More analog granular synthesis. The work in ChucK hit a wall when numerous parameters of OSC control of envelopes were needed. Had to dust off the SuperCollider skills to get this rolling, but ultimately a much more comfortable work flow. All of these grains have fixed envelopes, but the audio material is that of two different oscillators, cut up and randomly panned to 1 of 4 outputs, (2 ins --> 8 outs) sent back to the system as control voltage, including back into the audio sources that created them. Also using hardware to control panning, and to modulate envelopes. With Ottolenghi being easily my favorite cookbook author, and the inspiration behind many of my daily meals, I picked up a copy of Sweet last time I visited the UK. Healthy and very tasty risotto = winning!! Made with brown rice, tons of vegetables, thyme and lean chicken - this feeds 5-6 people:

😋
2-3 T Extra virgin olive oil
3-4 garlic cloves, crushed 
2 flat large mushrooms, diced 
2 cups uncooked brown rice 
1 chicken stock cube in 250 ml water
~3 cups of water 
1 carrot, diced 
1 zucchini, diced 
Thyme - ~ 8 sprigs 
Pepper to taste 
2/3 red capsicum, diced 
Two handfuls snow peas, cut in half
4-5 large handfuls of baby spinach 
1 kg chicken breasts, diced - cooked separate in a pan then added in before snow peas and baby spinach 
Parmesan cheese grated on top

Takes about 1.5 hours to absorb flavours so this is easy to prep but you need to get started early 😊 .
✔️Low sodium - only one stock cube and thyme, pepper and garlic used for flavour
✔️lots of vegetables for fibre, polyphenols and micronutrients, ✔️brown rice as a source of whole grains, ✔️extra virgin olive oil as a source of healthy fats, ✔️lean chicken as source of protein ✔️Parmesan as a source of calcium, protein and yum!

The other day I decided to try my hand at rice. Now, I know what you're thinking. "Rice?! Girl, who doesn't know how to make rice?"😱
I wanted to make a homemade version of Uncle Ben's Wild Mushroom rice. You've had it before, so you know what I'm talking about. Flavor that bursts on your tastebuds, but is loaded with sodium and other not so great things.
Here's the deal, I LOVED it. My husband not so much... I think I lost him somewhere between wild rice and mushrooms. (Clearly he doesn't know what's good).😜 ▫
Here's what I did:
1 c wild rice mix 
2 c minced shiitake mushrooms (I used dried that I reconstituted with water)
2 bay leaves
1 c of the mushroom water
1/2 tsp salt
3-4 cloves garlic, minced
1 tsp majoram
1/2 tsp thyme
Pepper to taste
▫
Cook wild rice according to directions on package along with bay leaves. After it's done, add mushrooms, water (you can use chicken or vegetable broth), and spices. Simmer until water is absorbed. In an era of cloud bread, cauliflower crust pizza, and grain-free dog kibble, it’s no surprise I often get this question.
.
I wanted to quickly talk about this because I truly have your best interests at heart and want you to make the best decision for you.
.
The messaging around grains right now is that they: cause inflammation, lower nutrient absorption, and make you fat.
.
Here’s what I’ve dug up on these topics:
1️⃣ Sketchy research is often cited re: the inflammation issue. Better research shows that whole grains have a neutral effect or reduces inflammation.
.
2️⃣ Research shows that whole grains don’t have a sig. effect on nutrient absorption. And actually many very healthy foods contain “anti-nutrients” (a big, common one is fibre!).
.
3️⃣ In the research world, whole grains haven’t contributed to weight gain, in fact whole grain consumption is usually associated with lower body weight.
.
If you have celiac disease, or grains cause you GI distress, or you just don’t like them, then by all means don’t eat them.
.
However, if you choose to consume grains then my advice is to eat mostly whole grains (brown rice, wild rice, quinoa, farro, rolled oats, etc.). Processed grains are a little bit of a different story, but can still be enjoyed in smaller amounts.

For most of my life, I always FELT pretty regular. Run of the mill, you know, just…a Medium. And I’m not talking about my clothing size, I’m referring to my intelligence, appearance, drive, my abilities. All of it. Just middle of the road. I never had any teachers tell me I was spectacular or talented/gifted at anything. I eventually tossed that aside, and started listening to the God within me that said, “…What eye has not seen and ear has not heard and has not entered into the heart of man, [all that] God has prepared (made and keeps ready) for those who love Him [who hold Him in affectionate reverence, promptly obeying Him and gratefully recognizing the benefits He has bestowed].” 1 Cor. 2:9. Those words resonated so deeply for me and my sister in our pursuit for success through HIM. 🙏🏽

Throughout my physical transformation, my mind and heart were also renewed. I finally arrived at the conclusion, I’m not crazy 😜 I’m meant for this! Every woman on this Earth needs to rise to the level God has set before her, and I want to help! 🙏🏽

I adapted this healthy veggie couscous by @inagarten for #grainsaladmonday . It’s a great recipe, I just subbed shallots for red onion and left out the golden raisins. Make the couscous by bringing 3 cups of chicken stock to a boil (you can use veg stock) with 1 1/2 tsp each of ground turmeric, ginger & cinnamon (superpower spices that are antioxidants and anti-inflammatory), 2 TBS olive oil, 1 tsp salt and 1/2 tsp pepper. Remove from heat, add 2 cups @bobsredmill golden couscous, cover and let sit 15 min. Dice 1/2 c pitted dates, one zucchini and one yellow squash, 2-3 carrots and a good size shallot. Fluff the couscous, add the diced veggies, a can of rinsed chickpeas and 1/2c sliced almonds, toasted. Dressing is 1/4c each of lemon juice and olive oil. Serve at room temp.

160g soy beans
2 cups rice 150g
400g mixed veggies (freezer bag)
1tsp turmiric
1/2 tspoon paprika
1/4 TSP pepper
4 tbsp nutritional yeast
4 tbsp soy sauce
4 tbsp wight vinagar
4 cups Veggie stock
2 cups water

1. Soke beans overnight.
Simmer beans on a medium low heat 20 mins with the lid on.

2. Add every thing but yeast and mix up. Lid it and leave to steam with water.

3. Bowl out. Keeps 3 days in frigde.

Let's Toast! To a new school year and my first real full-time semester. Summer was easy but I know the next few weeks of my crazy schedule will take some getting used to. With classes 5 days a week, working non-routine shifts and trying to squeeze some workouts in at one of any 2-4 gyms I have access to on a given day it'll be rough especially considering all of the homework, meal planning, prep and cleaning I need to stay on top of as well! But if I'm not the type of person who likes to be buys I don't know who I am - so bring it on! I'm so excited to have some REAL nutrition classes and learn more about this fascinating field. Can't wait to put those letters at the end of my name.

FIBRE | |  I came across this fantastic infographic whilst reading the Winter ❄️ issue of #ReFuel by @sportsdietaust . It outlines some really simple swaps that you can make in your diet if you’re struggling to hit 25-30g fibre/day. Fibre promotes bowel regularity 💩, assists in lowering LDL (bad) cholesterol, helps maintains stable blood glucose levels and boosts immunity. Remember though that more isn’t necessarily better and too much fibre can be as problematic as too little. Many of my clients possess perfectionistic traits so they would look at the above and try to apply this to every meal, every snack, on every day, every week 💯 It’s not realistic to aim for every meal to be ‘perfect’ in the way of macro & micronutrients etc 🤦‍♀️ It would take way too much time and energy and #aintnobodygottimeforthat ... not to mention it can contribute to a disordered relationship with food. So be sure to apply some of these tips but please don’t obsess over it!

This week I am embarking on a 100% macrobiotic diet. That means lots of grains, vegetables, seaweed, beans and Japanese flavourings. 
There is so much research into the benefits of Macrobiotics and it's healing effects.  It has been used as a complimentary therapy alongside cancer treatment for it's hugely beneficial antioxidant and phytonutrient content.
Macrobiotics is more a way of living than simply the food you eat. It's all about balancing the ying and yang of food as well as lifestyle. It's roots are mainly Japanese but the principles of living a balanced life with little to no refined foods, red meat or dairy makes it a very powerful way of living due to the benefits of the low inflammatory foods it champions.

The croissants, scones, and cookies. But, the caneles. Made with whole grain millet. I love these things. And, they’re that much better knowing the love and approach that guides Seylou’s baking. Soft and airy but the open crumbs are not as good as expected although it had 6h buck ferment at room temp, 30mins bench rest and retard overnight (for nearly 12hours). Next time, I have to let it proof longer, maybe 14 or 16hours to observe what will happens with its holes. 😁😁😁

Cereals can be a nutritious choice for breakfast because many brands are fortified (added) with vitamins and minerals that we typically don’t get enough of, such as B vitamins and Iron. But finding a healthy cereal can be tough! 
1. Choose a cereal with sugar less than 10grams and fiber more than 3grams per serving. 
2. Ingredients are listed largest to smallest. Choose cereals with the 1st ingredient listed as “whole grain” or “wheat” instead of milled grains. Also, avoid cereals with sugar (or other sweeteners) as the 2nd ingredient. 
3. A “bowl” of cereal can vary greatly depending on the size of your bowl! Check the serving size on your cereal. An average serving is 1 cup. 
4. Buzzwords splattered on the front can distract you from some not so great ingredients. Claims such as “high protein” or “omega 3” may not offer more nutritional benefit, especially if the cereal is still loaded with sugar. 
5. Avoid cereals with extra add-ins like nut clusters, granola, dried fruits, etc. A simple and plain cereal will most likely have limited ingredients, and have less sugar and calories. 
Add your own fresh fruit and chopped nuts and you’ll be well on your way to make breakfast great again!
