Need an easy #Whole30 side dish...look no further 🤣🤣. It’s as simple and easy as it gets. The dish is literally 3 ingredients! *Drumroll please*.......#Whole30 EBB Potatoes

-mini potatoes or potato chunks
-everything but the bagel seasoning (I use @traderjoes version)
-roasting oil (I use @chosenfoods avocado spray)
Start by preheating your oven to 425F. Next wash your potatoes and cut them if you so desire. I sometimes cut the small ones but this week I didn’t. Generously spray the potatoes with the avocado oil and sprinkle the EBB. I then hand tossed and sprinkled more EBB. I baked roughly 45 minutes but I would say to always check the potatoes before removing from the oven since they can be finicky.

I’ve been battling an awful cold for the last week and the only thing I want in this world is soup 🥣 I took the lazy girl route last night and had some tomato soup from Trader Joe’s and while it was deliciously creamy, the dairy didn’t sit well with me, and actually made me feel worse than when I started out! •

I remembered this morning the huge bag of tomatoes my Grammy randomly brought to me over the weekend (as Grammys do) and decided to make my own tomato soup; one that will cure my sickness-blues and won’t leave me with any discomfort! 🍅 I’m also going to freeze this baby for next time I’m sick so I’m a step a head of the game. Tomatoes (I used about 4 - 5 cups, halved)
1 small white onion
4 cloves of garlic
1 spring of thyme (plus some to garnish) 
1 tbsp fresh chopped basil 
2 c chicken broth 
Salt and pepper

Preheat oven to 450
Line baking sheet with foil, add tomatoes cut side down and drizzle with olive oil and generously add salt and pepper 
Add to oven and let roast for ~30 minutes 
Whole tomatoes are roasting, add cut onion and garlic to soup pan with some olive oil and sauté on low. Season with salt 
Once onions and garlic are cooked down and juices released, add chicken stock and simmer. Taste, and add black pepper as needed 
Remove tomatoes from oven and add to pot
Slowly add in herbs and let simmer for 15 minutes
Remove from heat and add to blender
Blend to desired consistency *if you like a more rustic tomato soup, blend only half of your mixture! Then you’ll have a solid base with some chunks mixed in. I went for full blend for a more creamy consistency 😋

In 2016 I started @weightwatchers as a means to win a weight loss competition at my BF’s work, and I haven’t stopped my health journey since. 14 months ago, I joined @orangetheory and and I can’t put it in any other words: Orangetheory changed my LIFE! I feel healthier, stronger, and more comfortable than ever before. I wish I knew what I know now back in 2009, but if there was anything worth the wait, it is feeling this AMAZING everyday ❤️

{link in bio} There is no such thing as a “good” food or a “bad” food!! Any diet that tells you otherwise is lying. I’ve had plenty of people tell me that these fad diets work for them- like the blood type diet, whole 30 or alkaline diet. That’s the thing though- You will lose weight on these diets because you are restricting yourself, often times from nutrient-rich foods!! For example, the whole 30 diet cuts out beans and dairy... which are both nutritious! 
These diets are not sustainable long-term and don’t help people learn a healthy eating pattern.
The best “diet” is the one where you eat plenty of fruits, vegetables, grains and protein (both from plants and animals per your liking) and doesn’t restrict you from ENJOYING your food. Also- a little exercise never hurt anyone 😉

At around 10 am, it felt like my stomach was eating itself. Gotta listen to my body! I did have a little bit of a green smoothie this morning and it obviously wasn’t doing much for me! It may have something to do with working out yesterday and my body is like what the heck is going on?? 😆😆 Time for something substantial. This white sweet potato, pastured eggs and avocado did the trick. 👊🏼

I’m eating @skinnytaste paleo picadillo on repeat alllll week long. I love it because it fills my belly and uses loads of colorful veggies like farm-fresh tomatoes, green peppers, onions, and local grass fed beef that I get in my Hen House CSA bag. I like to serve my picadillo on steamed spaghetti squash  and I use a whole jar (small size) of capers and brine because it is my favorite part! This recipe is easy to make and only requires one pan - I use my wok!

We love a good soup, especially one with flavors from ginger, coconut, lime, and chiles! Check out what @cleaneating360 came up with! You can choose to add our keto-friendly noodles into the soup or serve for dipping on the side as shown here. .

Chicken Laksa Soup with Shirataki Noodles for Dipping .
.
🔷1 package of Miracle Noodle Angel Hair .
🔷2 garlic cloves
🔷1 inch of ginger
🔷1/4 cup of coconut oil (or ghee)
🔷2 chicken thighs, sliced.
🔷2/3 cups of coconut milk (more if you like your laksa soup thicker)
🔷2 cups of chicken stock
🔷4 tablespoons of fish sauce
🔷2/3 of lime (to taste)
🔷1 red chile (optional)

DIRECTIONS:
1. Finely chop garlic and ginger (and optional red chile). Mix with coconut oil. .

2. Sauté the mixture in a heated saucepan till fragrant. .
.
3. Add coconut milk and chicken stock. Bring it to a boil and simmer for 10 minutes. .
.
4. Add chicken and fish sauce. Bring it back to a boil and simmer again for 5 minutes. .
.
5. In the meantime, drain, rinse and boil Miracle Noodle in a boiling pot of water for 5 minutes. Drain and place in a bowl ready for dipping in the Laksa soup. .
.
6. To serve: Ladle the soup in a bowl. Top with cilantro and green onions. Squeeze lime on top to taste. Dip Miracle Noodle in soup and enjoy! .

Since I de-activated my Instagram account over a month ago, Day 100 happened 1 week ago on August 7th.
That’s 100 consecutive days 🙌🏼🙌🏼 of moving my body (aka exercising).
80 of them happened at @equinox (the primary gym I go too) and the other 20 happened at my 2nd gym.

I would say that those 100 days have been truly transformational. Everything I learned (which was a whole lot) has been life changing (for the better obviously).
It ended up being not about the daily exercise but rather about how the mindset of these 100 days has transformed me.

🔹In these 100 days, I read & listened to countless personal growth books
🔹Studied a whole lot on nutrition
🔹Studied a whole lot on fitness
🔹Pushed my cardio speed to uncomfortable levels
🔹Completely changed my nutrition, which started as I did research & realized that the best thing for ME (because proper nutrition looks different on everybody since some people have food allergies & food sensitives that others don’t have) was to do Whole30. I am currently on Day 22 and in my case it means 22 days of only eating home cooked meals which I prepared myself. I decided to not eat out for those 30 days. I eliminated dairy, beans, soy, processed foods, sugar, grains, peanut butter & certain oils.

The best 2 things I got out of these past 100 days has been to gain mental strength (& to maintain it) and where I am now with nutrition. With those 2 things came this level of freedom that’s hard for me to put into words. I can only describe it as that freeing feeling that I have been looking for my whole life & of course I’m stoked that I’m now living it.

Now it’s upwards & onwards to new goals I’ve already set for myself.

One of my favourite ways to use up leftover veggies is in a quick stir fry with Asian noodles 🍜 This bowl is gluten, dairy & grain free (the noodles are a blend of green beans & peas 🙌🏼). It’s loaded with veggies like mushrooms, kale, carrots & broccoli 🥦 I sauté everything in tamari, red curry paste, touch of honey, hot sauce & S&P. One of my favourite ways to use up leftover veggies is in a quick stir fry with Asian noodles 🍜 This bowl is gluten, dairy & grain free (the noodles are a blend of green beans & peas 🙌🏼). It’s loaded with veggies like mushrooms, kale, carrots & broccoli 🥦 I sauté everything in tamari, red curry paste, touch of honey, hot sauce & S&P. Transformation Tuesday Mindset Edition 💭

First off let me start by saying that there is no right or wrong way to have a bikini body! For YEARS I was so self-conscious & hated my body SO MUCH to even consider wearing a 👙 We went to Spain twice a year and in all my family holiday pics I am in knee length shorts & a top 👎🏻So what has changed? Is there some magic 💊 for body confidence? Real talk - if I was in the same place mentally as I was this time last year I probably wouldn’t have even posted this picture. I would've picked out every little flaw but that “flaw” that we hate in ourselves is the thing another woman wishes she had! Yes I may have dropped a few pounds but honestly I know this wasn’t the answer to feeling comfortable in my body - the 🗝️ was changing my mindset 🤔

A LOT of people believe (I used to be one of them) that having abs/being skinny will make you happy. Well, I hate to break it to you guys but that is a BIG FAT MYTH because your worth is NOT tied to a body part! If you are waiting for the scale to hit a certain number before you are happy or before you feel complete we NEED to change that! Having abs or the number on the scale doesn’t define you and while you are busy chasing that number life is passing you by! STOP waiting to be happy – why not be happy right now? The only moment you have control over is this one RIGHT NOW. You can’t change the past and you don’t know how things are going to go down in the future so choose to be happy NOW! Embrace the person you are from the INSIDE OUT and I promise you big things will start to happen!🌈 So while I do workout and eat healthy every day, it is no longer with the intention of or should I say obsession with getting abs/being skinny. I do it to feel happy, to release those endorphins, to relieve stress, to feel strong and because my body deserves it 😊

I may not have reached my end goal yet but I will make darn sure I have a blast getting there! Exercise is no longer a punishment, it is something I enjoy & getting to share it with my fit girl gang makes it all the more sweet! Your choice of toppings, whatever you like! 
Guacamole, salsa, avocado slices, tomato slices, deli meat/sausage, cucumber slices, nut butter, coconut butter, or just plain ghee and Himalayan salt.⠀

Instructions⠀
PREHEAT oven to 400. Line a baking sheet with parchment paper.⠀
SLICE sweet potato into 1/4″ an inch slices (a mandolin slicer helps to make uniform slices). Coat both sides of sweet potato with oil and lightly sprinkle with salt.⠀
COOK for 30 minutes, flipping after 20 minutes.⠀
SET oven to broil and continue to cook for one minute on each side, until toasty.⠀
TOP with your favorite combinations of ingredients listed above.⠀

Why do i live a ketogenic lifestyle with whole foods? ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I often get asked why I am eating such a restrictive diet. Well it is because I just feel so strong, fit, energized and healthy with it.  The whole day I have steady energy with no afternoon slumps. I can concentrate much better and can think clearly. I don’t feel bloated and my skin is glowing. Sometimes when I eat more carbs and don’t look so much what I am eating, I feel immediately extremely tired and bloated and need for sure to rest or make a nap after lunch. Ich kann mich super konzentrieren, klar denken, meine Haut hat einen gesunden Glow, ich fühle mich nicht aufgebläht und habe ein sehr starkes Immunsystem. Wenn ich manchmal abweiche und sich nach und nach mehr Kohlenhydrate einschleichen, fühle ich mich schnell müde, aufgebläht und ungesund. IN A CASSEROLE DISH ADD TOGETHER: - 1 med spaghetti squash cooked (cut in half lengthwise, scoop out seeds, and bake face up at 450°F for 25min)
- about 2 cups steamed brocoli - 7 slices of cooked nitrate free bacon 🥓

Pour cooked sauce over casserole dish.  Heat in the oven on 400° until warm or save for later! 👊

Hope everyone’s had an amazing weekend so far 💕 I’m unfortunately stuck working all day, but that didn’t stop me from waking up early & banging out some of these delicious bad boys. I noticed I had some almost too ripe nanners 🍌 hanging around & had just picked up a jar of @wild_friends maple sunbutter.. & the magic freakin happened. These are little bakery style maple sunbutter chocolate chip banana muffins. & they are INCREDIBLE. 💯 the maple sunbutter gives them such a yummy twist, I can’t even explain the deliciousness. if you’re going to bake something up for a Sunday brunch, this should be it!

Recipe:
3 ripe bananas
3 @vitalfarms eggs (flax eggs if vegan)
1/4 cup coconut sugar
1 tsp vanilla powder or extract
Dash of cinnamon (optional)
1/2 cup @wild_friends maple sunbutter (you can use any but butter)
1 cup almond flour 
2 scoops @vitalproteins collagen (optional) 
1/2 cup hazelnut flour (or more almond)
1/4 cup tapioca flour
1 tsp baking powder
1 tsp baking soda 
1/4 tsp sea salt
1 @hukitchen chocolate bar chopped
Chopped walnuts (optional)

Full cupcake liners 3/4 way full with batter. Bake at 350 for around 20 min. Keep an eye on them! Let cool & devour these bad boys. 🔥
