Today’s dinner! Quick and easy so we indulged with 2 different sauces. 😅😅
Gluten free pasta from @alcenerosg. The main ingredients are corn and rice and it tastes quite close to “normal” wheat base pasta. The best thing is that there are other weird or nasty ingredients inside. 😋
I drizzled more olive oil (because I love it. Lol) but otherwise the pasta is just tossed in organic vegan pesto sauce, some spinach and salmon!
Slide for the classic tomato-base sauce and a before pic of the dinner. I love the new easy and convenient tetra-pack tomato purée. Super convenient for my next glamping trip!
Products available at all major NTUC outlets locally.
Opening new series of the educational nutrition drama: eating out for a whole food plant based eater (sic! “vegan”, for the sake not having a better short name). Sushi. Sushi places are actually quite vegan friendly. Even when you have to be exact with your calorie budget. Plain rice, seaweed, onigiri, cucumber and avo rolls fit the bill perfectly. If a sushi place for a god damn weird reason doesn’t do some of this stuff, that place should be disqualified as a sushi place, then avoided, then abandoned and finally forgotten 😇
We spend so much time rushing around and distracted by things that we often don’t give those we love the most important thing we can...our time. So glad to have a week to spend time with my daughter, my mom and her husband. Adventure, fun and exploration has begun. Who do you want to spend time with?
😯😯 Prawn tacos for dinner last night to wrap up a fabulous long weekend!! Cooked the prawns with some organic grass fed butter that I added garlic, chilli, lemon zest, Italian parsley + basil to 🤤 @tiopablonz corn tortillas, homemade slaw mix with cabbage, lettuce, radish, more of the herbs, red onion and a dressing made from tahnini, ACV, fresh lemon and lime juice + a splash of sesame oil! And of course some avo, toms and cucumber to top it all off!! So fresh and yom )especially after the weekend I’ve had... 🥂🤪)
Happy Tuesday! I can’t believe term 4 is almost over. The kids are having their year end concerts soon. What’s new with everyone?
Today’s yumbox samon loaf, grapes/blueberries, home made grass fed beef jerky, apples and 1/2 mandarin.
Enchilada Lasagna 🌶 This is a mix between ballroom dancing and salsa dancing 💃🏼 A little Italy and a little Mexico. Homemade flavored almond milk by @delight.fuel 💜 repost @bestofvegan
1 cup almonds, 1 pitted medjool date, 1/2 cup shredded coconut, 1/4cup frozen blueberries, 1/4 cup frozen raspberries, 1/4 cup frozen blackberries.
Method: soak almonds for at least 4 hours in water. Drain and rinse well. Mix with dates, shredded coconut and 4 cups of filtered water in a high speed blender until almonds are broken down and the liquid looks creamy. Strain through a cheese cloth or sieve. Add blueberries to 1/3 of the almond milk and blend. Do the same with the raspberries and blackberries. Store in fridge for up to 3 days.
Anyone else need some pasta to chase away the #mondayblues ? Used my homemade pesto on some @eatbanza pasta today. This is a combo of pasta, chicken sausage, asparagus, peas, a little Parmesan, and my pesto. Hits all my macro goals and is seriously 😋 😍.
I completed my Integrative Nutrition Health Coach requirements in September, and almost two weeks ago, received my certificate in the mail.

These ladies are just some of the HARDWORKING rockstars on our team making their dreams happen. 🎈🎈 I see women who are empowered and healthy. ❤️ I see women who are moms. I see women who I now call friends. I see women who are doctors, fitness professionals, hair stylists, recruiters, medical assistants, certified nutritionists and so much more. 👍
I am blessed to know them and their dreams‼️ I don’t take it lightly. It’s my mission to help them attain all of their goals. And we have the tools and the vehicle to do so too, which lights me up to no end. 😎
Each of these women has earned up to 4 figures this week. And in the process they all have achieved better health, too. That is a total win win in my book 📚‼️🙌 Many are building this alongside their careers, which is perfect. 👌The current economy and the idea of “job security” is a thing of the past. How beautiful to find a way to create that security yourself. 🎈
I am all about empowerment, creating choice and financial security. 🙌
I love ❤️ to celebrate strong women. Nothing lights me up more than watching women soar with this opportunity so let’s cheer them on.
Healthy isn't just about diet and exercise. There's a lot more involved. One thing is trying to be a positive HAPPY human. Here are a few reminders to help you achieve a higher level of happiness. 1) Be appreciative. Everyday think of things you are grateful for in your life. 2) Ease up on yourself a little. Being perfect isn't easy. Good enough is great!! 3) Do the things you love. No, not when you retire. Today!! Dance in your kitchen. Or Plan a pottery class or a hike for sometime this week. 4) Choose happy friends. Complainers and negative people can zap your energy. 5) Spend your money on others and with others. Be generous. Take your friend out to dinner, or to a concert. Get someone a gift. That will make you happier than new clothes or a new gadget. 6) Concentrate on being happy with what you are doing in the moment. Are you going on a hike? Take a deep breath, see how the rays of sunshine stream through the golden leaves, stop and smell the roses. 7) Enjoy the funny stuff! 😂laughing is good medicine. It makes you feel calm by canceling out the stress cortisol. So crack a smile right now!! 8) Reframe obstacles. No one goes through life without obstacles. When one pops up, reframe it as a new challenge that you can successfully handle. Not as the end of the world. 9) Be kind to others. Practicing random acts of kindness gives everyone involved a happiness boost! ❤️ #kindness#happiness#positivepeople#wholefoodplantbased#eatyoveggies#plantstrong#wholefoodsdiet
One of my favorite go-to dishes! Very easy to prepare and make.
One Pot Herby Millet & Chickpea with chopped kale, diced avocado and sliced grape tomatoes. (Millet is another great rice replacer with a unique flavor and also packed with nutrients.)
Eating veggies has become my passion for so many reasons... 1 reason is because I have witnessed the food-freedom that comes with learning to eat veggies most. If you are a Yo-Yo dieter or you struggle with overeating, binge eating, an eating disorder or you just want to lose some weight without depriving yourself, WE NEED TO TALK! There is a program that is setting people free (including myself) from struggles with food or weight! It’s powerful, It’s simple, It changes your mindset and it will change your future. ➡️ Swipe to read a testimonial I received this weekend!
I forgot to share the weekend’s grocery haul with you!
So many delicious things in here, including some treats that we don’t normally buy (hello, Italian pasta and real sourdough!).
You might be wondering where all the veggies and proteins are, though? Well, we just found out that our grassfed cow share is ready, but the freezer is packed!! So we are working through all the frozen chicken, beef, and fish I had stocked away, and eating up a bunch of the summer fresh veggies that I froze at the height of growing season.
Do you ever go grocery shopping in your freezer? What’s the best surprise you’ve found in there?
Been worrying so much about the future and the past. But really, it is only in the moment of here and now where we can change our mistakes from the past and set ourselves up for a successful future. It’s the moment where we can forget the past and the future and fully enjoy life and love. What does being present mean to you? ✨ comment below, let’s talk about it!
We are always so busy reaching out grabbing this and that, doing so many things, giving with all we have. Sometimes, we need to stop and take care of our hearts and soul. Remember, we only can truly give and produce when we are fulfilled and care for ourselves first! What are your thoughts on this? Do you think self care and self love is important to your wellbeing and success?
We put so much pressure on ourselves to do everything in one day, everything everyone thinks we should do, everything society demands. I say, take the pressure of yourself to do everything and aim to do anything you set your mind to. This mindset takes the stress off our bodies and minds and propels strength and determination into specific things we need/want to achieve! Do you think this perspective will change the way you get things done and what you chose to do? Let’s start a conversation about this!
Whatever you’ve been dreaming of or wanting to let go of, let today be day 1 of starting the process. You have the power to decided AND act on that enough is enough and it’s time to make a change. Gear up because day 1 will make all the difference ✨🙏🏽you got this! Muscle on, whether that be mentally/physically or both💪🏼
People talk about mental health and say anxiety is something you’ll always have to deal with once you have it. I’m here to tell you, anxiety doesn’t have to control your life. I believe, that through discipline, strengthening the mind, removing causative factors, and being selfish (meaning choosing to care for your self and putting your health first) there can be complete relief. What are you thoughts on this? Leave thoughts below:
It saddens me to see many IG stories and posts where women apologize for their bodies, for anything from head to toe to they way they pose. Don’t apologize ladies! This only feeds insecurities in your mind and teaches your mind not to respect your body and constantly make excuses for it. Besides, chances are people don’t notice the little things that bother you and mentioning them only brings negative attention and distracts from the message you want to share! BODY LOVE 💕! Be gentle with yourself, be kind to your self and teach your mind to follow through with respect and admiration for the beautiful woman you are! DONT APOLOGIZE FOR BEING HUMAN 🙏🏽
