Happy Monday!! What did you start your morning with? 
Here is a sweet, crunchy, creamy granola breakfast ✨ Nutty granola with almond milk, topped with hot stewed blueberries and coconut yoghurt. Looks fancy but only takes 3 minutes to make. To do the blueberries, just add frozen blueberries to a small saucepan with a drizzle of maple or honey and let summer for a couple of minutes. If you’re using frozen berries you don’t need to add any more water, but if you use fresh instead add a splash of water to the pan too, otherwise they’ll burn to the bottom ❤️

One-Skillet Honey Dijon Chicken with Potatoes and Green Beans ~

INGREDIENTS:
Chicken and Vegetables
olive oil, as needed
kosher salt and freshly ground black pepper, as needed
1 to 1.25 pounds boneless skinless chicken breast tenders
about 1 pound baby red potatoes, diced into 1/2-inch pieces
about 12-ounces trimmed green beans
SAUCE:
1/4 cup Dijon mustard
2 tablespoons honey
2 tablespoons golden balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
DIRECTIONS:
Chicken and Vegetables – To a large skillet, add 2 to 3 tablespoons olive oil, chicken, season with salt and pepper, and cook over medium-high heat for about 7 minutes, or until chicken has cooked through; flip intermittently to ensure even cooking. After chicken has cooked, transfer to a large serving platter and set aside.
Add the potatoes to the skillet, about 2 to 3 tablespoons olive oil, season with salt and pepper, stir to combine, and cook covered over medium-high heat for about 10 minutes, or until potatoes are fork tender. After potatoes have cooked, transfer to the serving platter and set aside.
Add the haricots vert to the skillet, about 1 to 2 tablespoons olive oil, season with salt and pepper, stir to combine, and cook covered over medium-high heat for about 5 to 7 minutes, or until crisp-tender. "Strawberry and Avocado Chicken Salad"

A fresh and summer strawberry salad with avocado, bacon and crispy fried goat cheese with a honey lemon dijon dressing with poppy seeds!
~
FOR THE HONEY LEMON DIJON POPPY SEED VINAIGRETTE:
1/4 cup lemon juice
1/4 cup extra virgin olive oil
3 tablespoons honey
3 teaspoons Dijon mustard
3 teaspoons poppy seeds
2 cloves garlic, grated or minced
salt and pepper to taste
FOR THE FRIED GOAT CHEESE:
8 ounces goat cheese, either sliced into 1/4 inch thick discs or formed into small balls
1/4 cup flour
1 large egg, lightly beaten
1 cup panko breadcrumbs (or breadcrumbs)
FOR THE SALAD:
4 strips bacon
1/2 pound chicken breasts
6 cups baby spinach
1 cup strawberries, sliced
1 avocado, sliced
1/4 cup red onion, sliced
1/4 cup almonds, sliced, slivered or chopped
directions
FOR THE HONEY LEMON DIJON POPPY SEED VINAIGRETTE:
Mix everything well.
FOR THE FRIED GOAT CHEESE:
Dredge the goat cheese slices/balls in the flour and coat in egg followed by breadcrumbs and fry in oil over medium heat until lightly golden brown before setting aside on paper towels to drain.
FOR THE SALAD:
Cook the bacon and set aside on paper towels to drain before crumbling.
Marinate the chicken in half of the vinaigrette for 30 minutes to over night before grilling over medium-high heat until cooked and slightly charred, about 2-5 minutes per side, and setting aside to cool and slice.

Taco Tuesday! Ready for this recipe? Cajun Fish Tacos for you. Delicious and smoky cajun rub on beautifully seared juicy fish topped with rich creamy avocado cilantro sauce and spicy tangy pico de gallo all wrap in warm tortilla. So light, so fresh, yummm. 
Ingredients:
🔻🔻🔻
Cajun rub
2 tsp of:
Cumin
Coriander
Paprika
Garlic Powder
Onion Powder
Cayenne

1 tsp of:
Thyme
Oregano
Black Pepper
Salt
Sugar

Avodaco Cilantro Sauce
🔻🔻🔻🔻
3 ripe hass avocado, halved, deseeded, scooped out from peel
6 tbs whole plain yogurt
½ cup cilantro (leaves & stems)
2 garlic cloves, peeled
1 tbs olive oil
¼ tsp ground cumin
Salt and black pepper to taste

8 flour tortillas, warmed and covered in a towel-lined plate
4 cups thinly sliced lettuce or alfalfa sprouts
1 bunch cilantro, roughly chopped
¼ - ½ cup yogurt or sour cream
Pico De Gallo

Instructions:
🔻🔻🔻
In a small bowl, combine the ingredients for the Cajun rub. Generously coat the fish with the rub (see note 1). There will be some the rub left. Let marinate while you prepare the remaining ingredients.
In the blender or food processor, combine the ingredients for the avocado cilantro sauce and blend until desired consistency. Chill until ready to use.
In a bowl, combine the ingredients for the pico de gallo. Chill until ready to use.
Over medium high heat, add a coat of oil in a pan. Once the pan is hot, sear the fish until browned and charred to your liking. Depending on how thick the fish is, fry 2-3 minutes on each side. If the fish is really thick, lower the heat a little so that the center can cook without the outside burning. Cook a couple minutes more if so. When you can flake the fish (or temperature reads 145 F), it's ready.
To assemble, break up the seared fish and place them on a warm tortilla. Top with lettuce, avocado cilantro sauce, pico de gallo, cilantro and yogurt.

Blueberry Banana Bread (gluten, dairy & refined-sugar free)

Oh my blueberries!! I just came across this recipe by @thedishonhealthy and it looked so good I had to share! I will be making this ASAP!! Who else loves blueberries?!
🔸Ingredients🔸
•	2 + 1/2 cups of almond flour*
•	2 eggs (at room temperature)
•  1 tbsp unsweetened applesauce
•  4 very ripe bananas, mashed
•	1 tsp of vanilla extract
•	1/3 cup of melted coconut oil
•	1/2 tsp of ground cinnamon
•	1/3 cup pure maple syrup or coconut nectar or rice malt syrup
•	1 tsp baking powder
•	1 + 1/2 cup of fresh blueberries 🔸Instructions🔸
•  Preheat the oven to 350F and line a medium-large loaf pan with parchment paper
•  In a large bowl, combine all the dry ingredients together: almond flour, cinnamon & baking powder.
•  In another bowl, combine the ripe mashed bananas, the eggs, applesauce, pure maple, the coconut oil & the vanilla. Whisk well to integrate.
•  Pour wet ingredients into the dry ingredient bowl. Once well combined, fold in the blueberries.
•  Pour batter into the loaf pan. Top with a few extra blueberries and cover with aluminum foil as it bakes. Bake for 50-55 mins. Mine required 55 mins, but all ovens vary.

Notes: Do not cut while still warm, it may feel crumbly or mushy. Paleo flours are best enjoyed after they set or refrigerate for a few hours. The bread has an even better texture the following day! Always maintain refrigerated for freshness.

Blueberry Banana Bread (gluten, dairy & refined-sugar free) Oh my blueberries!! I just came across this recipe by @thedishonhealthy and it looked so good I had to share! I will be making this ASAP!! Who else loves blueberries?! 🔸Ingredients🔸 • 2 + 1/2 cups of almond flour* • 2 eggs (at room temperature) • 1 tbsp unsweetened applesauce • 4 very ripe bananas, mashed • 1 tsp of vanilla extract • 1/3 cup of melted coconut oil • 1/2 tsp of ground cinnamon • 1/3 cup pure maple syrup or coconut nectar or rice malt syrup • 1 tsp baking powder • 1 + 1/2 cup of fresh blueberries 🔸Instructions🔸 • Preheat the oven to 350F and line a medium-large loaf pan with parchment paper • In a large bowl, combine all the dry ingredients together: almond flour, cinnamon & baking powder. • In another bowl, combine the ripe mashed bananas, the eggs, applesauce, pure maple, the coconut oil & the vanilla. Whisk well to integrate. • Pour wet ingredients into the dry ingredient bowl. Once well combined, fold in the blueberries. • Pour batter into the loaf pan. Top with a few extra blueberries and cover with aluminum foil as it bakes. Bake for 50-55 mins. Mine required 55 mins, but all ovens vary. 🔻🔻🔻 Notes: Do not cut while still warm, it may feel crumbly or mushy. Paleo flours are best enjoyed after they set or refrigerate for a few hours. 1 piece of your favorite bread, toasted

1 Tablespoon ground flax

1 Tablespoon chia seeds

2 large strawberries (or 3-4 smaller strawberries), sliced

1 Tablespoon organic honey

3-4 Tablespoons cream cheese (dairy-free works).

INSTRUCTIONS

Place cream cheese in small bowl.

Add flax and chia seeds.

Mix with hand-mixer until fully combined.

Spread cream cheese over toast.

Lay strawberries across toast.

Drizzle with honey.

Sprinkle with additional chia seeds for garnish, if desired.
