How to Make Gluten-Free Pork Pot Stickers from Scratch

The one cuisine I deeply miss since getting diagnosed with Celiac disease is Chinese food. No more dim sum, no more chow fun, no more delicious meat-filled dumplings. Gone are the days of eating my way along the Dumpling Trail in Richmond, B.C.

Though there are many gluten-free noodle options on the market, I have yet to find store-bought gluten-free wrappers to make pot stickers or wontons. Then I found Laura B. Russell's The Gluten-Free Asian Kitchen: Recipes for Noodles, Dumplings, Sauces, and More, a must-have cookbook for gluten-free lovers of Asian food. For those new to a gluten-free way of eating you'll find the section on identifying sources of gluten in common Asian ingredients (some ingredients are often sneaky like imitation crab (aka surimi), which contains wheat as a binder) and stocking a gluten-free Asian pantry indispensable. Her beautiful cookbook features an array of Asian recipes - Chinese, Japanese, Vietnamese, Thai, Korean - with chapters covering Sauces and Stocks, Skewers and Snacks, Dumplings and Savory Pancakes, Noodles and Rice, Vegetables and Tofu, as well as Seafood, Poultry, Meat, and Sips and Sweets.

Screamin' Good Slow Cooker Pork Carnitas Tacos

Who says you can't use your slow cooker outside of the cold winter months? For entertaining or an easy weeknight meal, this simple slow cooker pork carnitas recipe is the best! Gather together a pork roast, and chicken broth, along with a few spices you probably already have in your pantry - garlic powder, ground cumin and coriander, oregano, bay leaves, cinnamon -  and pop it all in the slow cooker. Let it cook all day (or overnight), then remove it from the slow cooker, shred it with a fork and soak in a bit of orange juice. Then, if you want to crisp up the meat, pop it in a 400 degree F oven for 15-20 minutes. Set up a taco bar with your favorite toppings and let your guests build their delicious pork carnitas tacos (see suggestions below). The following recipe is courtesy of Stock the Crock by Phyllis Good. This must-have cookbook includes 100 essential slow cooker recipes as well as over 200 variations for dietary preferences or restrictions such as gluten-free, vegan, vegetarian, Paleo-friendly, cooking for one or two, even picky eaters.

This last weekend, we plucked buckets of oysters from the beach at Hood Canal where they were at-the-ready for grilling on the 24-hour stoked fire. Our favorite topping: butter that had been browning in a pan then mixed with fiery garlic sambal oelek. Heaven! They made sleeping on the ground three nights in a row well worth it!

10-Minute Dinner Recipe: Zucchini Zoodles with Ground Turkey Tomato Sauce

All you need to make this easy dinner recipe are three basic ingredients - zucchini, ground turkey, canned tomatoes - plus whatever seasonings and garnishes you'd like. It only takes about 10 minutes to make - start to finish - and it's both delicious and nutritious!

First, if you don't have a spiralizer, I highly recommend getting one! Don't waste your money on buying spiralized noodles as the store. If you're cooking for one, a hand-held spiralizer is sufficient, but if you're cooking for more than one, get a bigger one and you'll be cranking out fun vegetable noodles and ribbons faster than you can grate cheese! Click the link in our profile for the models I recommend.

This recipe is so easy and healthy I hope it becomes part of your weeknight repertoire. Enjoy! Serves 4

Note: if you are not following a low FODMAP diet, feel free to add onions and garlic to this recipe for added flavor.

1 package ground turkey (about 1+ lb)
Olive oil
1 14-ounce can organic fire roasted tomatoes
Salt and pepper, to taste
Seasoning of your choice, such as a dried Italian herb mix, to taste
4 medium zucchini, spiralized
For garnish, freshly grated Parmesan cheese and a drizzle of *basil olive oil (*see note below)
Add a drizzle or two of olive oil to a large and heat on medium-high. Add ground turkey and cook, breaking up the meat with a spatula, until browned, about 3 to 4 minutes. Season to taste with salt, pepper, and Italian herbs. Transfer to a serving bowl and set aside.

Add a bit more olive oil to the skillet (if necessary) and toss in the zucchini zoodles. Cook, tossing frequently until softened, about 3-5 minutes depending on how cooked you'd like them. Transfer to the serving bowl and gently toss with the tomato meat sauce. Plate and top each serving with freshly grated Parmesan cheese and a drizzle of oil. *Other oils that are wonderful drizzled over to finish this dish are truffle oil, lemon oil, or any high-quality olive oil.

Join Me at the 10th Anniversary International Food Blogger Conference! FLASH SALE for May ONLY!! Hello, Friends!

I am so excited to attend the 10th International Food Blogger Conference (IFBC) in New Orleans this August (don't worry, we'll be in nice air-conditioned rooms)! When I founded IFBC back in 2009, I had no idea how starting the first food blogger conference in the World would impact my life. The camaraderie, support, education, and friendships that have come from these conferences and connections is something for which I am profoundly grateful. There have been numerous book contracts, lucrative business partnerships, even a marriage as a result of IFBC!

So I hope you’ll join me for this special anniversary event. Our anniversary gift to you is $100 off your registration through the end of May (use code FLASH when you register). I’d love to celebrate with you - my friends old and new - and introduce those of you that are new to the IFBC to this fantastic community. It will truly change your life! And what better place to celebrate than New Orleans! We’ve got an excellent location in the French Quarter at the fabulous Royal Sonesta New Orleans Hotel. We’ve got fantastic food and music! And we’ve got a stellar line-up of speakers and contributors. Here’s a sampling of those recently announced: • Michael Twitty who just won the James Beard Foundation Book of the Year award • Aaron Ru from Pinterest to talk Pinterest! • Rachel Miller the Facebook and viral marketing guru • Stefani Pollack an Instagram growth wizard • A panel of Marketing experts from Zehnder Communications also featuring bloggers Kristen Chidsey, Jenny Melrose, and Toni Dash • A panel of experts to teach you how to make creatively make money blogging, and more!

This is just a few of the outstanding sessions we have planned. Trust me – this year is not to be missed! I hope I can meet many of you in New Orleans! Learn more and register here:

9 Deliciously Healing Recipes for Gut Health, Inflammation, and More!

A few weeks ago I featured nine days of gut-healthy recipes, each of them unique in their soothing ingredients and health properties. I've gathered them here as a handy reference, especially if you need to check in again with your belly - just to make sure you're still on the same page. You'll love the Tangy Feta Chicken with Kale Wraps from Carla Oates, The Beauty Chef: Delicious Food for Radiant Skin, Gut Health and Wellbeing. These Mediterranean-inspired wraps are loaded with sweet and spicy peppadew peppers, olives, chicken, feta cheese, herbs, and nestled up in a kale leaf wrapper. Her nutrient-dense Savory Custards are loaded with heart-healthy shiitake mushrooms, which are also immune-boosting, good for your belly, aid in weight loss, and help protect our DNA, and her lovely Brussels Sprouts and Kale Fritters are loaded with antioxidants and probiotics.  Try her Middle Eastern–Spiced Walnut and White Bean Balls with Cauliflower Rice and Fried Onion for a  fragrant and satisfying dish that's rich in protein and good fats and full of anti-inflammatory, antioxidant and digestion-promoting spices.

The Seafood Brown Rice with Lemongrass and Cilantrofrom Eat Your Way to a Healthy Gut by The Wellness Chef is a delicious nutrient-dense and gut-soothing stir-fry with lemongrass and ginger-infused brown rice. Both the Roasted Squash and Jerusalem Artichoke soups are simple, healthy and perfect for an easy weeknight meal. It's not too late in the season for the slow cooker! The Balsamic Goji Oats and the Green Tea Shiitake Mushroom Miso Soup from The Healing Slow Cooker will soothe your belly and help heal you from the inside.

Every gut diet is different - as are our bodies - so adjust any of the ingredients in these recipes to suit your specific health or dietary needs as necessary. Most importantly, feel nourished, healthy and happy.

10 Mother's Day Brunch Recipes She'll Love!

Some moms prefer to go out for brunch, some like a relaxing day at a spa, some enjoy a lovingly prepared breakfast served to them in bed. My favorite thing on Mother's Day is breakfast in bed. Nothing beats luxuriating in the comforts of my warm covers while I watch the news and sip a café latté - no rush to pack a school lunch, fix breakfast, or remind to grab socks/brush teeth/put on a coat. Instead, I can relish the quiet moments of the morning, knowing that my daughter and her father will soon deliver a beautiful breakfast tray complete with fresh cut flowers from the garden. To me, it is the best Mother's Day gift ever.

Treat Mom to breakfast in bed this Sunday with one of these yummy dishes like the BLUEBERRY DUTCH BABY (shown), AVOCADO BAKED EGGS WITH TOMATO, BASIL & BACON, or GLUTEN-FREE BERRY CHIA MUFFINS. We've got 10 sweet and savory breakfasts Mom will love. Click the link in our profile for all 10 recioes!! http://www.foodista.com/blog/2018/05/09/10-mothers-day-brunch-recipes-shell-love
