150gm ground almonds or almond flour - I used @daylesfordfarm 
4 large eggs πŸ₯š 
50 mls milk of choice πŸ₯› 
1 teaspoon vanilla extract
1/2 teaspoon baking powder 
1 tablespoon honey 🍯 (optional)

Mix all the ingredients together to form a thick batter.  Pan fry small pancakes in a little coconut oil 🌴
I’ve drizzled with my homemade chocolate 🍫 sauce (recipe further down) , more almonds @crazyjackorganic and some edible rose petals 🌹 .

What’s your comfort food?
My ultimate comfort food is... A big bowl of spicy Dhal... 😍
I could literally eat bowls of it... in fact when I make dhal... I make a HUGE pot of it & let it simmer for as long as possible... I’ll make enough for that day, some for the fridge for tomorrow (it always tastes better the next day πŸ‘ŒπŸ½) & at least 3-4 portions for the freezer...So all that effort cooking isn’t wasted... πŸ™ŒπŸ½

Tonight we are out for dinner so I’ve defrosted this from the freezer for my children πŸ‘¦πŸ»πŸ‘¦πŸ» & thrown in some sautΓ©ed cavolo Nero (as I had some in the fridge to use up)...

πŸ’— It’s #breastcancerawarenessmonth so I wanted to share some information from nhs.uk: How to be β€˜breast aware’ . πŸ’—This is a topic that is close to my heart as my mother was diagnosed with breast cancer at the age of 39 & as a result I am considered β€˜high risk’ and undergo annual screening.
πŸ’—Every woman's breasts are different in terms of size, shape and consistency. It's also possible for one breast to be larger than the other.
πŸ’— Get used to how your breasts feel at different times of the month. This can change during your menstrual cycle. For example, some women have tender and lumpy breasts, especially near the armpit, around the time of their period.
πŸ’—After the menopause, normal breasts feel softer, less firm and not as lumpy.
πŸ’— The NHS Breast Screening Programme has produced a 5-point plan for being breast aware:
β–ͺ️know what's normal for you β–ͺ️look at your breasts and feel them β–ͺ️know what changes to look for β–ͺ️report any changes without delay β–ͺ️attend routine screening if you're 50 or over πŸ’— Look at your breasts and feel each breast and armpit, and up to your collarbone. Roast the veggies in some olive oil, garlic, salt and pepper until soft and almost caramelising - that’s how I like them!  I’ve used a small butternut squash, some beetroots & a couple of sweet potatoes 🍠 
For the kale I simply sautΓ©ed 250gms it in a pan with a tiny sprinkle of water πŸ’¦ & 2 cloves of garlic. 
Plate up the kale with some of the roast veggies (save the rest for tmw) and add what ever you fancy.  In my case, avocado πŸ₯‘ carrots πŸ₯• pomegranate, pumpkin πŸŽƒ seeds, sesame seeds, red onion.
Drizzle with a dressing made from: 2 tablespoons EVOO, 2 tablespoons pomegranate molasses, a squeeze of lime and salt & pepper to taste.

πŸ‘©πŸ»β€πŸ³ Here’s a vegan 🌱 option for Sunday roast... I’ve seen so many beautiful varieties of squash in the supermarkets at the moment so why not roast one?
Here’s my spicy nutty πŸ₯œ, mushroom πŸ„ mix stuffed into a beautiful roast squash... sprinkled with pomegranate jewels πŸ’Ž & coriander.
Serve with a drizzle of tahini dressing 😍
Happy Sunday everyone - it’s wet & raining in London today but we enjoying an afternoon of Garba πŸ’ƒπŸ½πŸ’•πŸ’•πŸ’•

πŸ‘©πŸ»β€βš•οΈ Squash - one of your portions of vegetables, a great source of fibre as well as vitamins A, C, E and B.  Combined with all the nuts and garlicky mushrooms this is fantastic vegan 🌱 option for a Sunday roast or a perfect starter for everyone! .

πŸ‘©πŸ»β€πŸ”¬ Recipe: (serves 2-4)
.
2 squash - about 1kg size
1 tablespoon olive oil (& more to drizzle)
4 cloves garlic - finely chopped 
1 teaspoon cumin seeds
1-2 chillis 🌢 
1 red onion - finely chopped
2 Handfuls of nuts (I used chopped pistachios & walnuts, chestnuts 🌰 & flaked almonds)
300gms Shitake & chestnut mushrooms - finely chopped
Salt & pepper to taste
Coriander 🌿 & pomegranate to serve.

First, slice the top and scoop out the seeds from the squash.  Drizzle it in olive oil, sprinkle salt to taste and roast for 30- 40mins at 180’ until soft inside.
Whilst that’s roasting make the mushroom mix:
SautΓ© the onions and garlic in the olive oil.  Add the cumin, chilli, mushrooms, salt & pepper and cook well. Finally add the chopped nuts.
Stuff the squash with the mushroom & Nut πŸ₯œ mix & bake for a further 10-15 mins.
Sprinkle with coriander & pomegranate & drizzle with a tahini dressing (recipe further down my page) to serve. Enjoy! πŸ˜‹

Sweet potato 🍠 β€˜toast’... simply slice the sweet potato into approx 1 cm slices, lay flat on a baking tray and pop in the oven at 180’C for 40mins, flipping half way πŸ™ŒπŸ½. You might need a little longer depending on the thickness of your toasts... just keep checking after 30mins until they are cooked.  You can also brush with a little olive oil before baking - optional .

πŸ‘©πŸ»β€πŸ³ I fancied a change to our usual miso aubergine today and had some of these gorgeous little courgettes in the fridge so came up with this for our part of our Chinese meal tonight ... Courgettes with a garlicky fermented (gut friendly πŸ™ŒπŸ½) black bean paste - Roasted in the oven. 
Sprinkle on some chopped spring onions & chilli 🌢 & serve with veggie noodles (see previous post )

I just scored the courgettes in a cross cross pattern (looks pretty & also means the sauce goes into the little pockets making it taste better πŸ˜‹).
Next using a pastry brush just brush the courgettes with a little sesame oil. 
Finally spread on a thin smear of @leekumkeeusa garlic black bean sauce!
Totally cheated with the sauce today but I’m working on a black bean recipe using fermented black beans to make my own version so watch this space... recipe coming up soon - I just wasn’t happy with it today to share! πŸ’πŸ»β€β™€οΈ

1 large raw beetroot - finely chopped
1/2 a finely chopped red onion
1 tin organic black beans @mrorganic
3 tablespoons walnuts 
2 tablespoons pumpkin seeds
2 tablespoons pine nut kernels
1/2 teaspoon smoked paprika
1 teaspoon of ground toasted cumin
2 cloves fresh garlic - minced
salt to taste
Pulse all above in a food processor for a few seconds. You want to break the ingredients but not mash them fully to keep some crunch.
Form into burger shapes & bake in oven for 25 minutes at 200 degrees. πŸ˜‹

100gms frozen spinach - defrosted &purΓ©ed
3 ripe bananas 🍌 mashed
250gms oat flour (or I just ground rolled porridge oats myself)
3 eggs
100gms butter/coconut oil of dairy free
2 teaspoons baking powder
100gms dark chocolate 🍫 @lindtuk - roughly broken into small chunks

First whisk up the butter or oil.
Next, add one egg, 1/3 of the banana mix & 1/3 of the ground oats. Mix well and stir in the spinach.
Repeat with the second egg, 1/3 banana mix,& 1/3 oats and finally the third egg, rest of banana mix, oats, baking powder and mix well.
Finally, stir in the chocolate chunks
Pour into a 20 x 20cm square pan
Sprinkle with oats to decorate and a sliced 🍌
Bake in a preheated oven @180’C for about 30 minutes or until a knife comes out clean πŸ‘ŒπŸ½

2 Ripe Avocados πŸ₯‘ 
2 tablespoons honey or agave nectar @thegroovyfoodcompany 
Zest of a whole lime and juice of 1/2
Blend/mash all ingredients together - that’s it. Simple!
EDIT:  just added 2 tablespoons coconut πŸ₯₯ cream to this - so delicious πŸ˜‹ .
For the nutty protein topping - I used my protein ball mix - here’s the recipe for 20 protein balls - you can make a few less and use it for the topping or just crumble on an Oreo cookie! πŸͺ .
180 grams juicy medjool dates
6 tablespoons ground linseeds
6 tablespoons ground pumpkin seeds
6 tablespoons ground sunflower seeds 🌻 
4 tablespoons of cacao powder
1 tablespoon of coconut oil 
250 grams ground nuts (I used almonds, cashews, walnuts)

Kids definitely eat with their eyes... so sometimes making food fun might just get them willing to try new flavours...🀞🏽 . . . πŸ‘©πŸ»β€πŸ”¬ Recipe: (makes 6 little cups) . 2 Ripe Avocados πŸ₯‘ 2 tablespoons honey or agave nectar @thegroovyfoodcompany Zest of a whole lime and juice of 1/2 Blend/mash all ingredients together - that’s it. Simple! EDIT: just added 2 tablespoons coconut πŸ₯₯ cream to this - so delicious πŸ˜‹ . πŸ‘©πŸ»β€βš•οΈ Pumpkin πŸŽƒ is a great low calorie vegetable that packs in 3gms fibre in just one cup of mashed pumpkin.  Pumpkin is a great source of potassium and beta-carotene which is important for eye health. πŸ‘€  It also contains calcium & magnesium, as well as vitamins E, C & some B vitamins.

πŸ‘©πŸ»β€πŸ”¬ Recipe: (serves 4)

2 teaspoons cumin seeds
1 tablespoon olive oil
1 red onion - finely chopped
4-5 cloves garlic - finely chopped
2 medium sized sweet potatoes 🍠 (about 250gms) - peeled and roughly chopped
Roughly same amount of pumpkin flesh - roughly chopped (about 1 mini pumpkin) πŸŽƒ (I just roasted a small one as seen and scooped out the flesh to use and kept the shell for a bowl )
1 pint fresh vegetable stock/ or cube - I use @saykallo low salt veg cube
Juice of 1/2 a lime - more to taste
1/2 teaspoon smoked paprika
1 red chilli 🌢 (optional)
Salt & pepper to taste
Pumpkin seeds tossed in a little olive oil with a pinch of garlic salt, chilli powder & smoked paprika to sprinkle on top - optional .
Fry the onion, cumin, garlic in olive oil until soft. Then add all the other ingredients, cover in vegetable stock (add extra water if needed) and simmer for about 30 mins. Once fully cooked blend to smooth and sprinkle with the toasted pumpkin seeds, paprika & serve with a slice of crusty sourdough πŸ₯– from @gailsbakery

I’m starting the week as I mean to go on by getting my veggies in early πŸ™ŒπŸ½. Today’s post workout πŸ‹πŸ»β€β™€οΈ breakfast is some quick sautΓ©ed cavolonero with a little red onion & garlic, I added half a tin of butter beans, a sprinkle of smoked paprika & sliced red chilli 🌢 
Next, I cracked in 2 eggs 🍳 ... β€˜one pan breakfast’ done βœ… (Eat it out of the pan and save on washing up too πŸ˜‰)
Served with a slice of toasted sourdough to dip into those yolks 😍 
Now I’m ready for what ever Monday throws at me πŸ‘ŠπŸ½

BEETROOT & APPLE CHUNDO 🍏

This delivery from my mum this morning was too good not to share the recipe... beetroot & apple chundo πŸ˜‹ (basically a sweet & spicy indian chutney usually made with mango) 
Mum had lots of beetroot & apples growing in the garden so came up with this version to use them up & it’s absolutely delicious!!
Eat it with Thepla, (recipe coming up)
paratha, as an accompaniment to any curry or why not spice up your cheese & pickle sandwich? πŸ₯ͺ

2 Apples - grated
1 raw beetroot - grated
1cm chunk ginger grated
2 tablespoons sugar 
1 stick of cinnamon
4 cloves
1/2 teaspoon garam masala
1 teaspoon cumin seeds
1 teaspoon olive oil .
.
In a saucepan temper the oil, cloves, cumin seeds and cinnamon for a minute.  Next add all the other ingredients and cook on a high heat to melt the sugar for about 5 minutes until the sugar melts.
Spoon into a clean jar and store in the fridge.
