✅Smoking time: 15 minutes
1. Put 6g(1.5tbsp) Sakura(cherry wood) smoking chips and one rosemary spring in the tray.
2. Smoke for 15 minutes.

Everyone knows that I dislike summer. The summer solstice is no exception. So why am I exceptionally happy and giddy today?
1. I was able to attend @highlandparkus whisky tasting.
2. I was able to meet the incredible @iskra and explain to people why I was excited to meet her.
So yeah, overall, it's been an amazing solstice.

Whiskey: Woodinville Straight Bourbon Whiskey
Country/Region: USA/Washington State
ABV: 45% / 90 proof
Age: NAS (5-6yr)
Color: Deep rusted red amber 👃: Deep, woody black cherry balanced by light spice and brown sugar. Enveloped in oak throughout (craft bourbon, you know?) 👅: Fruit forward, with hints of tropical fruit transitioning to strong cherry on the middle taste. Spice comes in middle to late on the palate with hints of brown sugar and oaky char. 🏁: Fairly mild finish over medium length. Lots of cherry and char, closing out with oaky tannins and chocolate at the end. Finish reminds you how young it is.
As a native of Washington State, I was very excited a few years back when I learned that we had our own real deal distillery. Visiting these guys, tasting their product and hearing them talk about their approach, I get why Moet Hennessy considered them the real deal (and subsequently bought them and invested in expanded operations). Tasting the whiskey simply confirms it. I generally don't like overly oaky bourbons but the rich, full cherry notes outweigh that "new barrel" profile. Using both a column and pot still, they have lots of experimenting that they're doing and I am very excited to see where their adventures take them. This is also loads better than their original "micro barrel" releases, which were just too woody for me to enjoy. Since I've visited, they released a port finished bourbon that I can't wait to get my hands on. Look out for this in your local store as they start to scale - it's a solid bourbon that is worthy of a taste.
