First go at dumplings and it was a lot of fun, but I’m also deadddd tired (4 hours later). Holy cow. 😂 Also don’t judge the technique, I’m sure it’s poor, but I feel so accomplished 💪🏼💪🏼 P.S. yes, the dough is very yellow because there is pumpkin in them (bc hello it’s fall and I still can’t get enough) 🥟 Dough:
150 g cooked pumpkin + 180 g all-purpose flour. A couple punches of salt. Knead until dough has a slight bounce (~6 minutes) 🥟 Filling:
1 lb ground pork, 2 tsp soy sauce, 2 tbsp hoisin sauce, 2 tsp 5 spice powder, 2 tsp fresh ginger root grated, fresh sage, green onions, salt and pepper to taste (kind of eyeballed all of that last bit 🤷🏻♀️)

LOWER SUGAR PUMPKIN PIE! || Also dairy-free, gluten & grain-free with one simple word...Satisfaction. Super easy (the crust is just 4 ingredients & soooo good!) and made with all real ingredients. Plus no fancy spices needed just Pumpkin Spice which has them all in one. A must try! The husband made this recipe too and promises if he can make it, so can you. Insanely delish the next day too for a slice of heaven in the morning.☺️I used @stevivabrands KetoseSweet sweetener for just the right sweetness.

Pumpkin Pie Filling:
* 1/2 cup-3/4 cup unsweetened almond milk (start with 1/2 cup first and see if you need more)
* 2 large egg whites
* 1 15 oz can pureed pumpkin
* 2-3 tbs KetoseSweet Sweetener (depends on your level of sweet)
* 1 tsp pure vanilla extract
* 2 tsp Pumpkin Pie Spice
* 10 dates pitted, soaked in water for about 1 hour
* 1 tablespoon KetoseSweet Sweetner (is sugar free + zero calories)
* 3 cups walnuts raw and unsalted
* 1/2 tsp cinnamon I use coconut whipped cream for topping (optional)
1. Preheat oven to 350 F.
2. Drain the dates and place in a food processor or blender with walnuts, sweetener and cinnamon. Keep processing until it becomes a sticky mixture that sticks together. If this doesn't happen, then you need to add more dates to make it stick together.
3. Transfer the crust to a round pie dish. Pressing the crust into an evenly layer, pressing it firmly into the pan and corners.
4. Next make the pumpkin filling by adding the ingredients for the filling to a food processor or blender. Blend until all ingredients are incorporated and smooth. Pour the pumpkin filling over the crust. Bake 45-50 minutes at 350 F until the pie is set and edges are firm. Remove from the oven and cool 1 hour at room temperature. Ready now and fantastic the next day too! ENJOY.
The Oaxacan Old Fashioned ✨ Served as the featured cocktail at our Dia de los Muertos Supper a few weeks ago. We may have been biased ahead of our February meal in Oaxaca but this cocktail is a definite winner for any time of the year. Mix 1 1/2 oz tequila, 1/2 oz mezcal, a teaspoon agave and a few dashes of chocolate bitters over ice. Strain and serve with an orange peel garnish. We’ll tell you more about our favorite mezcal to use after our tasting with @taiskuri in February.
「📍@RollindeepIceCream in Costa Mesa, CA」omgahhhh the Matcha rolled ice cream here was so good! Much better than Rollin' Creamery imo (which has more of a matcha Kit Kat flavor I think) and this place is so unique because they also offer FRESH MOCHI ICE CREAM TACOS. WOWWW. Anyway it blew me away by how soft and chewy the mochi is and the yummy matcha. AND IT'S ⚡ONLY $5⚡ FOR THE MOCHI ROLLED ICE CREAM TACO.
Oh and they also have drilled soft serve ice cream with mixed in cereal (like Drill'd in Fountain Valley) in addition to their rolled ice cream.
