Pea and ham soup kind of a day. Sunny yet cold! ❄️🌞typical Sydney winter day!
I love the reassuring perfume of this smokey and creamy Zuppa bubbling on the stove, enveloping the entire house with the promise of its warming flavour. In a large pot stir fry a soffritto of onion, celery and garlic in a little olive oil. Add 2 cups of rinsed dry split peas, 1 teaspoon of tomato concentrate paste, and cook with the soffritto for 1 minute. Add 1 smoked ham hock, cover the pot with water to fully submerge the peas and hock, add 1 bay leaves and cook in low for 2 hours, stirring every now and then. You want the peas to be almost dissolved into the cooking broth. Lift out the hock and set it aside to cool. Remove the bay leaf. Taste the soup for salt and season to your taste. Using an immersion blender, blitz the soup until smooth. Shred the ham from the bone. Serve the soup hot with crusty bread, topped with pieces of ham and a drizzle of EVOO.
