Looking for some simple lunch inspiration? Try topping mixed salad leaves with roasted veggies, tofu and hummus.

To make this beautiful rainbow bowl I roasted sweet potato, red onion, courgette, broccoli and smoked tofu in the oven for 25-mins. Put the veg on top of the mixed salad leaves, cherry tomatoes and avocado and topped it all with a dollop of hummus. So easy and I made extra veg for an easy lunch another day 👍🏻

Experimenting with making flapjacks this afternoon because I’ve been wanting a flapjack for days! Fresh from the garden I whipped this beautiful bundle into a #refinedsugarfree compote which works well on top of simple plain @coconutcollab yoghurt. 
Did you know #rhubarb is not a fruit - as you might expect given that it’s usually used to make deserts but it’s in fact a vegetable because we eat the stem of the plant (FYI the leave are poisonous ☠️) Fun #foodfacts for you 😜

It’s also high in fibre, vitamin k, calcium and vitamin c. Fibre helps keep your gut healthy and your cholesterol down, vitamin k and calcium are essential for one health and vitamin c keeps your immune system strong. 
COMPOTE RECIPE

About 10 stalks of rhubarb
4 tbsp maple syrup
3 tbsp water
2 tsp vanilla extract

Chop the rhubarb into small chunks and add to a pan with the other ingredients. Heat and then simmer for 10-15 minutes until soft. Allow to cool and store in a glass jar in the fridge.

As you may have already gathered I’m obsessed with this stuff. Kombucha is basically fermented tea. Served cold, it’s normally lightly fizzy and has a slightly acidic taste. The taste can take a bit of getting used to and I personally prefer flavoured versions like this Raspberry and Elderflower @EquinoxKombucha ⠀

Kombucha originated from China where it’s referred to as “Immortal Health Elixir”. This is because like any fermented food or drink it contains healthy bacteria called probiotics which support gut health. A a healthy gut is the foundation of all good health.⠀

My plan now we’ve moved is to start brewing our own as my kombucha love is an expensive passion but until I do I’ll just have to enjoy this beautiful bottle in the sunshine ☀️ ⠀

After watching the BBC's "The Truth about Carbs" with #xandvantulleken last night I wanted to share my thoughts on #carbs. ⠀

⠀
Often carbs are demonised as being "bad". I don't like labelling foods as "bad" or "good", as I believe it instils negative emotions around food. But I do believe in a scale of nutritional value, with some foods being more nutritious than others. ⠀
⠀
⠀
BUT NOT ALL CARBS BELONG AT THE BOTTOM OF THE SCALE. Yes I'll say that again not all carbs are low in nutritional value. ⠀
⠀
⠀
Carbs are foods that contain sugars, starches and cellulose. That includes fruits and veggies. ⠀
⠀
The carbs to avoid are those that are highly refined like white rice, pasta, bread, cakes and biscuits – the white and beige carbs. Even #complex wholegrain versions of these should be limited, as although they are better, they are still ultimately converted to sugar in your body and can be one of the causes of weight gain and even diabetes as illustrated in the show. Better choices are vegetables, which although still carbs technically, contain less sugar and more vitamins, minerals, antioxidants and fibre. The fibre helps make you feel fuller and slows the release of the sugars avoiding the blood sugar spike and crash we can experience with refined white carbs. ⠀

It’s now easier than ever to replace the white carbs in your life with a healthier rainbow of vegetables.  From courgetti (that’s spaghetti made from courgettes) to cauli-rice (that’s rice made from cauliflower) there are ready-made options available in supermarkets everywhere now, but it’s also easy to make your own. A vegetable peeler can help you make ribbons of courgettes to turn into spaghetti and a simple handheld grater will make easy work of turning a head of broccoli into rice.⠀

If like me you live with someone who struggles to give up their carbs start by replacing 50% with vegetables – as I have done with the spaghetti above – this is half brown rice spaghetti and half courgette! So easy and so delicious.⠀

This smoothie definitely tastes better than it looks! 
I thought it would be a beautiful bright red colour from the watermelon 🍉 but the green of the spinach 🍃 and cucumber 🥒 has turned it more of a murky greeny-brown 😆 Still packed with vitamin b and magnesium goodness to help with my energy as we reach the hump of the working week! I blended my fruits and veggies with water but you could use coconut water for extra sweetness or plant milk for something more creamy.

I can hardly believe I’m posting a picture of porridge in JUNE! I don’t know about you but over the last two days I’ve been cold so my body is craving warming foods like this yummy oat, chia seed and quinoa flake porridge made with cinnamon and coconut milk and topped with @rhythmkefir coconut kefir and coconut flakes. 
I love adding cinnamon to bowls of deliciousness like this because it not only adds a beautiful flavour but cinnamon contains chromium which helps keep blood sugars balanced, a great preventative measure if you’re someone who often craves sweet things mid-morning. I’ve also balance the carbohydrate rich oats and quinoa flakes with protein packed chia seeds and the healthy fats of the coconut milk an kefir. A beautiful warming bowl of goodness in this chilly summer morning. .

Not something I generally recommend as eating while distracted can 1. cause indigestion and reflux as you eat faster, less mindfully and without giving your body time to prepare for the food it’s about to receive and 2. mean you to eat more because you miss your body’s cues that you’re full!

BUT #nobodysperfect and after a slow start to the day I knew I needed to crack on with tacking some admin tasks for work so took my breakfast to my desk #doasisaynotasido 😆

Breakfast this morning was my usual: hot water and lemon followed by @deliciouslyella granola (I normally make my own but house move means I haven’t had time so gave this a try and it’s not as sweet as some but does still have dried fruits which contain a lot of natural sugars which still impact your blood sugar. I topped it with @coconutcollab yoghurt and @biomel.life kefir and some sliced banana.

It’s rich in natural probiotic which help populate your gut with the good kinds of friendly bacteria. But, it’s more often made with cow’s milk and personally I prefer #dairyfree options so this is perfect!

Our gut bacteria is essential for overall wellbeing including: 😀 mood 🤧immunity 🥗absorption of nutrients ⚖️weight-loss ❤️heart health

I like adding kefir to smoothies or enjoying it on my homemade granola. One day I hope to make my own, but I’m the meantime I will be stocking up on this beauty 💕

With just 2 days before we move house I’m trying to use up all the leftover food we have 😆

This bowl has:
Lettuce
Roasted peppers, sweet potato, red onion and broccoli
Put lentil
Leftover brown rice
Tomatoes
And it’s topped with @udoschoiceuk omega oil and pesto!

A rainbow of veg to keep me feeling fighting fit and to prevent the stress of the move burning out my adrenals!
