Giving Olive Garden a run for their money with this homemade minestrone soup 😻🍲 As you can see from the abundance of veggies stuffed into this bowl, I’m not a fan of super broth-y soups because 1) I don’t find them filling and 2) I feel gypped out of all the other ingredients! 🥕🥒
The trick to cooking veggie-loaded soups correctly (so nothing turns to mush) is to add the veggies in order of “crunch factor”. 💡For example, in today’s recipe I added the carrots and celery first (crunchiest), then peppers and zucchini (semi-crunchy), and lastly the kale and beans. The broth is simply vegetable stock + canned tomato sauce leftover from last night! 🍅
(No noodles here because I truly feel like this soup didn’t need any, but if you do want them, I suggest adding them the last 10 minutes or so of simmering.)

When the chili is thick and the ‘cados are fresh 👌🏼🥑 After about 7 straight meals of Thanksgiving food it was time to switch things up 😅
Luckily, I was able to re-construct some leftovers in our fridge that made this chili even better! I would have never thought to put butternut squash into it otherwise. Combined with the other traditional chili ingredients, this made the perfect sweet, savory, creamy, filling, and REFRESHING combo (thanks to the giant dollop of Greek yogurt on top 💁🏼♀️).
Between this #Sundaynight dinner, the snow storm, and a Twilight movie marathon (with my husband 😆), I couldn’t ask for more. ❄️ Hope you all had a wonderful Thanksgiving weekend!

I kind of winged the recipe by using my zucchini coffee cake recipe (saved in the @allinspiredwellness highlights) but replaced the zucchini with 2/3 cup canned pumpkin!🎃 I’m all about simple, and if I can make something simple + healthy and taste THIS good?? Big win 🎉

The classic Thanksgiving side dish has been my favorite for years, but the original recipe is nutritionally pretty lacking. This version, however, has all of the classic, hearty flavor with none of the process carbs or questionable texture! 👏🏼 (Even the leftovers are equally as delish- no soggy or dried out stuffing here!)

-1 small cauliflower
-1 cup of each: chopped carrots, celery, and onions
-1 to 2 cups chicken broth
-1 tablespoon dried sage
-1 teaspoon each: dried rosemary and thyme
Preheat oven to 375° and chop cauliflower into small pieces. Spread on a lightly greased baking sheet and roast until golden brown and slightly charred.
🥕Meanwhile, sauté the rest of the chopped veggies in a large, nonstick pan over medium-high heat until al dente. Pour in 1 cup of chicken broth, add the seasonings, and simmer. Stir in the roasted cauliflower and continue cooking until all veggies are tender/reach desired consistency (feel free to add more chicken broth if needed to get veggies softer/more flavorful). Remove from heat once all liquid is absorbed and serve! 🍲 #AIWrecipes#whole30#thanksgivingdinner
