yogurt, Walden Farms chocolate syrup, @kzcleaneatinginc grain free breakfast cereal, and a mixture of cut strawberries, raspberries, and blackberries. 'Twas delicious and refreshing. ๐Ÿ“
