Need a last minute holiday appetizer? Try these festive baked zucchini tots! Made with an entire zucchini, these flavorful bites are filling, perfect for entertaining, and won’t leave you with that greasy, weighed down feeling like traditional fried tots! 🍟Impress your friends of family with this 3rd Day of #Fitmas recipe that they’ll never know is good for them 😉
Ingredients:
▫️1 medium zucchini, shredded
▫️2 eggs
▫️1/2 cup breadcrumbs of choice (panko for #glutenfree or whole wheat work great)
▫️1 cup shredded cheese
Directions:
Preheat oven to 375° and line a baking sheet with parchment paper. Mix all ingredients until thoroughly combined and form into small, tator-tot shaped cylinders. Place on parchment paper and bake until golden brown (about 20 minutes). Let cool slightly and enjoy! 💚❤️ (Serve with no-HFCS-added ketchup for the festive colors 💁🏼‍♀️)

On the 2nd day of #Fitmas, @allinspiredwellness gave to me... high-protein Cranberry Bliss Bites! 🎄😻 I’ve been having these daily since creating the recipe and I CANNOT WAIT for you to try it! If you haven’t had @starbucks Cranberry Bliss Bars, they’re basically this sweet overdose of orange🍊, vanilla, & cranberry goodness- totally replicable with #healthified ingredients! 😋
Check out the recipe below:
Ingredients-
▫️1 scoop vanilla protein powder (I used @questnutrition)
▫️2 T nut butter
▫️2 T honey or maple syrup
▫️1/4 C almond flour
▫️1/4 teaspoon orange or vanilla extract (optional, to enhance flavor)
▫️unsweetened dried cranberries
Directions:
Stir together first 4 ingredient including extract if desired, then add water, 1 tablespoon at a time, until it reaches cookie dough texture. Stir in cranberries and roll into bite-sized balls. Make drizzle with 1 part light cream cheese, 1 part Greek yogurt, and one part maple syrup or honey. (Thin with almond milk if needed) drizzle over bites, and enjoy! Perfect for breakfast or a healthy snack on the go 🙌🏼 Happy Friday! 🎉

#mealprepmonday tip: Don’t forget snacks! 🥒 One of the biggest challenges people have with sticking to healthy eating is time/convenience. Set yourself up for success by making healthy eating CONVENIENT with pre-made snacks! One of my go-to’s is homemade veggie chips that don’t have to be refrigerated (so I can have them in my car or purse between appointments!). When I’m at home, I love dipping them in my homemade ranch 🤤 see below for the recipe!
Ingredients:
-2 cups dairy or non-dairy milk of choice
-2 tablespoons vinegar or lemon juice
-1 packet dry ranch seasoning
-1/2 cup Greek yogurt or light mayo
Directions:
Stir lemon juice or vinegar into milk and let sit 5-10 minutes (this creates the “buttermilk” flavor of classic Ranch). Stir in remaining ingredients until smooth and evenly incorporated. Add fresh dill or parsley (optional) and enjoy! (Leftovers are good for about a week depending on freshness of ingredients).

Giving Olive Garden a run for their money with this homemade minestrone soup 😻🍲 As you can see from the abundance of veggies stuffed into this bowl, I’m not a fan of super broth-y soups because 1) I don’t find them filling and 2) I feel gypped out of all the other ingredients! 🥕🥒
The trick to cooking veggie-loaded soups correctly (so nothing turns to mush) is to add the veggies in order of “crunch factor”. 💡For example, in today’s recipe I added the carrots and celery first (crunchiest), then peppers and zucchini (semi-crunchy), and lastly the kale and beans. The broth is simply vegetable stock + canned tomato sauce leftover from last night! 🍅
(No noodles here because I truly feel like this soup didn’t need any, but if you do want them, I suggest adding them the last 10 minutes or so of simmering.)
Secret’s out! How easy is that?? Try it yourself and lmk what you think!

We so often long for a certain life/body that we don't already have, but aren't willing take the time or effort necessary to obtain it.
Next time you’re ready to impulse buy those cute shoes, or eat that indulgent dessert, ask yourself, "is this what I want NOW, or is this what I want MOST"? There's so much we can gain by staying committed to our goals and not backing down when temptations come our way. You have to make sacrifices for the things you want most, otherwise what you want most will be the sacrifice.

It’s JICAMA! 😱 Have you ever had a taco made with a thinly-sliced JICAMA shell?? It’s so crunchy and refreshing I’m kicking myself for not thinking of it sooner. Perfect for individuals who are following a  #glutenfree, #paleo, #whole30 or #ketogenic diet because it gives you the crunch and flavor of tacos without all the processed carbs! 🥑

Luckily, I was able to re-construct some leftovers in our fridge that made this chili even better! I would have never thought to put butternut squash into it otherwise. Combined with the other traditional chili ingredients, this made the perfect sweet, savory, creamy, filling, and REFRESHING combo (thanks to the giant dollop of Greek yogurt on top 💁🏼‍♀️).
Between this #Sundaynight dinner, the snow storm, and a Twilight movie marathon (with my husband 😆), I couldn’t ask for more. ❄️ Hope you all had a wonderful Thanksgiving weekend!

I would have never thought to put butternut squash into it otherwise. Combined with the other traditional chili ingredients, this made the perfect sweet, savory, creamy, filling, and REFRESHING combo (thanks to the giant dollop of Greek yogurt on top 💁🏼‍♀️). The classic Thanksgiving side dish has been my favorite for years, but the original recipe is nutritionally pretty lacking. This version, however, has all of the classic, hearty flavor with none of the process carbs or questionable texture! 👏🏼 (Even the leftovers are equally as delish- no soggy or dried out stuffing here!)

👩🏼‍🍳Ingredients:
-1 small cauliflower
-1 cup of each: chopped carrots, celery, and onions
-1 to 2 cups chicken broth
-1 tablespoon dried sage
-1 teaspoon each: dried rosemary and thyme
⏲Directions:
Preheat oven to 375° and chop cauliflower into small pieces. Spread on a lightly greased baking sheet and roast until golden brown and slightly charred.
🥕Meanwhile, sauté the rest of the chopped veggies in a large, nonstick pan over medium-high heat until al dente. Pour in 1 cup of chicken broth, add the seasonings, and simmer. Stir in the roasted cauliflower and continue cooking until all veggies are tender/reach desired consistency (feel free to add more chicken broth if needed to get veggies softer/more flavorful). Remove from heat once all liquid is absorbed and serve! 🍲 #AIWrecipes #whole30 #thanksgivingdinner
