I’ve officially found the BEST way to use up all the dying veggies in the fridge....a giant veggie scramble!! My college dining hall (@unhdining) used to serve up the cheesiest, most jam-packed scrambies and this meal makes a tiny dent in how much we’re missing @uofnh this back to school season ☹️ served alongside homemade home fries + avo with @traderjoes everything but the bagel seasoning...in an homage to my college days I also doused this in sriracha after the pic 🔥
Power Muesli with yogurt and blueberries for breakfast...it’s delish! It was super simple and quick to put together. Lots of opportunity to customize based on likes/dislikes, what you have on hand, or what’s on sale! #RunFastCookFastEatSlow
Day 132 - 15.8.18 🏃🏼♀️🚲. Another successful marathon training day for my daughter today ✅. 22 km around the Brisbane River on this fine day. It really was a perfect day for a run and bike ride. Went to our favourite cafe for lunch after the run and got this really delicious lunch - Farmhouse bowl with chicken (front) and Corned Beef with Saurkraut and Swiss Cheese on Rye Bread (back). Our 3 little 🐶🐶🐶were waiting for us to take them out for a walk when we got home, so walks we did. Finally home and on the couch where I will remain until I go to bed.

Having a pressure cooker is amazing! I can set it to cook my food, pop out for a run and have a delicious meal ready when I get home.
This soup took 6 minutes under pressure and made enough for lunch tomorrow. 👍

Has anyone else reached that point in #marathontraining where your body is like “eat all the things, all the time”? 🙋🏻♀️ Well, rather than keep up the bad eating habits summer travel brought me over the past two months, I’m trying to get back to my crunchy, granola self that you all love 😉 Homemade Lara bars (or Lara balls in this case 🤷🏻♀️), are easy enough that I was able to roll out a batch before breakfast. 🙌🏼 Here’s the recipe for all of you who are always interested in or curious about my “weird-Tessa-snacks.”
2 c. Pitted dates
1 c. Walnuts
4 T cocoa powder
1 T vanilla extract
Add some fun Mixings like carob chips and/or peanuts, blend it up in the food processor, roll ‘em out, and store them in the fridge.
Day 132 - 14.8.18 🥦👖. I woke up this morning not wanting to go to work. It was cold and all I wanted to do was stay in bed and snuggle with my boys. 🐶🐶🐶I dragged this sorry ass out of bed and went to work. I always have a good day when good staff are on, and today was one of those days. The best part about finishing at 4 today was knowing I don’t have to go back to work until Thursday. Bring on the public holiday!! I scooted out to North Lakes to pick up my jeans I ordered online, only to be told they couldn’t find my order. My order had been signed in as arrived but where they went after that, who knows🤷♀️. Anyway, the girls in the shop were ever so apologetic and just took the jeans I ordered off of the shelf. I ordered 2 x size 12 jeans but thought I would try them on before I took them home. Luckily I did bc, to my amazement, I had to downsize one pair to a size 10. I haven’t fitted into a size 10 for a few years now. I was stoked. I probably still look like a pumba but who cares when I can fit into a size 10 jean. Woohoo!! 🙌🏼
Day 131 - 13.8.18 💪🏻💪🏻. I have just realised it’s been 131 days since I signed up to @sami_rose_ 8 week challenge and I am still going strong. I have loved and still love counting macros and doing all of Sami’s exercises, along with my jogging and cycling. Although I am not at the weight I want to be yet, I am getting there. I came home from work, late again I might add, so I quickly did an ab workout, on top of my 10000 plus steps. I have been struggling these past weeks to keep on top of my protein so I am determined to focus on getting as much protein in me as possible. My daughter did a wonderful job making Cottage Pie for dins but didn’t realise that we had two different packs of mince in the freezer, one for the dogs and one for us. She was just about to put the potato on the mince when we realised she had used the pork mince we bought for the dogs. My poor darling, she had spent the last half hour making sure she weighed all the ingredients for the mince too. A little annoyed with herself, she started all over again, this time using the right mince. The boys loved it so she was at least happy about that. 🐶🐶🐶
this bowl of vegan mac n cheese was lunch today! the sauce includes lots of nutrients and vitamins from nutritional yeast + turmeric, and I used pasta made from chickpeas to add some protein. also mixed in some broccoli and kale because you can never have too many green veggies. :)
went to @pressedcafe with @tarynsplate today to discuss the wonder that is lehigh!! got their “sabich” panini which had grilled eggplant, hummus, amba, hard boiled eggs, cucumbers, tomatoes, tahini and lemon drizzle, and hot sauce all pressed on ciabatta!!
I blame @lifesparks.me for this: we are cooking.... kale!!! 😂 (Sweet potato, chickpea and kale stew). I've spent the past few years rolling my eyes at the kale crazy and commenting on how gross it must taste. And then, I caved in: if my partner and I want to grow our own vegetables and be self sufficient, cabbage and root vegetables are going to be a big part of our diet, so I thought I'd better try that kale stuff 😉

Dinner at Whole Foods last night. This Whole Foods had a little front porch that you could sit and eat in which we definitely took advantage of! Salads 🥗 with a mountain view ⛰ the box had greens, beets, celery, carrots 🥕 cabbage, cucumber 🥒 tomatoes 🍅 zucchini, broccoli 🥦 cauliflower, bell peppers 🌶 and I also had a chicken breast on the side. AND of course some water (which was 10,000 year old spring water!) because hydration is key 💦 🔑 👍🏻

Took me longer than I care to admit I need all three macronutrients (protein, carbs and fats) at every meal. (My body runs best on carbs!) It also took me longer to get over my “vegetable guilt.” I don’t need veggies at every meal—I won’t die if I don’t eat a bowl of greens. And, I’ve learned I satisfy my love of sweet and savory when I combine them in one meal.
Tonight’s post-run din (excluding the un-pictured berry/spinach/protein smoothie) was a delicious reminder that fall flavors are just around the corner 😄🍂 Boiled & mashed carrots 🥕 mixed with cooked organic quinoa, raw whole flax seeds, and peanut butter powder 🥜 with pumpkin pie spice seasoning and stevia for a healthy meal that hints at Thanksgiving desert 🥧😋
Day 130 - 12.8.18 🏃🏼♀️🐕🌮. After my gain on the scales yesterday, I am determined to shed them by next week. It’s not that I don’t want to exercise or am too lazy to exercise, it’s fitting it in around my shifts at work but if it means getting up early and exercising before work, then that’s what I do. Today I set off to do my run, not sure how far I was going to run, nor how my knee would even hold up, but I was full of energy. I ran 8 kms with absolute ease but my knee gave me some jip which slowed my pace down. I did do better this week running wise than last week though which I am pleased about. After my run we took the boys out for a big walk at Petrie park which they loved immensely. Not sure if they enjoyed their walk or their swim more. Made the most of my day off today, prepped lunches for the week, did all of the household chores and even cleaned the car. For dins we had a taco night. Haven’t had tacos in a long while now and they were delicious.

breakfast this morning after an early recovery run was chocolate tofu overnight oats topped with frozen berries! these oats are packed with plant based protein from silken tofu but still taste like dessert.🙌🏼 // blend 1/4 block of silken tofu + one date + 1.5 Tbl cacao powder + 2 Tbl almond milk in a food processor or high speed blender. then mix with 1/2 cup of rolled oats and allow to set in the fridge overnight. serve with your favorite toppings and enjoy!💯
Day 129 - 11.8.18. 🏃🏻♀️🚲🙌🏼. Another successful training day for my beautiful daughter. Just a casual (18km) around the Brisbane River today. With less than 11 weeks to go before we set off to NYC for the big marathon, Georgias training is on point. Well done darling, keep up the hard work. I really don’t know how you do it. At least with the Ekka in town, it wasn’t as busy on the river so we could run and ride without all the crazy people in the road. We weren’t going to eat out for lunch today and save our $$$ but we couldn’t resist @farmhousekedron yummy fish tacos again. 😋 No treat meal for me this week bc I put on weight this week. 😢 😢

Visiting Bend for the weekend to hit up my favorite spots and see @elysekopecky before the big book launch 🎉🍻! I was planning on going for a run along the river but it’s SO smoky in Bend so I slept in a little longer and made this creamy dreamy oat bowl😊

Day 128 - 10.8.18 🥂🍔. TGIF..... gosh what a long week. I set my alarm for 0545 this morning to go for a quick jog with my daughter before work. The alarm goes off so I half get dressed and then got back into bed to wait for my daughter to come and get me. She came to get me alright, she plonked herself right underneath the covers of my warm bed, still in her pjs I might add. How slack was she, at least I made an effort to go for a walk. So we lay in bed and decided to walk after work when we got home. Did that happen?? No. We will blame that retched traffic again. Tomorrow is my daughters big marathon training day, so we will both be up and out of the house for 830 to ride 20 something kms around the Brisbane river again. Time for NYC is creeping up. So exciting!!! And what day is it again tomorrow?? Weigh in day so those scales better not let me down.

yesterday i took a couple bins of vegetables to summer camp and had the kids make their own personal salads. maybe it was because i handed them all knives or they were hungry, or that i deliberately left the ranch dressing off the day’s plan, but by the time the delighted chopping and snacking was done, they all went back for fistfuls more, eating what was left completely unadorned, happily. i always smile at this because that’s often how i like vegetables too, and why this time of year, the best snacks are usually found in this space, raw, unwashed, and straight from the ground.
With my increase in mileage and intensity comes an increased need to eat foods that will fuel my runs and increase recover afterwards. This leads to my newest hobby - sneaking anti-inflammatory foods into any and everything. These zucchini fries are seasoned with turmeric and beet powder, and the tahini sauce with lemon and beets. The zucchini ? It’s high in vitamin C and manganese, potassium, and antioxidants. I’ll take a double 🙋♀️ Anti-inflammatory zucchini fries👇
1 healthy sized zucchini squash, tossed in turmeric, black pepper (for absorption), and garlic powder, air fryed until crispy (I used a little coconut oil), sprinkled with beet powder after cooked, and served with lemon-beet tahini (just plain @traderjoes tahini with a squeeze of lemon, a little parsley, and some @natureswaybrands beet powder).
Day 127 - 9.8.18 🍗🥔🥕🥦. I had every intention of coming home from work today to go for a jog but I got stuck in traffic for over an hour and by the time I got home it was dark. I don’t understand where all this traffic has come from over these past few months but it is really getting on my nerves. For dins tonight was chicken and vege. We quickly whipped this up in about 5 mins. It was pay day Wednesday so can’t wait for the weekend to restock the fridge.
