When you are in the mood for some pancakes but you don’t want to get off track. —
Banana Oat Pancakes from Fixate Cookbook
1 cup unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp. pure vanilla extract
1 tsp. baking powder, gluten-free
1/2 tsp. ground cinnamon (we love cinnamon, so I used 1 tsp.)
dash sea salt or Himalayan salt
2 cups old fashioned, gluten free, rolled oats
1/2 tsp. extra-virgin, organic coconut oil
3 cups fresh mixed berries (I made three batches, and used blueberries for one, then 1/2 cup mini chocolate chips for the next batch, and plain for the final batch to please the 3 tastes in my house).
1. place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in a blender. Blend until smooth.
2. Heat oil in nonstick skillet over medium-low heat.
3. Pour 1/4 cup batter onto the skilled; cook for 2-3 minutes, or until bubbles form around the edges of the pancake. Cook for additional 90 seconds.
4. Continue with the remaining batter.
5. Serve with fresh berries.
Per serving (2 pancakes)

Today's simple foodie tip: have fresh treats around, so you don't grab the junk. (And the real secret: Your body will actually start to crave fresh food when you eat it more often. The simple sweetness of a strawberry. The brininess of an olive. The creamy delight of homemade hummus). Real food is neither tasteless, nor boring! (like frozen broccoli and grilled chicken).
Your body wants to eat the way it was naturally designed to eat. It's giving you all the signals now. You just have to listen!
The food here is INCREDIBLE 🌿 Traditional Indonesian food is delicious and cheap, there’s healthy and vegan everything, smoothies and smoothie bowls galore, and if you’re craving authentic Italian...that’s here too, with a glass of lemoncello. Do y’all meal prep on Sundays?!
We used to cook rice and veggies and a bunch of things that we ended up not eating half of the time 🤦🏻♀️ and it would become such a daunting task that we would skip it more often than not.
But, in the past few weeks, we’ve been chopping up some veggies and just grilling chicken and frying bacon to make salads throughout the week! We store everything in containers or Ziplocs and assemble them first thing in the morning!
Breakfast 10/19/18. Overnight oats.
A whole week of these oats and I still love them. Here’s how I made them:
- 1/2 cup old fashion rolled oats
- 1 tsp chia seeds
- shredded coconut
- sprinkling of craisins
- a few chocolate chips (it’s a great little surprise)
- some ground cinnamon
- some pumpkin pie spice
- 2/3 cup of vanilla almond milk
Stir well, leave them overnight in the fridge. J & I found that we like these on the second day better. The first time we made them we added a little maple syrup for sweetness but you don’t really need it

VEGAN SAUSAGE ROLLS for #meatlessmonday 🌭🌭🌭
(v, df, nf, soy-free, low carb & RSF)
I’m not usually one to seek out imitation meat — I kinda like veggies to be their own awesome thing. However, when my local @summerhillmkt started carrying both @beyondmeat & @noevilfoods “vegan meat”, I was intrigued (not sponsored)...
We tried the @beyondmeat sausages for lunch yesterday (see my stories). They’re non-GMO, gluten-free & packed with 16g each of #plantprotein (mainly pea-based).
@noevilfoods products (in sausage rolls here) are also made with 100% plant-based protein, this time from beans, wheat berries & yeast (so these ones contain gluten). They are non-GMO, soy-free & low in carbs.
Since I try to focus on whole & minimally processed food, for me these products are “occasional consumption” only. That being said, if you’re on the hunt for clean & convenient fake meat, both @beyondmeat & @noevilfoods sausages are pretty darn yummy. Great texture & a nice punch of spice. A hit at my house, even with my 2 hardcore meat-loving teenaged & middle-aged boys!!
NOW FOR THE ROLLS...
@cocobynuco coconut turmeric wrap + @kitehillfoods almond milk ricotta (omit for nut-free) + 🥑 + @noevilfoods Italian sausage + watercress + @cookstown_greens seedling salad + @bubbiespickles kraut + sriracha.
Spread wrap with non-dairy ricotta and mashed avocado (pic 2). Top this with browned sausage (I did this in my @lodgecastiron skillet), greens and kraut (pic 3). Add a drizzle of sriracha (pic 4). Roll (pic 5) & cut in half (pic 6) or sushi-sized bites. Devour.

통밀식빵 위에 직접 만든 고구마 스프레드 바르고 양배추 케찹 계란까지 얹어 먹으면 #JMT 오픈 토스트 완성 💓 토스트 먹고 배불러서 닭바는 반만 먹어땁... 닭바는 나보다 냥이가 더 좋아해 ㅋㅋㅋ
TUNA PASTA BAKE
An oldie but a goldie!
I don't know any child that doesn't like pasta, and I know that my daughter would eat it for breakfast, lunch, and dinner if she could.
This meal is so easy and cheap too!
•tinned tuna, drained
What I did
1. boil the pasta until 75% cooked
2. add red onion to a pan and cook until soft, then add the tuna
3. once the tuna has been mixed with the onion, add the passata and stir.
4. turn off the heat and add some peas, and then the pasta
mix it all up and pop it into a casserole dish, then add some cheese
5. cook it for about 20 mins or until the cheese is golden and bubbly
Lovely served with a side salad and potato salad 🥗
Deconstructed sushi bowls for dinner tonight. I’m trying some new recipes now the weather has finally started to warm up again and I can never say no to sushi! This bowl had brown rice, tofu, nori, carrot, cucumber and avocado 🥑 it was a super easy and nourishing meal after a day of placement! 💕
Low carb Peanut Butter & Raspberry BlackBerry Chia Jelly chocolate super messy looking 😊 no bake PROTEIN Cookies ( 9g protein per serve, 142 cals approx). I had a massive peanut butter jelly choc craving yesterday so made these. As always I used @natvianaturalsweetener to sweeten the the peanut butter protein portion of the cookie, and I also used @natvianaturalsweetener to sweeten the jam which worked perfectly. Who else loves the combo of peanut butter, jelly & chocolate? ❤
Having chicken breast for lunch, beside pasta I choose Kewpie Baby Smile Cup Porridge. Tried all the 3 different taste, starting from 9 mths and 12 mths old. I’m full after I finish 1 and the half cup. 😅
Balance nutritional meal, NO preservatives, NO artificial coloring and flavoring.

Eating healthy really isn’t difficult when you stick to a whole-food diet as you’ll be able to eat in ABUNDANCE
Often it’s getting there for most people that seems to be the hardest part
Tips to staying plant-based & HEALTHY:
✨Choose healthy options: eg. Healthy carbs🍠sweet potatoes, oats, fruit, butternut squash instead of processed carbs like breads, cereals and whole wheat pasta✨
✨Reduce your sugar intake: It’s in almost every processed food! Sugar makes your body crave sweet foods constantly & can make you more stressed and tired✨
✨Plan your meals: Write out & save several meal options that sound appealing to you & go and buy the necessary ingredients to help prevent you from making unhealthy choices✨
✨Make time for your health: It’s easy to say you don’t have time to eat well but take a look at your day. Take an hour a week to prepare some healthy snacks & meals✨
BUT of course everything in moderation & treating yourself is 100% necessary. Not a specific cheat day though, I treat myself everyday!
