Saturday salad features a Korean theme: Japchae Sweet Potato Noodles with cucumber kimchi and baby bok choy, plated over kale with a side of grilled salmon. The noodles are actually clear / not orange as I thought. Totally filling and delish. Love discovering new ingredients. Try them and let me know what you think. Wish I had recorded the crunch when I wolfed it down!!
