My favourite wine from the Loire at the moment, a Savennieres. Chenin blanc grapes gives honey, peaches, nuts, and more on the nose and palate. Full body and great mouthfeel and a splendid acidity. This will be on my table at Christmas to accompany the halibut.

Here, look for full bodied wines, influenced by oak with high acidity and a lovely minerality, thanks to its limestone soils! It’s my pleasure to introduce you to Vigernons de Buxy Buissonnier Montagny, Premier Cru, 2016🍷! A textbook example of white burgundy, from a cooperative in Buxy offering a fantastic choice if you’re looking for palate practice in Old World Chardonnay☝🏼! •

On the nose, baked golden delicious apple, honeysuckle, lemon zest, squeezed cucumber juice and notes trickling into white stone fruit, all of which, are delivered in a classic cool climate context🤭! Pinot Noir, who doesn't love Pinot right?! Well I do actually, but not in the way you might expect. I don't know what it is though, but I always take the other one from what the rest is having. 😅

Pinot Noir a fantastic grape varietal which is not easily to cultivate, loves cool climate and has really small bunches with very thin skin, which doesn't givr the wines a very intense colour but some colour like royalty. .

You can make the wines fresh, with a great acidity and lots of fruit flavours. Or you can give them a barrel aged, earthy style when aged on French oak. Or you can give them a round vanilla body with a bit of earthyness to mature it on American oak. Thats why I love Pinot Noir! Which way you go, there's a Pinot for everyone!

Last monday we had a nice dinner with the WSETGlobal students and there where a lot of bottles brought to share in which these few where my highlights. Where I have to say.... yes I am gonna say it, I liked the new world style Pinot's over the French. Its more to my palate, I do know how to appreciate the French! But those accompanied with dinner its fantastic, but I always eat and forget the wine and instead sharing them, my plate's finished and then comes the wine. I probably chat too much.. I find them a bit too earthy, for my I love that vanilla body, with still some nice red fruit flavours left. .

Um Pinot Noir da região de Pfalz no sul da Alemanha. Muito frutado nos aromas e no paladar mostrando cerejas vermelhas e framboesas. Ótimo equilíbrio entre acidez e taninos. 50% passa em tanques de inox e 50% em barricas de carvalho por 9 meses. Um vinho que pode ser combinado com peixe de carne branca e salmão. Dica: Fique de olha nessa região, Pfalz faz excelentes Pinot Noir. So far I’m: excited, overwhelmed, intrigued, thirsty and terrified AF 😆

Under some great tutelage by @barrysomm & his aide @esmesomm, we flew through the areas of Italy like Soave, Barolo, Chianti, Puglia & Sicily, to name but a few. And of course we “had” to try some of the wines from the regions. 
In one quick session I’ve learnt astronomical amounts. I can’t wait for a SOLID WEEK of wine learning! 🙌🏻🍷 If anyone is keen to join in for the level 3 or even level 2 course, hit @thewinecentre up. I've been busy the paat week so haven't shared a lot. Did my first exam of Diploma Course (unit 2) 🤞🏻🤞🏻 . And after the exam had some some very interesting classes about spirits.

We have tasted 45 spirits in two days!! All kinds of Rum, Tequilla, Whisk(e)y, Gin. Never new that it was that interesting in flavour! I think I secretly found a new hobby! When you now how to taste a spirit it is quite easy to familiarise yourself with the high alcohol. That was something a bit challenging for me as well. But, if you now a world of differences in aromas and flavours opens up and it is fantastic!

This picture shows the end of day 2 of the spirits classes given by Godfrey Spence from WSETGlobal. We tasted a range of 14 Whiskies from different regions. Ofcourse Scotch, but also Irish, Tennessee Whiskey and my favorite Bourbon! .

Quite interesting to actually learn the differences. Malt Whiskey being made from only Barley, grain Whiskeys made of all kinds of wheat, barley, mais together. Blended whiskeys is a blend of malt and grain whiskey. If it states 'Single' malt Whiskey, the Whiskey comes from just one distillery. It doesn't neccessarely mean a better quality. .

I like bourbon anytime over peated whiskies, those taste is to heavy for my palate, and like my wine I like 'em bold and round and thats Bourbon for me, a sexy Whiskey with lovely vanilla, coconut, bit soft smokeyness and to me tangerine and cinnamon. .

Just pour me a glass and I'm happy. And yes!! With a bit of ice, because the flavours come out even better and it is even more enjoyable. Cheers to all the spirit lovers. What Spirit do you like?

My sweet mother bought me @rajatparr’s new book as a gift for taking what were hopefully my last 2 @wsetglobal Diploma exams. 
Honestly, this last stretch wasn’t without its challenges. Battling a cold (a taster’s nightmare) before launching off to Philly, quickly taking an exam, then immediately returning and polishing off a research paper. I let anxiety get the best of me (I am VERY good at putting pressure on myself) and had to legitimately call my brother and mother to come sit with me while I typed out the last 500 words. As silly as it sounds, it felt impossible at the time. You know what they say, sometimes you just need your mommy.

Three years of this program may be over, and they weren’t without failures. 7 trips to Philly, lots of heartbreak about simply not acing everything on the first try. At times, I watched others succeed while I didn’t, all the while positively torturing myself for falling down. However, the fuck ups are now part of my story and I’m grateful for the failures; they allow me to empathize, to grow, and to laugh a little harder about my obsession over passing a test about fermented grape juice. 
And it’s not over, everybody: I just wrote out my study plan to prepare for my application into the @mastersofwine program: my holy grail. I already vow to be kinder to myself this time and to understand that the journey may be longer and bumpier than expected, but it’s still mine and is still sacred.

Thank you to all those who tasted and quizzed, who cheered and supported. There have been countless many of you over the years; some of whom I’ve lost touch with for whatever reason, some of whom are my very closest friends. I want to continue to make you proud.

Great wine from Rioja.from a famous producer, Rothschild's and Vega Sicilia!  Very interesting and complex, worth saving for later too, has potential for further ageing.  Great pairing  with truffle percorino!

What a privilege to listen to Steven Spurrier, Anne Mchale MW, Christine Parkinson and James Hawkins this evening discussing the English wine industry.

The key messages from the evening were:

The industry is growing rapidly.

English wine needs to retain its 'quality over quantity' identity to prevent becoming a mass producing region. 
It should retain its national PDO rather than creating regional PDOs to prevent consumer confusion, at least in the early days.

Awareness is key to maintaining comparison with Champagne. There is something special about opening a bottle from 'down the road'. English wine tourism is expanding but vineyards must remember to put experience before sales.

Still wines are a minor player at present. The whites are great examples, especially Bacchus, but red wine production can be restricted by cool climate.

English wine has a similar identity to Champagne. It is generally viewed as a celebration and occasion wine rather than every day drinking examples like Prosecco.

It should retain its traditional method production.

NV wines are limited at present but likely to increase as the industry matures.

English wine owes its success to Sandy Moss at Nyetimber.

According to Steven, "A wine is a conduit to express the terroir." Many thanks to @mousseux_anglais for hosting an excellent event at Mortimer House. Wines from @courtgarden @bridevalleyvineyard @hennersvineyard and @langhamwinery on display.

The standout wine of the evening, at least in my opinion, was Langham Blanc de Blancs 2014. Exceptionally well structured expressing ripe tropical flavours, a creamy mousse and an everlasting fresh honey finish on the palate. Delicious.

The key messages from the evening were: The industry is growing rapidly. English wine needs to retain its 'quality over quantity' identity to prevent becoming a mass producing region. It should retain its national PDO rather than creating regional PDOs to prevent consumer confusion, at least in the early days. Awareness is key to maintaining comparison with Champagne. There is something special about opening a bottle from 'down the road'. English wine tourism is expanding but vineyards must remember to put experience before sales. Still wines are a minor player at present. The whites are great examples, especially Bacchus, but red wine production can be restricted by cool climate. English wine has a similar identity to Champagne. It is generally viewed as a celebration and occasion wine rather than every day drinking examples like Prosecco. It should retain its traditional method production. NV wines are limited at present but likely to increase as the industry matures. English wine owes its success to Sandy Moss at Nyetimber. According to Steven, "A wine is a conduit to express the terroir." Many thanks to @mousseux_anglais for hosting an excellent event at Mortimer House. Wines from @courtgarden @bridevalleyvineyard @hennersvineyard and @langhamwinery on display. The standout wine of the evening, at least in my opinion, was Langham Blanc de Blancs 2014. Exceptionally well structured expressing ripe tropical flavours, a creamy mousse and an everlasting fresh honey finish on the palate. Right next to my (Jeremy) Airbnb in London was this fun, hip Portuguese wine bar and restaurant called Londrino. The Sommelier gave me half glasses of his favorite reds and whites of grapes I’ve never heard of before. He paired the food with bite sized sandwiches made with crab, pork and beef. Absolutely delish! 🍷⁣⁣

The favorite wine was a chardonnay blend called Quinta das Cerejeiras Reserva and the favorite red was a Pinot Noir look alike called Suertes del Marques El Lance. ❤️⁣⁣

There are countless words you come across in the world of wine that tend to pop up all over the place - but do we really understand them or why we even use them🤔? Today, I want to shed better understanding of an appellation! An Appellation, in wine🍇, is a defined area where grapes are grown that are governed by laws and possess distinct geographic characteristics making an area unique! Every wine producing country has some form of an appellation system and the strictness of laws varies by country (I.e the DOC in Italy vs. VQA in Canada)! They can be so strict it restricts the types of varietals allowed in a defined place; all the way through to setting minimum aging standards! However, for this post, I want to bring it more local to Niagara🍁!

The Niagara Peninsula has two Regional Appellations(RAs); Niagara-On-The-Lake & Niagara Escarpment🍷. Of these, there are 4 sub-appellations in NOTL and 6 sub-appellations in the Escarpment. They all have their own distinct geographic features, soils types and climates. Two posts ago, I posted a picture📸(similar to this one) in NOTL and there was still vegetation on the vines; whereas here, on the Escarpment, there is little to no vegetation left! This picture was taken on the same day, 20 Kms apart! This is the power of appellations and how they influence wine! NOTL is much warmer than the Escarpment and the pictures are proof of it👌🏼!
