I drizzled more olive oil (because I love it. Lol) but otherwise the pasta is just tossed in organic vegan pesto sauce, some spinach and salmon!

Last thing on my list tonight. I made a choice this morning to forgo my reading in favor of a little extra time in bed as my body was sore for my booty kicking Pilates class yesterday. 
Lately I have reading and listening to a lot of different people talk about listening and how how helping others helps us to be better people. Deep down all of us want to be seen and heard, what better way to honor that internal desire then to do that for other people. 
I’ve really been pushing myself to be a better listener and to actually hear everything a person is saying not just the answer I am looking for. This has not been easy for me but I understand the value it brings and how much I can help out others by just being a good listener. 
Taking a moment to care about what matters to someone can change a persons life or at least their day.

Sushi places are actually quite vegan friendly. Even when you have to be exact with your calorie budget. Plain rice, seaweed, onigiri, cucumber and avo rolls fit the bill perfectly. If a sushi place for a god damn weird reason doesn’t do some of this stuff, that place should be disqualified as a sushi place, then avoided, then abandoned and finally forgotten 😇

😯😯 Prawn tacos for dinner last night to wrap up a fabulous long weekend!! Cooked the prawns with some organic grass fed butter that I added garlic, chilli, lemon zest, Italian parsley + basil to 🤤 @tiopablonz corn tortillas, homemade slaw mix with cabbage, lettuce, radish, more of the herbs, red onion and a dressing made from tahnini, ACV, fresh lemon and lime juice + a splash of sesame oil! And of course some avo, toms and cucumber to top it all off!! So fresh and yom )especially after the weekend I’ve had... 🥂🤪)

I am officially labeling this fall the craziest, busiest fall we’ve ever had! While I might be a little quiet on IG, you can be sure I’m shoveling...errrr...
enjoying colorful plates like this between activities. This salad has been on repeat for over a week now. It feels like the perfect transition dish from summer to fall. .
Recipe:
• @olivias_organics spring mix •shredded carrots
•sliced fennel
•red grapes
•seeds-sunflower, Pumpkin & hemp hearts
.
Dressing:
•3 tbsp olive oil
•1 tbsp apple cider vinegar
•1 tsp grain mustard
•1 tsp honey •pinch (maybe 1/8-1/4 tsp each)salt, pepper, garlic powder & turmeric
.
Add all ingredients to jar, cover and shake until combined. Drizzle in salad. Refrigerate extra.

Enchilada Lasagna 🌶 This is a mix between ballroom dancing and salsa dancing 💃🏼 A little Italy and a little Mexico. It's so tasty 😋 I only share recipes with y'all if all of my boys want me to make it again. So here it is. Layers: 1) Corn tortillas 2) Vegetarian Refried Beans 3) Sautéed Veggies (I used kale, corn, tomatoes, squash, onions, bell peppers, mushrooms) with Smoked Chipotle Seasoning, cumin, salt, oregano. 4) Corn Tortillas 5) Mexi Soy Ricotta (tofu, salt, garlic powder, cumin, nutritional yeast. Crumble and mix with hands) 6) Layers 1-3 again 7) Corn Tortillas 8) Enchilada sauce 9) Top with Assortment of veggies (I used spinach, green onions, tomatoes, and olives) 10) Bake at 350* for 30-40 minutes till bubbly. 1 cup almonds, 1 pitted medjool date, 1/2 cup shredded coconut, 1/4cup frozen blueberries, 1/4 cup frozen raspberries, 1/4 cup frozen blackberries. 
Method: soak almonds for at least 4 hours in water. Drain and rinse well. Mix with dates, shredded coconut and 4 cups of filtered water in a high speed blender until almonds are broken down and the liquid looks creamy. Strain through a cheese cloth or sieve. Add blueberries to 1/3 of the almond milk and blend. Do the same with the raspberries and blackberries. Store in fridge for up to 3 days.

I am SO glad I finally found a community that helped me KICK my unhealthy cycle with food to really truly understand how to develop the strongest most amazing relationship with it 🌱

Rather than stressing over calories, what, when or how to eat, measuring, the damn scale.
.
I started to instead, JUST focus on choosing foods that made my feel energized, focused, HAPPY and that were colourful and fresh and WHOLE.
.
As a result, I was finally able to ditch the pills, toss my scale, and for the first time in my life I decided to listen to my body, to fuel it as though I loved and respected it more than anything...
.
And I have NEVER gone back to that nasty cycle of torturing myself or my body with food since.

That is the most freeing feeling in the world as you get to watch your body heal, recover and BLOOM the way it always should have. 🌸

Healthy isn't just about diet and exercise. There's a lot more involved. One thing is trying to be a positive HAPPY human. Here are a few reminders to help you achieve a higher level of happiness. 1) Be appreciative. Everyday think of things you are grateful for in your life. 2) Ease up on yourself a little. Being perfect isn't easy. Good enough is great!! 3) Do the things you love. No, not when you retire. Today!! Dance in your kitchen. Or Plan a pottery class or a hike for sometime this week. 4) Choose happy friends. Complainers and negative people can zap your energy. 5) Spend your money on others and with others. Be generous. Take your friend out to dinner, or to a concert. Get someone a gift. That will make you happier than new clothes or a new gadget. 6) Concentrate on being happy with what you are doing in the moment. Are you going on a hike? Take a deep breath, see how the rays of sunshine stream through the golden leaves, stop and smell the roses. 7) Enjoy the funny stuff! 😂laughing is good medicine. It makes you feel calm by canceling out the stress cortisol. So crack a smile right now!! 8) Reframe obstacles. No one goes through life without obstacles. When one pops up, reframe it as a new challenge that you can successfully handle. Not as the end of the world. 9) Be kind to others. So we are working through all the frozen chicken, beef, and fish I had stocked away, and eating up a bunch of the summer fresh veggies that I froze at the height of growing season.
