I thought I’d share how I did the mochiko fried tofu, since it was easy peasy, and could be a most excellent #potluckdish for tricking anti-vegan meat eaters into actually enjoying vegan food! Our mom sent me the old school recipe she has always used, and I simply substituted canned chickpea brine for the eggs. I didn’t measure the amount, but for this recipe, perhaps 1 or 2 14-ounce cans of chickpea brine, blended well with ginger and garlic, would work. (I used organic Tamari instead of shoyu.) We did press the tofu and soak it in dashi overnight prior to dredging, but just pressing it would be sufficient. RJ feels beer would be better than chickpea brine.
