Confession: I had not eaten an egg in about 10 years. Of course I cooked with them and baked with them and I prepared them all the time for Shaun and the boys but no matter how good they looked, I didn’t like them.
And to be honest, it bothered me that I didn’t like something that is so cherished in the culinary world. 
Until now!!! All of a sudden a soft boiled egg with grey salt and coarse pepper is my jam. Shaun loves them anyway you can cook them. Jakey only likes the white. Nico eats a hard boiled egg daily. 
What’s your favorite way to eat your huevos?!?!
Is there any food you went forever despising that all of a sudden you crave?? Oh and a side note on Nico: it is not uncommon to hear him walking around the house saying “Nico eggy yumyum”

Don’t be dissuaded by the color, y’all.  It’s just the Thai-inspired green herb marinade of Fiona’s Green Chicken by @nomnompaleo.

It’s super fresh and is juuuust different enough to give your tastes buds a pleasant little surprise! (Pssst... It’s the mint).

Ingredients:

1 medium sweet onion, coarsely chopped. About 1 cup.
1 1/4 cups packed fresh basil.
1 cup packed fresh cilantro. Leaves and stems.
1/4 cup packed fresh mint.
3 cloves of garlic peeled. 
1/4 cup Paleo-friendly fish sauce. (I like Red Boat). 2 tbs apple juice.
1 tsp Aleppo or red pepper flakes.
1/2 tsp freshly ground black pepper. 
Finely grated zest from 1 medium lime.
3 pounds skin-on thighs or drums.
2 limes cut into wedges. (Optional). 1. In a blender, purée the onion, basil, cilantro, mint, garlic, fish sauce, apple juice, Aleppo pepper, black pepper, and lime zest. The mixture should be thick and smooth, with no chunks. Taste and adjust for seasoning.

2. Place chicken in gallon ziplock bag. Pour in marinade and squeeze air out of bag before sealing. Marinade in refrigerator for at least 1 hour or up to a day.

3. Take chicken out of refrigerator 
at least 30 minutes before cooking to come to room temp. 
4. If oven roasting: preheat to 400 degrees. Place a wire rack on top of foil-lined baking sheet. Arrange chicken in single layer on rack, and roast for 35-40 minutes, turning the chicken once at midpoint.  Broil for an extra 2-3 minutes to get skin nice and crispy.

If grilling: arrange chicken in medium-hot grill and cook for about 25 minutes, turning every 5-7 minutes. 
5. Chicken is ready when internal temp reaches 170 degrees or when juices run clear. Serve with lime wedges.

Pork Carnitas Salad (Whole 30/Paleo approved!) The pork carnitas were made using @northshoreflavors Food Truck Carnitas mix, following the recipe on their website. Watch me make it in my stories! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I’m not kidding when I say that this salad tasted like the most indulgent thing we’ve eaten. Definitely didn’t taste like healthy lack luster food. But really good food that we want to repeat again and again. I had some Whole 30 compliant carnitas at a restaurant the next day after I had eaten these and they were nothing compared to the ones we made.

I followed the recipe as given on the website except for the following modifications. I doubled the recipe and used almost 4lb pork tenderloin (cut in 2-3” pieces), used 2 seasoning packets and pressure cooked on high for 30 min with a natural pressure release. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
We served it on a bed of lettuce, cherry tomatoes, cucumbers, bell peppers and fresh guacamole. The extra meat/seasoning juice served as our dressing. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

You did so well! It’s delicious!” I’ll pretend that I wasn’t even a tiny bit hurt by the sound of surprise in his voice. 😉

It’s so pretty.  Are you really trying to think about eating a rainbow everyday? Each color in foods does something different in the body, there are so many classes of phytonutrients.  We can’t just eat 1 or 2 vegetables to get the full spectrum.  Pills and powders are great when on the go but don’t contain the nuances that a whole food has beautifully made by nature. I love to draw inspiration from @deannaminich who wrote the Rainbow Diet.  Check her out for some great ideas!

I've been craving Salmon for a little over week now. 
Pan fried to get a nice crispy skin... flakey but rich and buttery (even though there is no butter!) The trick to perfect salmon is a nice hot pan -- no butter or oil needed. The salmon is it's own source of tasty healthy fat. Lay the salmon down so it sizzles, then just let it be. Seriously! Don't touch it or move it. Leave it be!!The skin will crisp to a deep golden brown as the meat of the fish cooks...You can watch as the flesh turns opaque. When it reaches the top of the fish... turn off the heat and let it finish cooking while you dress your plate. A couple of minutes later, you'll have the perfect salmon! 
I topped mine with a mix of fresh dill, olive oil, garden tomatoes and a good squeeze of fresh lemon. So good!

The best scallop dish of the year,
was at Tom Kitchin’s eponymous restaurant in Leith.

Started with carrot veloute, scallop dish.  White wine cream sauce with some herbs, sealed with pie crust was one of the best things that I have eaten this year.  Followed by turbot and lamb.  Finishing off the course menu with soufflé made my day.

Mmm! 👌 These tandoori chicken drumsticks are packed with Indian-inspired flavours and are made using our pasture-raised chicken from @centralparkfarms (Psst! Good news is, drumsticks are on sale as we speak). .

Tandoori chicken drumsticks 👇
1 cup coconut yogurt (or other plain yogurt)
2 tbsp olive oil
2 cloves garlic, finely minced
1 tbsp finely minced or pureed ginger
2 tsp curry powder
1 tsp each ground cumin, paprika, coriander and turmeric
Pinch of cayenne pepper and sea salt
+ 8 chicken drumsticks

Mix all the ingredients together and toss the chicken and marinade together in a bowl or bag. Place them in the oven at 400° for 35 minutes or until fully cooked. Voila!

My take on @thegardengrazer Thai quinoa salad with peanut sauce! Local mixed greens, quinoa, carrot ribbons, red pepper, cucumber, blanched snow peas, shredded chicken, and that dreamy peanut sauce with a few cashews and coconut flakes on top. This meal is AMAZING! So many textures (love a bowl with tons of texture!), plenty of flavor, and definitely not lacking on nutrition! Yum yum 😋
