There's couscous under the somewhere ๐Ÿ˜‰ Recipe inspo this week came from #halfbakedharvest ! Chicken Shawarma and Sweet Potato Fry bowls ๐Ÿ˜
RECIPE:
2 pounds boneless skinless chicken breasts, cut into bite size chunks
1 tablespoon honey
2 teaspoons paprika
2 teaspoons cumin
2 teaspoons kosher salt and pepper
juice of 2 lemons
4 cloves garlic, minced or grated
pinch of crushed red pepper flakes
5 tablespoons olive oil
2 sweet potatoes, cut into matchsticks
1 bunch asparagus, ends trimmed
4 cups cooked couscous or quinoa
1/2 cup pitted kalamata olives and oil packed sun-dried tomatoes, oil drained
crumbled goat cheese 
GARLIC TAHINI YOGURT
1 cup plain greek yogurt
2 tablespoons tahini
1-2 cloves garlic, minced or grated
juice of 1/2 a lemon
1 tablespoon chopped fresh mint 
DIRECTIONS: in a zip top bag, combine chicken, paprika, cumin, salt, pepper, lemon juice, garlic, red pepper flakes, and 2T olive oil. Toss to combine. Seal and marinate for 1-12 hours. Preheat oven to 425F. Place sweet potatoes on a large baking sheet and toss with 2T olive oil, salt, and pepper. Transfer to oven, cook for 15-20 min then flip and cook another 15-20 min. Place the marinated chicken in the oven for 20 min or until cooked through. Divide the couscous, and arrange all the ingredients on top, or assemble when ready to eat. Remember to top it with the yummy tahini sauce! Itโ€™ll all keep in the fridge for about a week!

So many flavor combinations, so little time!! I pride myself in keeping my family entertained with a variety of flavor profiles! I get bored of the same flavors, so easily...I NEED flavorful food. I think it's all that Lebanese blood in me! ๐Ÿ˜€ This specific concoction is for a chicken shawarma marinade, mixed with EVOO, lemon juice and fresh garlic! I love letting it marinate overnight to really soak in all the herbs and spices. What's your favorite combination? Iโ€™ll be completely honest with you guys, I had a reeaalllyyy rough time with this growing up. Being hardcore bullied, gossiped about, and having super low self esteem created a whirlwind of negative chaos in my head, which then spilled out into my actual life.
โ€œIโ€™m not equipped with the knowledge to do this.โ€
โ€œI know I should speak up but I just canโ€™tโ€
โ€œI wish I could stand up for myself but Iโ€™m not strong enoughโ€ -
Our belief system is made up of ALL the thoughts we tell ourselves - on a conscious and subconscious level. Why do we continue to self sabotage with these degrading thoughts? Maybe because society says we are only good enough when (fill in the blank). ๐Ÿ™„

So how do we develop positive internal dialogue? Before you can manage your internal dialogue, you first need to become more aware of it. I have been consistently meditating for about a year now and I believe this has played a huge role in helping me recognize my less-than-uplifting self talk. Another way of recognizing when we have these toxic thoughts is to literally tell yourself โ€œ I wonder what my next thought is going to beโ€ and watch it as it comes. -
Oh and one more thing, please๐Ÿ’œ... be gentle with yourself throughout this process of awakening. There are parts of us hidden that we may not know exist, but they are indeed a part of who we are. Whatโ€™s important is what we do with the answers that show themselves ๐Ÿ™

Almond butter banana muffins! We are obsessed with these. 
Recipe is from #coffeeandquinoa 
1/2 cup almond butter
1 1/2 cups mashed bananas (4-5 bananas)
3 cups old-fashioned oats
1 1/2 cups plain unsweetened almond milk
1/4 cup maple syrup
1 tsp vanilla extract
1/2 tsp kosher salt
1 cup raw sliced almonds + extra for topping
 1. Preheat oven to 375ยฐ  2.  Combine all ingredients in a large bowl and stir until thoroughly combined. Spoon into muffin cups. Top with a few sliced almonds 
3. Place on rack in the center of the oven and bake until oatmeal cups are firm to the touch, about 20-25 minutes 
4. Wait several minutes for oatmeal cups to cool before running a knife around the edges and removing them from the tin. Serve hot or let cool and refrigerate for breakfasts on the go. Enjoy!

#WhatsInMyBellyWednesday comin at ya hard with this mashed sweet potato goodness, and my cute little helper ๐Ÿ˜ Who says you have to wait until Thanksgiving to eat these things?! I prep this every so often for the week, gets the sugar craving out and also has protein in it from the Greek yogurt! You can scale down if you want to make less but here's how's its done ๐Ÿ˜‰
* 6 sweet potatoes, peeled and steamed until soft
* 1 C greek yogurt
* 2 TB cinnamon
* 1/4 C brown sugar 
Mix until well combined and enjoy warm or cold!

I went through a phase in my journey where I found myself waiting, wishing to just be dropped into a world where I was successful, without doing the work to get there #MillennialProblems ๐Ÿ™
After years of waiting... and getting sick and tired of waiting... and then getting sick and tired of being sick and tired... the realization occurred; NO ONE CAN SAVE ME BUT ME. No one can do the work but me. I started researching how I can better serve others. How I can use my strengths to help others find theirs ๐Ÿ’ช, how to be a better coach, and how I could take what I most enjoy doing (serving others) and make a living for my family from this. ๐Ÿ™ 
If we want something bad enough, we must be willing to work our behinds off to make ourselves proud. We may have loved ones supporting us and rooting for us along the way (shoutout to those who've got my back๐Ÿ˜˜) but we must walk the path ourselves. ๐Ÿ™
We all see the mountain, some of us may be at the foot of the mountain thinking about taking a step and some may be right in the thick of an avalanche.
