Hi hi! 👋🏻 I’ve started working full-time for the summer so time to make yum healthy treats has been low but urges to treat myself remain high 😂🤷‍♀️ Buuut these little morsels are perfect! 😍 I used to love Take 5 chocolate bars which were layers of caramel, peanut butter, and pretzel covered in chocolate 🍫 Life-changing. So I thought I’d try a vegan re-creation of them and inspired by @sixvegansisters recipe like this too! Theeee best combo of goods, hands down. 😋

➡️ TO MAKE: I just layered these in a mini muffin tray, freezing for ~10 mins between layers: 1. Base of rolled oats, soaked dates, peanuts, sea salt and vanilla blended in a food processor. 2. Date caramel made of soaked dates and peanut butter. 3. (A LOT MORE) @picspeanutbutter, I used crunchy. 4. Melted @whittakersnz dark ghana chocolate. 5. Push pretzel into chocolate 🥨. 6. Freeze for about 10 more minutes to set. •
These were a bit fiddly to get out of the tin so next time I’d use liners to help or something else! ☺️

Comes out like a healthy single-serve cake 😏 Easy enough to prep and then pop in the oven to bake while you’re getting ready for the day too! 👊🏻 Essential toppings of salted tahini caramel @topthat_mealtoppers for crunch 😋😋

•1/2 c @harrawaysnz rolled oats •1/2 c @almondbreezenz almond milk •1 TB @picspeanutbutter •1/4 c applesauce •1-2 TB maple syrup •Cinnamon, maca powder, vanilla •1 tsp baking powder •Dash of apple cider vinegar •Pinch of salt •Opt: Protein powder (may need to add some liquid) •

VEGAN AFGHANS! 🍫🍪 I’d been wanting to try ~veganising~ (lol) these biscuits for the longest time so these little choco lumps were the result! 💩They were a bit more dense than other afghans so could do with some recipe perfecting but they’re chocolate so still always good 😏 Aaand the best thing about these is if you wait until the next day, the cornflakes aren’t as crunchy so, legally, you have to eat the whole batch in one go 🤗🤗🤗

➡️ RECIPE: • 1 c oat flour • 1/4 c @natavasuperfoods cacao powder or cocoa powder • date paste (I used 10 medjool dates blended with water so maybe about 20-25 dried dates?) •1/4 tsp salt •1/4 c @almondbreezenz almond milk •1/2 tsp baking soda •~1 c cornflakes
➡️ METHOD: 1. Combine all dry ingredients and mix in wet ingredients. 2. Form cookies. 3. Bake for ~10 mins on 190c. 4. Once cooled, melt @whittakersnz Dark Ghana chocolate and spoon into cookie centre.  Press walnut into chocolate 🍫😋

This is always the situation as soon as I hop off the plane to visit my parents in Tauranga 😝 The summer menu is insane, everything is vegan to start! So many delicious options but it remains uncertain whether I would ever order anything else when pancakes are on the menu 🌚 These are the chocolate almond buckwheat pancakes topped with coconut yoghurt 🍫🥞 and swipe to see the Sunrise smoothie with rose petals looking more aesthetic than I’ll ever be. Definitely worth a visit for this stack alone! 🤗🍓

Latest kitchen experimenting resulted in this summery lil STRAWBERRY SHORTCAKE SLICE 🍓🍓I used strawberries because big yes, but could be made with any berries really! 🌟 Vegan, RSF and made with wholefood ingredients to keep ya feeling guuud☀️🌿•

➡️ RECIPE: 🍓Base: •1 c @avalanchecoffee coconut flour •3 TBsp hulled tahini •1 mashed banana •5 TBsp maple syrup. 🍓Strawberry filling: •Melted strawberries •maple syrup •2-3 TBsp chia seeds. 🍓Crumble topping: •2/3 c @harrawaysnz oats, cinnamon, pinch of salt, 1-2 TBsp @nourishandthrivenz desiccated coconut, 2 TBsp maple syrup ➡️ TO MAKE: 1. Mix all wet base ingredients together well. Combine with coconut flour until you have a uniform mixture. 2. Press into lined dish (I used a loaf tin) and bake base for ~20 mins at 170c. 3. When packages say “don’t eat raw cookie dough” 🙄 Like grow up Betty Crocker, I’m not going to skip the best part of making cookies/life. Buuut since I made these healthy peanut butter cookie dough bites 🥜🍪, no one’s going to stop me (someone probably should 🙃). And they’re vegan so no chance of salmonella, win-win ✅ •

➡️ RECIPE: -2/3 c @avalanchecoffee coconut flour -2 heaping TB @nutbrothers smooth peanut butter -1/4 c maple syrup -1/4 c @sogoodnz almond coconut milk -1/4 tsp salt -1 tsp vanilla -1/4 c mini dark choc chips -More @whittakersnz Dark Ghana chocolate for coating ➡️ TO MAKE: 1. Combine all wet ingredients together well and add to dry ingredients. Should be a crumbly dough but add more liquid if too dry. 2. Form into balls and freeze for ~10 mins. 3. Dip balls in melted chocolate, sprinkle with sea salt and freeze again 🌚

CHOC MOUSSE BOWL 👅🍫 Made with nourishing foods so it’s healthy enough for breakfast 💃🏼👊🏻 Since this is perfectly balanced with protein, complex carbs and healthy fats it keeps me full until lunch, which is amazing in itself as I’m usually still hungry approx 0.2 seconds after a breakfast 🙃🙃🙃 A few years ago I would have eaten actual chocolate mousse for breakfast no qualms (living my best life but not really), so I’m so happy I can get creative to make a much more nourishing and vegan version now! And always eat dessert for breakfast 😎

Yes, these look like slugs covered in mud but THEY GOOD. Seriously the combo of medjool dates + nut butter 🥜 + dark choc 🍫= big yes 🎉 Especially when you add the new @fixandfogg coffee maple peanut butter! 😍 I feel like dates are a “grown up” dessert like ?? where does that come from? does that mean I can eat 47 of them?? •
But for real, last year I was in such a place of fear towards certain foods I deemed “unhealthy”. I wouldn’t buy peanut butter because it was high in fat and a trigger food for me. I’ve stopped restricting entire foods/food groups and (veeery slowly, rip) learning to overcome these “fear foods” by balance. Even though I still took a spoon straight to this new pb jar when it arrived, I realised how my thoughts toward foods have started to change for the better this year. So buying this jar was a weird but delicious lil win for me 🤗 •

My friend @bexfalc and I had a mission to work out what was in @portershed_cafe giant choc chip cookies 🧐🍪 After doing an adequate amount of sampling research, our investigations concluded the flour might be a mix of chickpea and tapioca SO I had to try my own version for a personal supply 😏😂 Recipe below! •

➡️ RECIPE: 
Dry ingredients: •1 c chickpea (besan) flour
•1/4 c @ceresorganics tapioca flour •2/3 c @avalanchecoffee coconut sugar •3/4 tsp baking soda •1/4 tsp salt •Lots of chocolate chips 
Wet: •1 flax egg (1 TB flaxmeal + 2.5 TB water)
•2 TB hulled tahini •2 TB maple syrup (I use Queen sugar free maple syrup bc cheap lol) •1 tsp vanilla essence ➡️ METHOD: 
1. Prepare flax egg
2. Sift all dry ingredients together until combined 
3. Stir together all wet ingredients until mixed and add to dry ingredients 
4. Combine dough until uniform and chill for 10-15 mins. Dough will be very sticky so mixing this will count as arm day. 
5. Once chilled, roll into balls and place on cookie sheet (wetting hands helps if dough is still slightly sticky) Definitely feel free to add more choc chips at this point too.
6. Bake for ~13-14 mins on 175 c •

• ➡️RECIPE: 
Brownies: •1 can black beans, drained and rinsed well •1.5 c dried dates, soaked •1/3 c cocoa powder •1/2 c oat flour •2 TB @picspeanutbutter •1/4 c maple syrup •1/4 c almond milk
•1/2 tsp baking soda •1/4 tsp salt •1 tsp vanilla essence 
Choc ganache: •4 TB cocoa powder •1 TB coconut oil •2 TB coconut cream/milk •1/3 c maple syrup (or more for sweeter)
➡️METHOD: 1. Add all brownie ingredients into a food processor and mix until very smooth. 2. Pour into a lined dish and bake at 175 c for ~27 minutes. 3. While baking, melt all ganache ingredients in a saucepan until smooth. 4. Once brownies are completely cooled, and ganache is cooled slightly, pour over brownies. 5. Swirl in peanut butter 🥜
