And a new decade of my life officially started today! I’ve had an incredible birthday week (yes, celebrations extend beyond just the day of! Haha), with a family dinner, 2 hour hot stone massage, mini vacay, and so much love from my family and friends. .
.
For the past 2 months I had planned to go to the springs and go tubing then pick up a cake from @erinmckennasbakery on my actual birthday. My husband coordinated our hotel and pre-ordered the cake to pick up after the springs...then those plans all fell apart. I woke up with my throat on fire (think I’m getting a cold), so the springs plan was cancelled, and the cake my husband ordered didn’t get sent over to the bakery. I felt let down that on my birthday I was sick (even though not UC related, still always a little scary when i don’t feel well, so that added a little unnecessary stress), couldn’t go to the springs, and I wasn’t getting my cake. I of course took my 10 minutes of “but I’m the birthday girl!” moment and then got over it. Everything ended up being great anyway! The bakery felt so bad and gave us a generous discount on whatever we wanted, my parents stopped by and brought me chicken soup, I received sooo many lovely birthday messages and gifts from my friends and family, my husband took care of me and made me laugh a ton today, and one of my best friends came by to hang out. Sometimes it’s ok to have your immature “woe is me” moment, but always snap back to reality and take a look around...there’s always so much to be thankful for. 30, I’m ready for ya. 🎂💐🙏🏽

Fun fact about me: I talk out loud to myself a lot. Not in a crazy lady kind of way (I don’t think lol), but I seem to verbalize my stream of consciousness a lot and always read my work documents I draft out loud before submitting them. My boss even has a running joke with me...asking me, “so, what’s she saying today?” 😂 even if you don’t outwardly verbalize your thoughts like me, we all are constantly with our mind. The messages/thoughts you send to yourself and to those around you frame the way you perceive others and yourself. Make sure those thoughts are said with compassion. Think about what you’re thinking! Is it kind? Is it true? I definitely get caught up in the comparison trap or negative self talk sometimes and have reminders to snap out of it and treat myself with kindness and compassion. It transforms the way I carry out the rest of my day or week. So, take this as a reminder to be kind to yourself and participate in positive thoughts this week. ✌🏽💕

I've been on an Iced Matcha Collagen Latte kick lately with this summer heat! ☀️ I add @greatlakesgelatin collagen hydrosolate to basically everything since it dissolves in cold or hot liquids and is flavorless! It's an easy way to add a nutritional boost to almost any food since it's a pure protein powder and has high concentrations of Glycine and Lysine (amino acids help build and repair connective tissue and support cell function). I've been adding it to my guacamole and yogurt lately too and that has turned out amazing. 👌🏽

I've tried a few brands of collagen peptides/hydrosolate (same thing, btw) and this one I've found to be amazing not only for the quality of the product, but the quantity they give you for the price. They fill their containers to the top, so you get your money’s worth. And less packaging waste = better for the environment, which is very important to me. .

Iced Matcha Collagen Latte:
Your matcha of choice (I used @soarorganics), 3/4 cup - 1 cup of full fat coconut milk, 1/2 cup cold water, 2 scoops of @greatlakesgelatin collagen hydrosolate, honey to taste, ice.
You can either just pour everything except ice into a blender and pour over ice or mix the matcha with a tiny bit of hot water and honey so it dissolves, pour cold water in, add ice, then in a separate container mix the coconut milk with collagen and pour on top.

About a month ago I ordered a bunch of @paleoonthego AIP meals since I knew that with work M-F and yoga teacher training every weekend, I wouldn’t be in the mood to cook all the time. The taco kit for 2 is so perfect for a date night! I just added the sauerkraut, kale, and cilantro. Not pictured is a delicious AIP salsa verde that is 🤤. .

As the temperatures get into the 90s here, my taste buds are craving cooler foods. 😎 I’m just so thankful that I can tolerate more raw veggies/fruits now 🙌🏽 it took about a year post major ulcerative colitis flare to get to this point, so yippee!! .

If you have a hard time digesting raw veggies have you tried using digest enzymes? I think for me, digest enzymes have helped me a lot to get my digestion back on track. Especially for digesting raw greens!

There’s no way to make meatloaf look pretty, but I tried my best! I made meatloaf a couple days ago and have been using it for leftover meals this week. Today’s office lunch was a piece of meatloaf over butternut squash and spinach! So easy. 👌🏽

Also, a reminder that eating well doesn’t have to be super fancy! I just made the meatloaf ahead of time and I have bags of frozen organic butternut squash and spinach in my office freezer that I used to eat with it. It took less than 5 minutes for me to prepare a delicious and healthy lunch.

One of my best desk breakfasts to date! 🌮 🍳 🥑 You all know that I eat 2/3 meals at my desk. And if you didn’t know, I’m NOT a morning person. So waking up to make this whole 8:30am-5pm thing happen 5 days a week and make sure I eat a proper breakfast is quite the task for me. Today, I met myself in the middle and woke up with just enough time to fry two eggs and throw it in a glass container with a @sietefoods cassava and coconut tortilla and an avocado. I assembled everything at my desk and slowly ate breakfast in between listening to voicemails, checking court dockets and making my to-do list for the day. .

Now for lunch, I make sure to eat at my desk or conference room and not do any work whatsoever. it’s important to give your body that time to reset. Especially those of us with autoimmune issues, we tend to get worn out faster than the average person...so be kind to yourself and acknowledge your limits! Something I’m still trying to learn myself. .

I love all the brightness in this bowl!! and when I made it I was actually shocked I didn’t add any green (usually would add some matcha or moringa or throw a handful of spinach in the smoothie itself) or dark brown like cacao nibs or cacao powder which are always a go-to. Instead, it all came together to be light, fun, and bright. And ya know what? That’s exactly how I am feeling lately. 🙌🏽💛🙏🏽

I have already gotten so much out of yoga teacher training over the past couple of weeks and have been doing some other work for myself and my relationships over the past month or two. I feel refreshed, light, awakened...breaking down and rising up stronger each day. Sending all of you a little brightness today. 💛🧡💛🧡
I’m calling this my Sunshine Smoothie Bowl. ☀️ . . I love all the brightness in this bowl!! and when I made it I was actually shocked I didn’t add any green (usually would add some matcha or moringa or throw a handful of spinach in the smoothie itself) or dark brown like cacao nibs or cacao powder which are always a go-to. Instead, it all came together to be light, fun, and bright. And ya know what? That’s exactly how I am feeling lately. 🙌🏽💛🙏🏽 . . Looking forward to this 3-day weekend for a little R&R. 😴🙏🏽💆🏻‍♀️ While I have yoga teacher training all day Saturday and Sunday, I’ve found that it actually fuels me versus drains. However, stress can be negative and positive. And that concept is something I’ve really had to work with. Another blessing from my AI disease is being better able to know my limits and when to take a step back to find balance. So, even though this weekend (and the next 2 months with YTT) will be filled with “positive stress”, I still need to make sure to reset and not overdo it. .

Here are some of the things that help me get good deep sleep and allow me to better respond to outside stress(good or bad): Epsom salt baths with oils, candles, magnesium spray, roll on oils, sleep mask and yoga nidra. ✌🏽 What are some of the tricks you use for better sleep and stress management? What do you think about the positive and negative stress concept?...

Since starting the autoimmune protocol (AIP) late 2016, I’ve been able to introduce a bunch of foods, but almond flour has been a little iffy in big portions. Which sucks a bit because it’s the closest thing I can find to make chocolate chip cookies taste like their gluten filled counterpart. But, too much almond flour and my stomach is not happy! So, finding a good choco chip cookie recipe that doesn’t use almond flour has been quite the challenge! I finally found this recipe and absolutely love it. My husband (not on any kind of special diet) gave his stamp of approval too! .

Anyone else intolerant to almond flour? I haven’t tried using any other nut flour, so not sure if it’s just an almond thing or general nut thing...recommendations are welcome!

I usually just check yelp and start with keywords “gluten free” or “paleo” then narrow it down and call before I go to make sure they can accommodate my top dietary restrictions: no gluten, nightshades, and dairy (I’ve found that a tiiiny bit is alrightish, just gotta pop a few digest enzymes, I use @enzymedica). When I’m on vacation I’m waaayyy more lax on my diet and haven’t had any major issues. I definitely attribute it to being totally stress free and my body is more tolerant to different foods. I sooo wish @pressedjuicery was in Florida because I’d be there all the damn time! The ingredients are SO clean. This is a vanilla (almond, dates, vanilla bean, and sea salt) and matcha (matcha,kale,spinach,romaine, cucumber, almonds, dates, vanilla) “freeze” with cacao drizzle. It tastes amazing and all gluten, dairy, soy and refined sugar free! Can’t beat that. 🙌🏽🍦
