Getting figgy with it!
What makes a salad special? Warm spices, the unexpected sweetness of fruity figs, the crunch of toasted almonds, and the rich flavors of arugula and baby spinach. Yummmm... perfect for #meatlessmonday !
Recipe (adapted from @testkitchen):
1. Dressing. 👗 In a large bowl, add 1 Tbsp olive oil, 1 tsp coriander, 1/2 tsp smoked paprika, and 1/4 tsp cinnamon. Microwave for 30 seconds. Then whisk in 3 Tbsp lemon juice, 1 tsp honey, 1/2 tsp salt, 1/4 tsp black pepper. Continuously whisk in 5 Tbsp olive oil.
2. Salad. 🥗 To the bowl, add 5oz mixed arugula/ baby spinach, 1/2 cup fresh parsley, 1 box drained chickpeas, 1 thinly sliced shallot, 8 fresh figs (quartered), and 1/2 cup sliced toasted almonds. Toss gently.
3. Enjoy!! 😋

Making something easy for breakfast is something that I like doing. There are times where I cook a big breakfast because I have a lot of free time and not in a hurry. A few weeks ago I made banana pancakes for the first time and it was a hit in our house. My kids and husband love the pancakes, so I made it again because they requested. Second dish I brought to the wknd’s Friendsgiving dinner - mock sweet potato and pecan casserole. As I was making it I changed things up quite a bit from the recipe I was following as it was too bland and the topping was not right so I have to go back and write down all the changes and measurement adjustments I made before I forget. This pic was taken just before baking so didn’t yet meld into the final yumminess that it was. And yes, peeps could not believe there wasn’t a sweet potato to be had! #keto#whatscooking

Life is too full of contrast to pretend we have it all figured out. Mistakes make us wiser. Grace makes us grateful. Pain makes us stronger. Love makes us hopeful. We’re only human, so we can’t be perfect; but we must pursue progress. 💪🏼
My life has been much like baking a chocolate cake. The eggs (or in my case, plant-based egg replacer) tastes pretty icky on their own. Even the cocoa powder is bitter without sweet ingredients…But even the sweetest sugar, without the diversity other parts, wouldn’t be that appetizing either. 👩🏻🍳
Life is a mix of the good and the bad. Contrast is what creates beauty. I wouldn’t be who I am without all the parts, even the worst parts that have “baked” me into who I am today. ☯️
Believing that ALL THINGS work together for your good is the simplest way to find peace in the midst of pain, despair, discomfort, or disease. Believe that now. Breathe deeply and take hold of hope. Don’t give bitterness the opportunity to take root in you. 🙏🏽
