Update on my meal prep. 1. Meat is browning in oven for a few. Popped in before coaching next class, it will be ready when hubbie takes it out before he goes to work at dinner time. He will shred and make mini tacos with kids. 2. Is pico normal style 3. Few people asked what I did with pregrilled corn. I just take it off, and make street style corn with it. Perfect served room temp 4. Is Mediterraneanish pico. I use cucumbers, tomatoes, red onion, dill, parsley, lemon and SP to taste. Mint is lovely in it too. 5. My lunch, I roasted extra chicken up in basic seasoning for myself for on the go. 5oz of chicken, 1.5 cups pico, extra lime, one very small roasted sweet potato and 1 teasp of street corn sauce and smudge of queso fresco. Late but oh well breakfast was so amazing. As you can tell i did not cook this, but i still made sure i ate healthy. Starting off is an egg white scramble with mixed veggies, a bowl of fruit, two oranges, two chicken biscuits, and some good oj. Loved every bit of it and i was to stay under a thousand calories. This morning's breakfast sammich! This was super yum! I'm been craving "Elvis" flavors and PB&J! Its so weird. I normally never craved anything sweet and I never really LOVED banana the way I do now. Now I can't get enough! This is actually good. Banana is a low volume, high calorie food and thats kinda what I've been needing. With the Invisalign, I still can only eat about 3 times a day without over brushing. Which means my meals have to be more calorie dense than normal. I have this habit were I accidentally make too big of meals, while getting my Macros and Calories in and than I'm stuffed. Something like a Banana is the perfect meal addition. I also had some Raspberry Dark Chocolate Protein Yogurt on the side! ; Today I started Summer School! I go to a Charter School that requires we go at least 2 weeks of Summer. However, they make it super fun! For English, we get to make an art collage Children's Book! I love art and I love writing, so I really enjoy these weeks! Very excited to see my finished product!
