It's hard to believe that this is week four of collecting #imperfectproduce from the Van Ness Farmers Market. What started out as an experiment has turned into a highlight of my week. Yesterday it was pouring down rain, but nevertheless I made the 35 minute walk, and I am so happy I did! Not pictured are 2 cucumbers, 3 zucchinis, and nearly countless plums the size of cherries I shared with my lyft line driver and fellow passenger on the way back home. Courgette Flowers! Make sure to pick the male flowers, the female flowers carry the fruit/vegetable.. Stuff them with whatever suits your buds. I used boiled soybeans, wilted summer cabbage and red bell peppers coarsely blended in a food processor together with psyllium husk, salt and black pepper and a melty cheese in small cubes (use your favourite vegan cheese.. it's there for texture and flavour), then fill each flower with a small spoonful of the stuffing.. seal each flower in corn starch (maizena flour) and dip in a semi-light frying batter. I used a rye sour-dough starter, corn starch, organic wheat flour, salt and tap water to my desired thickness. Play around with it! And then deep fry in medium to hot oil, around 180'c. Another practical use for my @mightynest #mightyfix this month (reusable produce bags from @flipandtumble ) is squeezing moisture out of shredded zucchini for the #lowcarb spice cake cupcakes I'm making for the #sugarfree and #keto eaters at her birthday celebration later. I'm using @fooddreamer recipe from her beautiful cookbook, The Everyday Ketogenic Kitchen. Zucchini Spice Sheet Cake, pg 360 but using a buttercream frosting instead of cream cheese. Just doing half a recipe so I didn't even need to put the zucchini IN the bag, just laid it out, plopped the zucchini IN the middle and folded the edges up around it before squeezing. #practical#easy#worksmarternotharder#lowcarbbaking#zucchini
