A unique single malt whisky that reflects an adventurous and collaborative journey.
Nose: A faraway grass fire leads into sweet pineapple and charred lemon. Varnished oak drives into toffee apple with a heavy cocoa chocolate.
Palate: Liquid lychee paves the way for kiwi fruit and raspberry jubes. The fruits develop into a milky banana milo, brewed over a campfire.
Finish: Strong American Oak vanilla evolves to honeycomb enveloped by chocolate, which lingers before transforming into dark chocolate with hints of smoke.

The words “commemorative” or “anniversary” on a whiskey bottle always sparks curiosity and interest in trying these types of offerings. The Knob Creek 25th Anniversary is no exception and delivers the goods in this single barrel bourbon. This was our third tasting in our September line up. The particular bottle we were able to sample was 120 proof, aged around 13 years, and was surprisingly smooth despite the higher proof.
Nose- Oak leads the way followed by pipe tobacco and caramel. The 120 proof rears its beasty head right off the bat. Not overwhelmingly or in a bad way. But man is it there.
Palate- oak shows up early and often with this bad boy. Then there's leather, tobacco, and spices. It's fairly tannic and dries your mouth out. And then.... kaboom the alcohol kicks in and wipes it all away. But those brief moments before the bomb goes off are truly glorious.
Finish- one more visit from the oak along with spices and tobacco. The finish is long and luxurious.
Overall, this was a great pour from the Jim Beam family. Cheers everyone!
The Single Cask Tomatin 11 year old bottled at 55.2% ABV. This whisky has been aged for 11 years in ex-Bourbon casks and finished for 3 months in Olorosso Sherry firkin cask.
