Tonightโ€™s Friday night #fakeaway is sweet potato & pea curry ๐Ÿ› 
I โ™ฅ๏ธ curries as you can probably tell from my page!  Itโ€™s amazing how you can just about โ€˜curryโ€™ anything... I just adjust the chilli ๐ŸŒถ for the boys otherwise itโ€™s great to introduce children to the wonderful spices such as cumin, turmeric, star anise, cardamoms, cinnamon ๐Ÿ˜

๐Ÿ‘ฉ๐Ÿปโ€๐Ÿ”ฌ Recipe: (serves 4) .
.
2 large sweet potatoes ๐Ÿ  - chopped into approx 2cm chunks
300gms frozen peas
1 red onion - finely chopped 
1 teaspoon oil 
1 cinnamon stick
5 Black cardamoms 
4 cloves garlic - minced
4cm chunk ginger - minced 
1 Teaspoon cumin seeds 
1- 2 teaspoons turmeric
1 teaspoon ground coriander powder
1-2 teaspoons garam masala  1 tin chopped tomatoes ๐Ÿฅซ 
1 large handful coriander - finely chopped 
1-2 chillis - optional .

Fry the red onion in the oil.  Add the cinnamon stick, black cardamoms & cumin seeds.  When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2๐ŸŒถ if you like it spicy. 
Stir for a couple of minutes & add the sweet potato cubes...
Next, add a tin of tomatoโ€™s, 1/2 pint of water, the spices & a handful of chopped coriander. 
Simmer with a lid on the pan for about 10 minutes until the ๐Ÿ  is almost cooked 
Finally add in the frozen peas and cook for a further 5-10 minutes
Finally, remove the lid & cook away some of the water until you have your desired consistency.  Enjoy with rice or naan or chapattis ๐Ÿ˜‹

๐Ÿ‘ฉ๐Ÿปโ€โš•๏ธThese protein balls are made of nuts, seeds & dates with no refined sugar. (I also have a nut free version further down my feed if you're allergic ๐Ÿ˜˜). They are full of healthy nutrients, minerals, omega3, fibre to keep our guys healthy and protein... building blocks for healthy adults and growing children ๐Ÿ˜‹
But most importantly- they taste delicious which is what really counts! ๐Ÿ™Œ๐Ÿฝ

180 grams juicy medjool dates
6 tablespoons ground linseeds
6 tablespoons ground pumpkin seeds
6 tablespoons ground sunflower seeds ๐ŸŒป 
4 tablespoons of cacao powder
4 tablespoons cashew butter 
250 grams nuts (I used  cashews & walnuts)
I blitzed all the ingredients together in a food processor & handshaped small balls.  I rolled these in some edible glitter to make โ€˜baubles!โ€™

๐Ÿ‘ฉ๐Ÿปโ€โš•๏ธ I often get asked about vegan ๐ŸŒฑ sources of protein from my vegan/vegetarian patients.  Did you know edamame contain 11gms of protein per 100gms?  I particularly love this edamame fettuccine too by @loveliberto.  Itโ€™s vegan ๐ŸŒฑ, #glutenfree & packs in 44gms of protein per 100gms ๐ŸŒฑ๐Ÿ™Œ๐Ÿฝ
Edamame are one of the few plant based sources of โ€˜complete proteinโ€™ meaning they contains all 9 essential amino acids your body needs.  They are also low GI, low fat and high in fibre - great for gut health.  Edamame are a good source of vitamin C, B, E & folate as well as containing calcium, iron, magnesium, potassium, sodium, zinc & copper.

๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ So hereโ€™s a recipe that packs in > 30gms vegan protein per portion! (Serves 4)

200gms edamame fettuccini @loveliberto 
Pesto:
Handful cashew or pine nuts 
2 cloves garlic
3cm chunk parmesan (omit if vegan) more to serve
30gms/1 handful fresh basil leaves 
300gms edamame (100gms for pesto, rest for topping)
6 tablespoons EVOO
Salt to taste
Chilli to taste & sprinkle on top

Method:
Add all the pesto ingredients into a blender and blend until smooth.  Add a bit more olive oil if needed. 
Cook the fettuccini, edamame pasta cooks very quickly. It only needs 1-2 minutes in boiling water. 
Once cooked, stir in the pesto. 
Top with freshly grated Parmesan, the rest of the edamame beans and chopped chilli ๐ŸŒถ .

Simply roasted in the oven with a drizzle of oil & served with a pistachio & basil gremolata ๐Ÿ’š

Before you think I have the worlds best eating children... the fact that the cauliflower was purple did not persuade them to eat it ๐Ÿคฃ ....
However, they were so distracted at not eating the offending vegetable (they donโ€™t like cauliflower) they didnโ€™t realise they had gobbled down all the mashed โ€˜potatoโ€™ that was actually 1/2 prebiotic fibre rich celeriac ๐Ÿ™Œ๐Ÿฝ

Who says healthy food canโ€™t be fun? 
A great way of getting extra veggies into children - colourful ๐ŸŒˆ  vegetables make great pizza-tree decorations ๐ŸŒฝ๐Ÿ…๐Ÿฅ•๐Ÿฅ’๐Ÿฅฆ
I always put lots of veggies on our homemade pizzas & hide them all underneath the cheese ๐Ÿง€๐Ÿ˜‡

๐Ÿ‘ฉ๐Ÿปโ€โš•๏ธ Iโ€™m all for eating a varied and healthy diet, everything in moderation.  I also love to try & make healthier versions of food we love if possible.  For example, Iโ€™ve used wholemeal flour for the base with a little quinoa flour too.  Homemade pesto for the sauce & lots of veggies.  You really can use any veggies on a pizza in my opinion ๐Ÿ˜‹

Pizza base pizza ๐Ÿ• (Makes 4 thin crust ๐Ÿ˜‹)

400gms wholemeal bread flour
100gms quinoa flour
2 tablespoons olive oil
7gms fast action yeast sachet
1 tablespoon sugar
1/4 teaspoon salt 
250mls warm water ๐Ÿ’ฆ .

Add the olive oil to the water and pour it into the the well.  Slowly mix all the flour and water together to form a dough.  Cover with a damp cloth and leave to rise in a warm place (I put it near a radiator). It will double so use a large bowl.
If youโ€™re in a rush I have used the dough straight away too and itโ€™s still good ๐Ÿ‘Œ๐Ÿผ

Oats feature in our breakfast almost every day. ๐Ÿ˜‹  If not in the form of porridge then in a quick smoothie (usually oats, milk ๐Ÿฅ›, cashew butter & fruit of choice) to accompany breakfast ... If you have no time to prepare a smoothie or porridge - just soak all the ingredients overnight and itโ€™s ready in the morning ๐Ÿ™Œ๐Ÿฝ #overnightoats .

๐Ÿ‘ฉ๐Ÿปโ€โš•๏ธ Why oats? Oats are a delicious gluten free whole grain perfect for slow release energy throughout the morning (the are low GI so avoid sugar spikes). Oats are a great source of prebiotic fibre to keep our gut microbiome healthy and can also help to reduce cholesterol.
Fibre rich oats can help with constipation.
They are nutrient rich & super cheap so why not add them to your breakfast ๐Ÿ™Œ๐Ÿฝ

A little bit of coconut ๐Ÿฅฅ sugar @thegroovyfoodcompany or ๐Ÿฏ @pearlyqueenhoney if you like it sweet

60gms butter
40gms coconut sugar ๐Ÿฅฅ @thegroovyfoodcompany 
50gms gluten free flour @dovesfarm 
75gms rolled oats - ground @quakeroatsuk 
1 tsp cinnamon 
1/2 tsp baking powder 
Pinch salt

Cream the butter & the sugar.  Then add all the dry ingredients.  Form a dough kneading with your hands.
Next roll into small balls &  flatten them in the baking tray or roll into a sheet about 1-2 Cm thick & use a cookie cutter.
Bake @160โ€™c for about 15 minutes

๐Ÿ‘ฉ๐Ÿปโ€โš•๏ธ Pumpkin ๐ŸŽƒ is a great low calorie vegetable that packs in 3gms fibre in just one cup of mashed pumpkin great for keeping our gut healthy ๐Ÿ™Œ๐Ÿฝ. Pumpkin is a great source of potassium and beta-carotene which is important for eye health. ๐Ÿ‘€  It also contains calcium & magnesium, as well as vitamins E, C & some B vitamins.

๐Ÿ‘ฉ๐Ÿปโ€๐Ÿ”ฌ Recipe: (serves 4)

2 teaspoons cumin seeds
1 tablespoon olive oil
1 red onion - finely chopped
4-5 cloves garlic - finely chopped
2 medium sized sweet potatoes ๐Ÿ  (about 250gms) - peeled and roughly chopped
Roughly same amount of pumpkin flesh - roughly chopped (about 1 mini pumpkin) ๐ŸŽƒ (I just roasted a small one as seen and scooped out the flesh to use and kept the shell for a bowl )
1 pint fresh vegetable stock/ or cube - I use @saykallo low salt veg cube
Juice of 1/2 a lime - more to taste
1/2 teaspoon smoked paprika
1 red chilli ๐ŸŒถ (optional)
Salt & pepper to taste
Pumpkin seeds tossed in a little olive oil with a pinch of garlic salt, chilli powder & smoked paprika to sprinkle on top - optional .
Fry the onion, cumin, garlic in olive oil until soft. Then add all the other ingredients, cover in vegetable stock (add extra water if needed) and simmer for about 30 mins. Once fully cooked blend to smooth and sprinkle with the toasted pumpkin seeds, paprika & serve with a slice of crusty sourdough ๐Ÿฅ– from @gailsbakery

Both the boys decided this Is their favourite soup EVER! ๐Ÿ™Œ๐Ÿฝ (I suspect itโ€™s something to do with the pumpkin bowls ๐ŸŽƒ but itโ€™s still a win for veggies ๐Ÿ™Œ๐Ÿฝ) . . . ๐Ÿ‘ฉ๐Ÿปโ€โš•๏ธ Pumpkin ๐ŸŽƒ is a great low calorie vegetable that packs in 3gms fibre in just one cup of mashed pumpkin great for keeping our gut healthy ๐Ÿ™Œ๐Ÿฝ. Pumpkin is a great source of potassium and beta-carotene which is important for eye health. ๐Ÿ‘€ It also contains calcium & magnesium, as well as vitamins E, C & some B vitamins. . . . ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿ”ฌ Recipe: (serves 4) . 2 teaspoons cumin seeds 1 tablespoon olive oil 1 red onion - finely chopped 4-5 cloves garlic - finely chopped 2 medium sized sweet potatoes ๐Ÿ  (about 250gms) - peeled and roughly chopped Roughly same amount of pumpkin flesh - roughly chopped (about 1 mini pumpkin) ๐ŸŽƒ (I just roasted a small one as seen and scooped out the flesh to use and kept the shell for a bowl ) 1 pint fresh vegetable stock/ or cube - I use @saykallo low salt veg cube Juice of 1/2 a lime - more to taste 1/2 teaspoon smoked paprika 1 red chilli ๐ŸŒถ (optional) Salt & pepper to taste Pumpkin seeds tossed in a little olive oil with a pinch of garlic salt, chilli powder & smoked paprika to sprinkle on top - optional . Fry the onion, cumin, garlic in olive oil until soft. Then add all the other ingredients, cover in vegetable stock (add extra water if needed) and simmer for about 30 mins. โ›„๏ธ So I spoke a little bit about my journey into medical school... what inspired me to be a doctor & also what I do on an average day... some questions... some interest...

โ›„๏ธ Then I mentioned how diverse a career in medicine can really be.... how you can totally shape your career to whatever you want it to be.

This is quick & easy to prepare in advance and can be left in the fridge ready to pop into the oven when youโ€™re ready.  My children love it (although my eldest does pick out the ๐Ÿ…๐Ÿ™„)
You could even stuff in some fresh baby spinach leaves ๐ŸŒฟ .
. ๐ŸŒฑ Vegetarian ๐ŸŒฑ try stuffing an aubergine ๐Ÿ† instead - just roast it for a little longer until itโ€™s soft and cooked ๐Ÿ˜‹

The base is made from my protein balls recipe and instead of rolling into balls, Iโ€™ve pressed it into some pie moulds ๐Ÿ™Œ๐Ÿผ
180 grams juicy medjool dates
6 tablespoons ground linseeds
6 tablespoons ground pumpkin seeds
6 tablespoons ground sunflower seeds ๐ŸŒป 
4 tablespoons of cacao powder
250 grams ground nuts (I used almonds, cashews, pecans today)
100gms cashew butter @meridianfoods 
I blitzed all the ingredients together in my nutrininja @ninjakitchenuk until they start to come together & pressed it into the mould to set.
๐Ÿ‘ฉ๐Ÿปโ€๐Ÿ”ฌtop tip - pop in the freezer before popping out of mould for perfect shapes.

The topping is simply the flesh of 3 baked sweet potatoes ๐Ÿ  mashed with with 3 tablespoons maple syrup, 3 tablespoons of coconut ๐Ÿฅฅ butter ( I used @bionaorganic), 1/2 teaspoon of cinnamon and a little freshly grated nutmeg.  Top with chopped pecans & rose petals ๐ŸŒนDelicious ๐Ÿ˜‹

Iโ€™ve used the rest of my roasted squash from yesterday (any squash would work for this - itโ€™s so quick and easy to prepare a large batch of it in the oven - simply slice, drizzle with olive oil, sprinkle of salt & smoked paprika and roast until ready)
For the salad base Iโ€™ve stir fried 2 packs of @waitroseandpartners wheatberries, lentils & green veg mix in a little olive oil.  This is such a great quick & easy mix with no nasties & tastes delicious! 
Layer the squash slices on the base
Add a sprinkle of pomegranate seeds, @good4unutrition super sprouts & sesame seeds 
Dressing: 2 tablespoons EVOO, 2 tablespoons pomegranate molasses, a squeeze of lime and salt & pepper to taste.

Iโ€™ve used the rest of my roasted squash from yesterday (any squash would work for this - itโ€™s so quick and easy to prepare a large batch of it in the oven - simply slice, drizzle with olive oil, sprinkle of salt & smoked paprika and roast until ready) For the salad base Iโ€™ve stir fried 2 packs of @waitroseandpartners wheatberries, lentils & green veg mix in a little olive oil. This is such a great quick & easy mix with no nasties & tastes delicious! Layer the squash slices on the base Add a sprinkle of pomegranate seeds, @good4unutrition super sprouts & sesame seeds Dressing: 2 tablespoons EVOO, 2 tablespoons pomegranate molasses, a squeeze of lime and salt & pepper to taste.
