Football Sunday USED to double as meal prep Sunday when we lived in Toronto. Being sick this past week has really had me thinking about taking better care of myself again, drinking more water and making healthier choices. Here’s today’s prep (lunches till Wednesday for @woodward01 and I) I made a massive list of breakfast, lunch and dinner meal options that can be prepped easily. Dinner tonight was roast beef. So I’ve used the leftovers and packed myself lunch for two days. One way I save money is I never buy lunch at work (plus the canteen at work is quite ordinary and expensive!). I am lucky to have a large office that I share with one other person, and we have a bar fridge, sink, toaster and kettle. I also bought an espresso machine almost 2 years ago (the budget Breville one) as I love coffee. I have just started buying the $12 kilo bag of fair trade coffee beans from Coles. I was a bit sceptical at first but it is fantastic! I also keep a pack of biscuits for afternoon tea. I usually buy a few packs when they are half price. All the little things add up.

Usually a work ordered in gluten free lunch option isn’t the best, normally it’s a ham sandwich with a fruit bowl. This time they went to a different caterer and this little beauty was placed in front of me instead of the cakes everyone else was given. The texture was smooth, not grainy like many others bars I’ve tasted. Now, I know it says it’s vanilla flavoured but the taste reminded me of my mums homemade rice pudding, a-maz-ing! As a fan of pasta and Italian food, I decided to make this amazing zero carb noodles, also known as meat noodles.
To accompany them I made a nice tomato marinara, or salsa.
The noodles and the dumplings came out amazing, they have a fluffy meaty flavor to them and are an excellent noodle replacement.
You will get around 2-3 servings out of this:
1x tbsp Psyllium Husks
1x can of Tomato Pulpa (400g)
Place the chicken breast in a blender, add 1x tbsp of Psyllium husks, 1x tbsp of Himalayan salt, some oregano and some cayenne pepper.
Blend it a bit and then add 2x eggs to the mixture. Mix it all real good until you get the creamy consistency.
Take the mixture out of the blender and place it in a plastic bag. Tuck it inside and cut the corner piece from the bag.
Boil up some water seasoned with some Himalayan salt and just push the mixture out of the bag, making small circles as you go.
The noodles will fall to the bottom of the bowl and once they rise up to the top, they are done.
For the meat dumplings, use the same mixture, round it up in your hands and cook them same as the noodles.
For the marinara sauce, we are gonna heat up some frying pan, add some olive oil, some nicely chopped white onion and some fresh garlic.
Once it turns golden, add the tomato polpa (tomato sauce with pieces), season it with some oregano and some thyme.
Reduce the sauce to desired consistency.
Sprinkle some grated Parmesan and enjoy this awesome meal! :) Don't forget to Like, Share and Subscribe! Thank you for all your support!
