Sundays are my days. Houston mornings pass in soothing solitude as I chop, mince, tear, sample, sip and savor, prepping food for my family who bring uproarious laughter and mild chaos as soon as the kitchen door opens when they get back from church. My cooking is rewarded by spending the next few hours giggling at every story shared by my grandmother. 
Today’s menu: •Salad with local greens from a Houston farm, avocado, roasted beets, apple, cucumber ribbons, feta, and green onion with an orange garlic dressing and edible flowers. •Artichoke dip with fried sage leaves, hella lemon zest, Gouda, Romano, garlic, etc. on fresh salted rosemary sourdough from Wheatsville. •Oaxacan hot chocolate infused with cardamom paired with pecan coffee bread for a mid-afternoon dessert.

After our Whole Foods run, the hubby and I made some paninis for a late lunch (we also tried the new fuego @sietefoods tortillas). He did spicy mustard, turkey, and pepper jack cheese and I did @hopefoods spicy 🥑 hummus, @applegate turkey, spinach, and cherrie 🍅 both on @wholefoods seedless rye bread. Totally hit the spot! .

These waffles are full of fat and I devoured them like I hadn’t eaten in weeks! They were that good. They basically tasted like cake so it was only right to top them with @waldenfarmsinternational 🍓 syrup. I find a lot of my inspiration from IG posts so I’m hoping to pay it forward by sharing. This recipe was adapted from a larger yield version I found online, but consisted of butter, cream cheese, eggs, @questnutrition all purpose protein powder, vanilla, and @pyureorganic sweetener. Vegan chia pancakes.
I found the recipe and modified it with what I had:
-Blended oats (oat flour)
-Almond milk (or any plant based)
-Chia
-Vanilla
-Cinnamon
-Agave syrup (or maple) but probably a banana can be better instead.
And that's it..let it rest for a few minutes so the chia gets fluffy and cook it in a pan as any other pancake.

It wasn’t awful that’s for sure but it took me a while to get through 😂Our oven is broken so I couldn’t cook it slowly like I wanted to but defo be giving it another bash once the oven is fixed. Any steak cooking tips will also be greatly appreciated☺️

Die gibt es sogar in veganer Form😍 Aprikose ist mega lecker🤤 Ich habe ja immer Probleme mit Proteinriegeln, da meistens Kollagen(Gelatine) enthalten ist. Die mag ich persönlich nicht essen😆 Aber die Riegel von @rockanutrition sind alle vegetarisch oder sogar vegan 😍 Wieviele von euch essen eigentlich auch kein oder sehr wenig Fleisch? We have been MIA for the past few days because I had a bit of a health scare this week that I was working thru mentally processing and recovering from the biopsy which left me physically not feeling my best. Today I’m trying to remember that everything is a waiting game and that mental torment WILL destroy me if I let it, so I won’t. This is when the old me would use food to “comfort me”, but I’m not the old me anymore and that isn’t the comfort I need; it’s thru my amazing support system. I kept it keto while I wasn’t on here but I want to step back up to the plate so I can still crush my goals- which I will! Life is a journey and I’m learning you have to find peace and beauty during the ups AND the downs! I’m thankful for the roof over my head, the food in my belly, the water I drink, the animal babies I love, the greatest guy on earth who is walking this journey with me, and my amazing support system of friends, family, loved ones, my #fitfam, my #ketofam, and everyone who helps contribute to lifting me up. BANANA CHOCO-COVERED ICE CREAM POPS
° ° °
INGREDIENTS:
- 1 mashed banana
- 1/2 cup coconut cream (the thick part at the top of a refrigerated can of full-fat coconut milk)
- 1/2 tsp vanilla extract
- Chocolate: 1/2 cup cocoa butter, 1/2 cup cocoa powder, 1/4 cup coconut oil, 1/4 cup maple syrup, 30 drops stevia
- Topping: chopped peanuts
° ° °
DIRECTIONS:
- Blend banana, coconut cream, and vanilla extract together until smooth. Pour into popsciple molds and freeze until solid (4 hours or overnight).
- Melt the cocoa butter and coconut oil, then add the cocoa powder, maple syrup, and stevia.
- Remove the popsciples from the molds by running them under hot water, then pour two layers of the chocolate on them, followed by the chopped peanuts (You can pour the extra chocolate into chocolate molds for a bonus treat😊).
- Put the popsicles on parchment paper and pop them in the freezer for 10 mins to solidify. Store in the freezer in a container. Enjoy! 😋

Yesterday for lunch the boo and I tried #meditteranean platters from this new place that opened up a few months ago in #Schaumburg. I’ve since been there twice, trying both a deliciously packed pita sandwich wrap and now the platter. I’d have to say both were incomparably wonderful. The pitas are fluffy NOT doughy. I was spying on the packaging and it looks like they are imported from #Greece, or somewhere I do not know! I have never seen those #pitas anywhere else. They were soooo good!! Platter only cost $8.99, and you get to pick from spits that have a variety of meats with the country of origin written on top with some cute cultural facts about the history of #gyros, etc. on the wall. I should have clicked a pic!📸
And for those of you that know I am #saucequeen, they will literally give you as many !UNLIMITED! I got no joke about 5 sides of sauces! Tahini, a Baba Ganoush, a chili one🌶 , etc.

Breakfast: mangos and raspberries in some coffee creamer, a bowl of homemade chicken broth soup with PKU pasta and barley, half a Cambrooks Grilled cheese and about a bite of a green leaf itailen deessing salad.
Snack; small Mocha Frapp with coconut milk and no whip 
Supper: went to Olive Garden and had a whole salad to myself and only ate one breadstick because @nicWasylyshyn takes such good care of me even when I don't want it.
