This morning while I was making my breakfast, I was thinking of all the reasons why I was so stressed out today. As I started eating my food, those thoughts were still playing in my head.
Then I remembered that the vibration of your thoughts become the vibration of your life, and that your food and a drink absorb vibration very easily. When they do this, you are absorbing that vibration back into your body. You are literally feeding the cycle of negativity.
So I decided to flip the script and I put on some biannual beads in my headphones, and I spent the remainder of my breakfast thanking the food for feeling my body with energy, telling it how much I love it, telling my body that it is accepting this food with love and grace. I also thanked all of the farmers and workers who were in advertently part of this process, and imagined the journey of the Individual ingredients from their planting to arriving on my plate and into my body.
Needless to say, this was one of the best meals I’ve ever had 🙏🏼
Today I am grateful for this amazing trip to the mountain. For being able to spend the day in nature. For a day full of laughs. For feeling the cold and appreciating the comfort of a hot chocolate afterwards. For getting to touch the first snow in here. For the little snowball fight we were able to make at the top of the mountain. For the breathtaking views. And for such caring (and, at times, crazy) people I went with.

I'm serving it up again just because, that's the beauty of stews! 😃 Maybe it's a busy day, maybe it's a lazy ass day, maaaybe you got 10 mins to eat before practice, ooor all day to laze about in your PJs.
Both are necessary in life, but on those days maaaybe you don't wanna cook. So what do we do? Order out? Ya cause so many places cater to vegans 🙄😏 No, we reach into the freezer and pull out that vegan stew you made 2 weeks ago, stew to the rescue!
I agree no one want to eat the same food two days in a row, unless it's my food.😉 When you portion a stew and freeze it, it's a vegan frozen dinner for the active lifestyle. I know you are active, because you're vegans and vegans have more energy then they know what to do with. That doesn't mean you have all trhe time to cook food that fits our diet.
So remember don't look at leftovers as something you screw your nose up at. Look at leftovers as something you can have later, in a pinch. Something that keeps you from eating that quick and easy snack, that likely isn't good and healthy for you.

For this recipe you need
Coconut milk 1cup
Coconut cream 1tin
Maple syrup 2tsp
Vanilla extract 1tsp
Fruit of your choice
I used melon and strawberries
Blue ocean blend 1tsp @unicornsuperfoods
METHOD ▪ Soak chiaseeds over night with vanilla extract 1tsp and Maple syrup in coconut milk .
Make sure you stir frequently enough time to time till it gets nice and fluffy in texture. ▪Whip coconut cream with tiny bit of Maple syrup and vanilla extract and layer it as you see in the picture. ▪ Mix Ocean blend in coconut milk and then mix chiaseeds depending on what layer do you want . If you want to keep it simple then add entire ocean blend powder in chiapudding and mix well. Then layer it with coconut cream .
