I baked Paleo chocolate chip cookies the other night for guests and saved half the dough to bake more later.
They don’t sell chocolate chips here so I cut up a small dark chocolate (xylitol sweetened) bar.
I milled my own flour from blanched almonds by running them through the food processor.
I mixed 2 cups of almond flour with 1 Tbs honey, an egg, 1/3 cup of #butter & coconut oil, a pinch of salt, chopped chocolate chunks, and 1/2 tsp of vanilla powder brought from home.
Mixed with a fork in a bowl, 1 TBs sized dollops on parchment paper ( spread far apart) and baked at 350 in a preheated oven for 9 minutes.
Fresh baked cookies are soul warming and the dough freezes and stores well in the fridge. For a low FODMAP version use Macadamia nuts instead of almonds.
Nuts are pricey here so these are a rare treat.

Yesterday I did a Pilates class, a hatha yoga class, a yoga workshop, got a massage, walked 5 miles, went to a Spanish conversation event and then went out afterwards.
I definitely did too much (I’m tired today) but in San Francisco my biggest complaint was lack of energy. I didn’t have the energy to exercise and couldn’t figure out why.
In Buenos Aires I don’t eat as well as I used to. More sugar, carbs, occasional gluten and cocktails, but my energy has returned.
In SF I filled my time with work and taking care of my health (yogic meditation, chi gong, super clean eating, acupuncture, sauna). But here I challenge myself with practicing Spanish and Pilates, making new friends and having new experiences.
Everything is a new, exciting discovery and I’m pushing myself out of my comfort zone. I am happier than I’ve been in a long time and that’s why I don’t have to be as careful with diet.
Don’t get me wrong, I still like to cook and eat healthy, it’s just not the center of my life anymore. I’m growing and experiencing life fully.
It was super stressful to move here. I resisted the change, but discovered something magical in the process.
I have energy now. Even if I tend to over do it.
It proves to me what I already know. Health is closely linked to mind set (how you feel about yourself and your life). Something I care deeply about but don’t mention often is my love of sustainability and detox living. I try to minimize the use of plastic in my life due to its estrogenic effects and harm to the planet. I used glass Tupperware in the states but it’s expensive here.
So my solution is to reuse the glass jars that my coconut oil and marinara come in. Works great for storing chicken broth and whey from making Greek yogurt. And leftovers. You can use whey to ferment veggies, add to smoothies for extra protein or pour on dog food. I use broth to make soup, stews and rice. Our resources are precious. Food is an important part of healing and staying healthy but not everything. The body is connected to the mind. Your mental, emotional and spiritual health will affect how you feel physically.
Stress is unavoidable but you can learn to release that tension so it does not effect your body/gut. My chi gong practice does that for me. And provides community, which boosts my immune system.
Moving abroad was a huge stressor. I felt lost and disconnected from my community. My digestive health started suffering.
I found a chi gong class, plugged into a community and feel the benefits of my twice a week practice. This is a vital part of my self care. Figuring out a healthy diet in Argentina was pretty stressful at first. They love their sugar, gluten, gelato, processed foods and pasta here. Not much of a market for Paleo foods.
Even without my favorite products, I figured it out.
I made my own dog food, dog treats, cashew milk, bone broth, mayo, granola and almond flour. The one thing I haven’t been able to find is Greek Yogurt.
My favorite thick, full fat yogurt from home was @peakyogurt , which was locally available. Now they ship nationwide but not to Argentina 😢
So time to make my own. I bought a nut milk bag and am going to strain some regular yogurt. I have also have an instant pot so maybe I’ll make my own too...Living here has brought new meaning to DIY health. Blissed out yesterday with a much needed self-care day. A massage and then hanging at the spa with a friend. There was an outdoor heated pool, sauna and steam room and we had the place to ourselves.
Decompressed from the over stimulation of city life, drinking in the sunshine and eating a healthy gourmet lunch of sole over pumpkin terrine. Felt like a baller but the whole experience cost me $60. Whaaa?? They may overcharge you here for nut butter and coconut water but spa days are more than affordable. Sometimes I like to make fried rice (with cauliflower or regular rice) and sometimes I like to keep the ingredients separate. When I cook I am completely guided by my intuition and listen to that voice without question or doubt. Weird fact is that I never taste my food as I am cooking it. I am listening to a sense that is more powerful than taste. And this really works for me. This deep connection to my intuition happens most clearly in my kitchen. Perhaps that’s why I love to cook so much. This is a space when I am so deeply connected. Anxiety, doubt and overthinking never enter my culinary world. And that feels like joy and freedom. Yesterday was a gorgeous day so we took an afternoon walk to @freakinsushi for their gluten free “sushi burgers” and sat on their gorgeous terrace.
I don’t know what they did with that bun shaped rice to keep it from falling apart but it held its shape perfectly. What a delicious gimmick! My “burger” filling was salmon and avocado with a side of garlic mayo. I skipped the mango and cream cheese it came with. Didn’t need it.
Salmon was fresh and had it with a side of batata chips (similar to a sweet potato). Best part was that they were dog friendly so the pup could join us. And lunch cost us $10! We will be back!
It was a round trip walk of an hour and a half so we got our exercise too! Would anybody be interested in a post on all the gluten free restaurants and bakeries in Buenos Aires? There are so many. A great traveling option for celiacs! So much awareness here. These meat balls are made possible by @danicaliforn1a who kindly brought me unbleached parchment paper from the U.S. They have a horrible version of parchment paper here that is not waxy at all, tends to burn and is full of bleach! This is a huge move towards detoxing my life here, which had generally been my biggest challenge. But doing the best I can by asking friends and family to bring my natural products when they come from the states! And now I get to eat bleach-free meatballs!!
