This is not a great picture, but I had to snap it before it was gone! My friend had surgery and I offered to bring him and his wife dinner. He requested a plant based soup!! He’s not #wfpb at all. In fact his diet consists of processed foods and animal products. So of course I was super excited, and a little nervous. I made a sweet potato and butternut squash soup. He LOVED it!! He asked what was in it and when I told him he was shocked how everything was healthy. He might not be completely changing his diet, but at least an interest is sparked. #vegan #whatveganseat #veganfood #plantbased #wholefoodsplantbased

Following up on yesterday's post about the mushroom risotto, here's one lovely Fall🍁🍂🍁🍂 meal it then became a part of!  I stuffed it into a roasted Acorn squash, and had some roasted Butternut squash on a bed of wilted spinach🌿 on the side. CHOCOLATE BANANA OATMEAL!😍Lightly made with a little cocoa powder and mashed banana, it becomes so cozy and delicious!🤤🍌🍫Adding some chopped dark chocolate (or any vegan chocolate) would be even more delicious because the chocolate will melt!!😻
Here is the recipe:
-1/2 cup of oats
-1 cup of water (or plant milk)
-1 tbsp of flaxseeds (optional)
-1 tsp of cocoa powder -1 ripe banana (half mashed and the rest for topping!)
-toppings of your choice!
Cook your oatmeal with your liquid of choice, mashed banana, flaxseeds and cocoa powder until you have your desired consistency!
Add all the toppings you want!
Enjoy!

Slightly Overcast today, so i’m about 2 steps away from lighting all the candles in the house and playing some cozy Jazz songs ☺️. Must prepare for Plant Based Festivities. Here’s a good, simple yet delicious one 👉🏻 Oven Roasted Root Vegetables with Cashew Cream Cheese, sprinkled with flat leaf Parsley,Celery leafs and Sesame.
Rinse, dry and cover sweet potatoes& beetroot with Olive oil. Cover in tin foil and roast in a 180• hot oven for about one hour.
Make a good batch of Cashew Cheese, I love @matthewkenneycuisine ’s recipe for vegan cheese💞 
Cool bloody down and let fall finally begin!

These cooler autumn days are perfect for immune boosting, medicinal foods such as Burdock Soup! 
Soups and stews are an easy way to incorporate wild foods into your diet. This soup is packed full of nutritious wild foods such as:  turkey tail mushrooms, dried stinging nettle, frozen wild leek leaves and my homemade immune boosting foraged mushroom stock (made with reishi and turkey tail). Burdock is a cleanser. It cleans your blood, liver, kidneys and skin. Pulling out toxins from deep within the digestive system. Eating it regularly, cooked or raw is a gentle tonic for the internal organs. On an emotional level, burdock helps breakdown complex issues and gives us momentum and drive to finish a project. 
Harvest first year plants in the fall when the plant stores all of its energy in its roots.

Like I mentioned, burdock can be eaten fresh or cooked. It can be thinly sliced and dried for Tea. Burdock is so wonderful for the skin I often add it to my baths and soak in it.

Burdock Soup Recipe:
Chop and sweat all the veggies in olive oil (onions, garlic, carrots, celery, potatoes and burdock.) while the veggies are cooking flavor with bay leaves, thyme, sage and salt. Then add the stock slowly followed by the leek leaves and turkey tail mushroom boiling on low for 20 minutes. Right before serving I added finely ground stinging nettle and chopped parsley. 
It was so tasty!! All 4 of my kids devoured this soup, that makes this mama happy! Health is wealth. .

These cooler autumn days are perfect for immune boosting, medicinal foods such as Burdock Soup! Soups and stews are an easy way to incorporate wild foods into your diet. This soup is packed full of nutritious wild foods such as: turkey tail mushrooms, dried stinging nettle, frozen wild leek leaves and my homemade immune boosting foraged mushroom stock (made with reishi and turkey tail). Burdock is a cleanser. It cleans your blood, liver, kidneys and skin. Pulling out toxins from deep within the digestive system. Eating it regularly, cooked or raw is a gentle tonic for the internal organs. On an emotional level, burdock helps breakdown complex issues and gives us momentum and drive to finish a project. Harvest first year plants in the fall when the plant stores all of its energy in its roots. Like I mentioned, burdock can be eaten fresh or cooked. It can be thinly sliced and dried for Tea. It’s a recipe from the #f45challenge however the base has thinly sliced pumpkin instead of eggplant because that was nowhere to be found.

This recipe serves 4
⠀⠀⠀⠀⠀⠀⠀
Ingredients
⠀⠀⠀⠀⠀⠀⠀
• 240g grass-fed organic beef mince
• 2 x 400g chopped tomatoes
• 1/4 pumpkin thinly sliced - remove skin
• 2 large zucchini thinly sliced - lengthways - pat dry to remove moisture
• 1 onion diced
• 2 carrots shredded
• Chilli flakes - to your taste
• 4 TBS tomato paste (no added salt)
• 4 garlic cloves crushed
• 1 TBS dried basil
• 1 TBS dried oregano
• 120g ricotta
• 120g tasty cheese or mozzarella
• 2 tsp olive oil
• Salt + Pepper

Method
⠀⠀⠀⠀⠀⠀⠀⠀
• Brown your onion, tomato, garlic in the olive oil.
• Add beef, tomatoes, herbs, seasoning - cook for 10 minutes.
• Layer pumpkin on bottom, add beef on top and then layer zucchini and repeat.
• Top zucchini layer with the cheeses and into the 180° oven for 40-minutes or until cheese is browned.

Serve with salad + karaut and you are onto a winner!

Vegetarians or for meat-free options, replace beef with brown lentils 💪🏼

This is one of the easiest ways to eat the rainbow, fill rice paper rolls with either rice (I used coconut rice), quinoa or rice noodles and add your favourite colourful veggies. The most essential element of this recipe is the dip (which makes it very exciting and is a perfect for any occasion). I made here three different dips and I can't decide which one is my favourite (recipe for all three dips is on my blog). 1) Mango spicy dip

I prepped some food for a few lunches this week with stuff that I had in the fridge and cupboard.
1. Roasted sweet potato cubes: peeled, cut and roasted as is in the oven for 30 mins at 200C. 
2. Black rice with veggies:
Stir fry onion, red bell pepper, carrots, mushrooms and brocolli in their own moisture for a few minutes. Add cooked black rice. Stir in sauce.
3. Sauce: soy sauce, brown sugar, peanut butter, sriracha.
4. Tempeh (@balifoodtrucksa ): cut into chunks, marinated in same sauce for 24h. Then baked in oven for 20 mins at 200C. .

One of our favorite fast, and healthy meals; Forks Over Knives basil pesto penne! Yes, it's supposed to be penne pasta, but I didn't have any so I made do. This recipe is oil free, and has lots of tasty ingredients! Basil, broccoli, garbanzo beans, garlic, unsweetened almond milk, tomatoes, a bit of salt, and a lot of fresh ground pepper go into this yummy pasta dish. 😀

One of our favorite fast, and healthy meals; Forks Over Knives basil pesto penne! Yes, it's supposed to be penne pasta, but I didn't have any so I made do. Just a bowl full of 🎃pumpkin 🍩donut holes! My favorite thing to make this 🍁time of year! Gotta get my butt back in the kitchen again on stories. What do you want to see turned 🌱vegan/plant based/gluten free? Recipe below. I made this ish up, so if you try it yourself, 🙋🏼‍♀️let me know how it works out for you! Hope it’s as good as mine were! .
1 1/2 cups almond flour
2 T coconut shreds
2 T coconut sugar
1 t cinnamon
1/2 t sea salt
1/2 t baking soda

1/2 cup pumpkin
1 T maple syrup
1/2 t vanilla extract

Mix wet with dry. If it’s too wet, add more flour by the tablespoon. Roll into 1 inch balls. Bake at 375 for 15-20 mins on cookie sheet with parchment paper. Melt tiny bit of coconut 🥥 oil on a plate. On another plate mix a few dashes of cinnamon, vanilla bean powder and coconut sugar. Dip lightly in coconut oil on one side then dab in cinnamon mixture. Day 3 is done!  I forgot to snap a pic of breakfast, but it ended up being a banana while we went to Ben’s 2 year wellness checkup. The picture here was lunch and it was super filling. I had a bit of an early dinner of another salad and just a plain baked sweet potato since I missed my grains for breakfast in the morning. Finally got a break at school, so got to take a break from eating exclusively canned soup with this delicious bowl. Baked plantains, jalapeño beans, paprika toasted brown rice, spicy red pepper, tomato, red onion, avocado, hatch salsa, and arugula.

Power-packed 💪🏻 Pesto 🍃over Whole Wheat 🌾 Linguine and a Kitchen-sink Salad 🥗. This insanely tasty pesto is made with green kale 🌿, spinach 🌱, basil 🍃, toasted pine nuts, walnuts, nutritional yeast, garlic, lemon 🍋 and a shake of S & P. Adding a little pasta water to the pesto, and then cooking the linguine with the pesto on low for just a few minutes really makes all the difference in the world 💯👩🏼‍🍳. The starch from the pasta water helps to coat and bind the sauce to the pasta.🤭 I woke up this morning craving this dish...again🤷🏼‍♀️! I can’t get this delicious and savory pesto outta my head. It was SO good 😛! A real go-to winner ❤️! And, any pasta dish in my house is always served with a kitchen sink salad 🥙. I had a post all written up and ready to go this morning, but ended up starting off my day on a really bad note and never got around to posting.
Long story short: I decided to try once more with doctors to maybe get some explanation for my chronic acid reflux, only to be let down once again. “Are you sure you’re not just depressed?”
I’ve come to realize that as soon as doctors start to feel challenged and unable to cover up the problem with medication, they throw it back on the patient and assume that the symptoms are all in their head.
Well, I wasn’t depressed until after the appointment. I already feel extremely guilty for losing all of my strength and being unable to keep up with my workout regime, and it only makes me feel worse when people have to point out that I’m skinny or accuse me of having a mental illness.
Yes, I am aware that I am underweight. No, I am not purposely under-eating. Unless you have experienced what it’s like to live with stomach bile continuously burning your esophagus, don’t question why I’m not eating enough and/or why I’m eating the things that I’m eating.
With that being said, after a meltdown and a long discussion with my mom this morning, I came to the conclusion that I have to take matters into my own hands and somehow figure out exactly what is causing the reflux. I have ideas as to what things may be bothering me, but I’ve been hesitant to avoid them both out of judgment of others and out of pure denial since these foods are typically very healthy for most people.
So...after I finish posting some pre-prepared pictures and a YouTube video, you may see some changes in my diet. I have no other choice than to make a change and at least see if I can get some relief. And if I don’t see any changes, then I can always reintroduce the foods back into my diet. After all, nothing is permanent and we are meant to continuously evolve✌🏼
Also...if you feel the need to judge my decisions, then simply unfollow. No one knows what it’s like to be me, and no one has any right to shame me for trying to get better.

I think in the last year plus that I’ve been plant based I’ve used vegan meat substitutes maybe once, I typically stay away from them as they are highly processed and usually not made of great stuff. But...for this dish it was a small amount for the large lot of soup and I was going for the flavor and variety of textures so I chose to use these vegan “Italian sausage” today. This soup was incredible, FULL of flavor and completely satisfying! I hope over the last year that I’ve been sharing I have shown, or am showing you, that this Whole Foods plant based life is anything but boring or depriving... 💚🌱🙌🏻 #thankfulgratefulblessed #wholefoodsplantbased #wholefoodsplantbasednooil #plantbasedmomma #plantbasedlife #isthebestlife #plantpower #foodisfuel #fuelwell

Lentil soup was perfect for the chilly weather tonight. Ugh, even just writing that makes me cringe but I knew I needed to get your attention.

There are SO MANY protein options out there and trust me, I know it can be overwhelming trying to figure out which protein to use and whether or not some are actually worth their sky high prices.

Truthfully, not all proteins are created equally. The easiest way for you to tell them apart is by paying attention to how it truly makes you feel.

Our fabulous human bodies work as a system. The way one part of our system is working will always affect the other systems and how efficiently they're doing their job individually and as a whole.

Typically, high quality protein powders that limit or eliminate highly inflammatory ingredients (like dairy, soy, artificial flavors-colors-sweetners, gluten) leave you feeling full, energized, internally "clean" (yes I'm talking regular healthy 💩 ladies) and lean!
⠀⠀⠀⠀⠀
Unfortunately, most protein powders - especially super cheap ones - are loaded with synthetic fillers (cheap, man made ingredients to "fill" the product but not actually provide any benefit to you) that can actually be detrimental to your health and typically leave you feeling bloated, backed up, tired and gassy.

Before I knew the reason behind this, I thought all protein powders just made you gassy & that it was normal, but it's not true. These feelings are physical evidence that your body is having a hard time digesting what you gave it.

The saddest part to me? Many people replace meals with these "healthy" shakes & lose weight - but also wind up feeling exhausted and backed up because they've lowered the amount of calories they're consuming (= tired) as well as the amount of nutrients they're getting daily 😭 (= headaches, moody) and when your body is stressed it creates more inflammation and bloating... the opposite of what you actually want!

Super simple and easy 🌱🐿️⠀
⠀
1/2 cup pumpkin puree⠀
1 cup almond milk or other non dairy milk⠀
1/2 cup water OR 1/2 cup coffee ⠀
6 dates, soaked in 1/4 cup of hot water for 5 mins. (Can also be sub. with maple syrup, coconut sugar, etc)⠀
1/2 tsp cinnamon⠀
pinch of nutmeg, clove and/or ginger ⠀
⠀
*If you are using dates, place all the ingredients in a blender and blend until smooth. You might want to strain the mixture if you're blender sucks like mine 😐 Place the mixture over medium and heat until hot, whisking every so often. Remove from heat and serve. Add cinnamon on top or ever better, coconut whip cream 😍🌱
