How to Make Gluten-Free Pork Pot Stickers from Scratch
The one cuisine I deeply miss since getting diagnosed with Celiac disease is Chinese food. No more dim sum, no more chow fun, no more delicious meat-filled dumplings. Gone are the days of eating my way along the Dumpling Trail in Richmond, B.C.
Though there are many gluten-free noodle options on the market, I have yet to find store-bought gluten-free wrappers to make pot stickers or wontons. Then I found Laura B. Russell's The Gluten-Free Asian Kitchen: Recipes for Noodles, Dumplings, Sauces, and More, a must-have cookbook for gluten-free lovers of Asian food. For those new to a gluten-free way of eating you'll find the section on identifying sources of gluten in common Asian ingredients (some ingredients are often sneaky like imitation crab (aka surimi), which contains wheat as a binder) and stocking a gluten-free Asian pantry indispensable. Her beautiful cookbook features an array of Asian recipes - Chinese, Japanese, Vietnamese, Thai, Korean - with chapters covering Sauces and Stocks, Skewers and Snacks, Dumplings and Savory Pancakes, Noodles and Rice, Vegetables and Tofu, as well as Seafood, Poultry, Meat, and Sips and Sweets.

Screamin' Good Slow Cooker Pork Carnitas Tacos
Who says you can't use your slow cooker outside of the cold winter months? For entertaining or an easy weeknight meal, this simple slow cooker pork carnitas recipe is the best! Gather together a pork roast, and chicken broth, along with a few spices you probably already have in your pantry - garlic powder, ground cumin and coriander, oregano, bay leaves, cinnamon - and pop it all in the slow cooker. Let it cook all day (or overnight), then remove it from the slow cooker, shred it with a fork and soak in a bit of orange juice. Then, if you want to crisp up the meat, pop it in a 400 degree F oven for 15-20 minutes. Set up a taco bar with your favorite toppings and let your guests build their delicious pork carnitas tacos (see suggestions below). 1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1⁄2 teaspoon dried oregano
1⁄2 teaspoon ground coriander
1⁄2 teaspoon ground cinnamon
4-pound boneless pork butt roast
2 cups chicken broth
2 bay leaves
1⁄2 to 3⁄4 cup orange juice
fresh tomatoes, chopped
red onion, chopped
fresh cilantro, chopped
sliced black olives
jalapeño chile slices

This last weekend, we plucked buckets of oysters from the beach at Hood Canal where they were at-the-ready for grilling on the 24-hour stoked fire. Our favorite topping: butter that had been browning in a pan then mixed with fiery garlic sambal oelek. Heaven! They made sleeping on the ground three nights in a row well worth it!
10-Minute Dinner Recipe: Zucchini Zoodles with Ground Turkey Tomato Sauce
All you need to make this easy dinner recipe are three basic ingredients - zucchini, ground turkey, canned tomatoes - plus whatever seasonings and garnishes you'd like. It only takes about 10 minutes to make - start to finish - and it's both delicious and nutritious!
First, if you don't have a spiralizer, I highly recommend getting one! Don't waste your money on buying spiralized noodles as the store. If you're cooking for one, a hand-held spiralizer is sufficient, but if you're cooking for more than one, get a bigger one and you'll be cranking out fun vegetable noodles and ribbons faster than you can grate cheese! Note: if you are not following a low FODMAP diet, feel free to add onions and garlic to this recipe for added flavor.
1 package ground turkey (about 1+ lb)
1 14-ounce can organic fire roasted tomatoes
Salt and pepper, to taste
Seasoning of your choice, such as a dried Italian herb mix, to taste
4 medium zucchini, spiralized
For garnish, freshly grated Parmesan cheese and a drizzle of *basil olive oil (*see note below)
Add a drizzle or two of olive oil to a large and heat on medium-high. Add ground turkey and cook, breaking up the meat with a spatula, until browned, about 3 to 4 minutes. Season to taste with salt, pepper, and Italian herbs. Transfer to a serving bowl and set aside.
Add a bit more olive oil to the skillet (if necessary) and toss in the zucchini zoodles. Cook, tossing frequently until softened, about 3-5 minutes depending on how cooked you'd like them. Transfer to the serving bowl and gently toss with the tomato meat sauce. Plate and top each serving with freshly grated Parmesan cheese and a drizzle of oil. *Other oils that are wonderful drizzled over to finish this dish are truffle oil, lemon oil, or any high-quality olive oil.
