Last night I was treated to an amazing culinary adventure. The first people we met in Buenos Aires are the owners of an amazing restaurant called 13 Fronteras. They drove a pick up truck through 13 borders from the states to Argentina because their short nosed pups could not safely fly down with them. Last night, they hosted the most adventurous 12 course meal of my life. The highlights were the “rabbit in its elements” course featuring “earth” made from fennel and cocoa and carrot gelato. This dinosaur egg was made of frozen coconut milk filled with shrimp and consomé. A lemon verbena popsicle served in a mate cup cleansed our palate. There was a lemongrass pana cotta paired with fish, and cheesecake ceviche with homemade pop rocks. When we arrived we were greeted by a wall of giant potato “chips”. Most of the dishes were gluten free and as imaginative as they were delicious! I’m definitely getting by kitchen groove back. I met some Paleo peeps who have inspired me to get back to my cooking roots. I let my diet slide the first month I was here and really felt the difference. Eating clean makes me feel so much better. Just real, whole food ingredients made from scratch. Like these sweet potato tuna cakes. I had to make some substitutions though. They don’t have sweet potatoes here so these are made with batata. I baked them extra long to make them a bit crispy on the edges. I finally made my own “human grade” dog food from puréed chicken, salmon, liver, veggies, broth, pumpkin seeds and raw beef. It was a lot of work, but I made a huge bowl of it and froze it into little “pucks” using the silicon muffin tin I brought from the states. I made 24 pucks, which should last 3 weeks. And the dog loved it. Feeding him pure cuts of beef just wasn’t working for his belly so I tried to recreate the dog food he grew up on @stellaandchewys surf and turf formula. I don’t have any plants in my new apartment, which is unusual for me. Plants and trees make me happy. I’m going to remedy that soon but in the meantime I’m getting my fix of greenery from herbs and sprouts. Parsley (one of my superfoods) makes a beautiful center piece, along with some broccoli sprouts and cilantro. We had a traditional Argentinian BBQ on our balcony under the sun while our Argentine guests took over the parilla (grill). The beef was amazing but the runny egg in a grilled red pepper was the star of show( swipe to see it). We had American-style sweet potatoes, grilled veggies and homemade Paleo rolls with a #Paleo dessert made with avocado and chocolate. I also made ribs in my instant pot. It may be no big deal to most of you, but my new apartment comes with a blender and I managed to find arugula and frozen blueberries and make my own cashew milk. The result was my favorite green smoothie for breakfast. It was sooo good. Don’t take things like easy access to berries, greens and blenders for granted. Not everyone has this. I may inadvertently be turning into an Argentinian. Two nights in a row I ate a late-night beef dinner at home. Two nights ago, steak and brussels sprouts at 10 pm and last night this delish wagyu burger, cooked very rare, wrapped in lettuce and topped with a fried egg instead of my usual cheese.
I’ve been off dairy since Saturday and it’s not easy. I have to substitute so I don’t miss it. The egg gave this burger the creamy mouth feel of cheese. I waited 3 hours before going to bed to let my body digest. I’m not a fan of eating late (not great for digestion and detox during sleep) but somehow this happened. I sleep later here also. I don’t have access to all my usual supplements here in Argentina so the only medicine I have is food. Immune system health comes from gut health. Food is medicine for the gut.
Two days ago I fought off the flu that came on with the typical warning signs of severe body aches and chills. I didn’t have my elderberry supplements which are best at fighting viruses.
But I’ve been eating super clean to support and heal my immune system after the mold exposure, upping my fruits and veggies.
To help my system fight I diffused some frankincense and Thieves essential oils and tried to get as much sleep and rest as possible. The next day my body fought off the viral exposure. No supplements needed.
I was tired yesterday but took the rest I needed. By the end of the day I had the energy to walk my dog and go to chi gong class. Preventative medicine means taking care of yourself and our amazing bodies do the rest. So someone is acclimating to Argentina beautifully! He loves the local dogs here and has been learning how to tango with some of the female dogs on the block. This is the kitchen I used for over a month in an apartment that was quite moldy. I spend a lot of time in the kitchen and this was depressing. Dark (like the rest of the apartment and bad fluorescent lighting). For highly sensitive types this is a big deal. A combo of the lack of light, lack of comfort and a moldy bedroom has done a number on my immune system and I’m trying to build it back up right now. Swipe to see my bright, clean new kitchen. We moved apartments on Friday and this was the first meal we had in our new place on our balcony. Lamb burgers cooked rare over salad. My husband had a gluten-free bagel bun and I ate mine naked. I’m starting a 2 week dairy cleanse today. I seem to tolerate dairy but I always like to test my tolerance by removing it for a while and adding it back in. When you eat a lot of something your body adjusts and won’t necessarily send you a distress signal but it may still cause silent inflammation. To get an accurate picture of tolerance I suggest removing the food for two to four weeks and then add it back in. Dairy is the food that I am most addicted to which makes me wonder about my body’s relationship with it. For some odd reason, we can be most addicted to the foods that also inflame us. Not always the case of course, but fairly common. So wish me luck...I am preparing by replacing my favorite dairy products with nut and coconut substitutes.
