When you are in the mood for some pancakes but you don’t want to get off track. —
Banana Oat Pancakes from Fixate Cookbook

INGREDIENTS
1 cup unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp. pure vanilla extract
1 tsp. baking powder, gluten-free
1/2 tsp. ground cinnamon (we love cinnamon, so I used 1 tsp.)
dash sea salt or Himalayan salt
2 cups old fashioned, gluten free, rolled oats
1/2 tsp. extra-virgin, organic coconut oil
3 cups fresh mixed berries (I made three batches, and used blueberries for one, then 1/2 cup mini chocolate chips for the next batch, and plain for the final batch to please the 3 tastes in my house).

DIRECTIONS
1. place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in a blender. Blend until smooth.
2. Heat oil in nonstick skillet over medium-low heat.
3. Pour 1/4 cup batter onto the skilled; cook for 2-3 minutes, or until bubbles form around the edges of the pancake. Cook for additional 90 seconds.
4. Continue with the remaining batter.
5. Serve with fresh berries.

Starting the week off healthy & happy...and full (with leftovers for tomorrow)! Tried a new recipe this morning. Sweet potato hash with eggs and avocado. Super yummy, filling & good for you. Was a great way to use some of the veggies we got from our weekly CSA.

Recipe:
🍁2 sweet potatoes peeled/cubed. Cook either in the microwave or on the stove with water until tender then drain and set aside on paper towels to dry.
🍁In a skillet on medium heat with a teaspoon of EVOO cook one diced medium yellow onion and red pepper. Add 1/4 teaspoon chili powder & 1/8 teaspoon cumin.
🍁When tender add potatoes and a can of drained/rinsed black beans.
🍁Serve with eggs and garnish with cilantro and avocado.

We used to cook rice and veggies and a bunch of things that we ended up not eating half of the time 🤦🏻‍♀️ and it would become such a daunting task that we would skip it more often than not.

But, in the past few weeks, we’ve been chopping up some veggies and just grilling chicken and frying bacon to make salads throughout the week! We store everything in containers or Ziplocs and assemble them first thing in the morning!

Breakfast 10/19/18. Overnight oats.
A whole week of these oats and I still love them. Here’s how I made them:
- 1/2 cup old fashion rolled oats
- 1 tsp chia seeds
- shredded coconut
- sprinkling of craisins
- a few chocolate chips (it’s a great little surprise)
- some ground cinnamon
- some pumpkin pie spice
- 2/3 cup of vanilla almond milk
Stir well, leave them overnight in the fridge. J & I found that we like these on the second day better. The first time we made them we added a little maple syrup for sweetness but you don’t really need it

I’m not usually one to seek out imitation meat — I kinda like veggies to be their own awesome thing.  However, when my local @summerhillmkt started carrying both @beyondmeat & @noevilfoods “vegan meat”, I was intrigued (not sponsored)...

We tried the @beyondmeat sausages for lunch yesterday (see my stories). They’re non-GMO, gluten-free & packed with 16g each of #plantprotein (mainly pea-based).

@noevilfoods products (in sausage rolls here) are also made with 100% plant-based protein, this time from beans, wheat berries & yeast (so these ones contain gluten). They are non-GMO, soy-free & low in carbs.

Since I try to focus on whole & minimally processed food, for me these products are “occasional consumption” only.  That being said, if you’re on the hunt for clean & convenient fake meat, both @beyondmeat & @noevilfoods sausages are pretty darn yummy.  Great texture & a nice punch of spice.  A hit at my house, even with my 2 hardcore meat-loving teenaged & middle-aged boys!!

Feeling a bit nostalgic to the good 'ol college days, so decided to make some buffalo wings with blue cheese dip. Marinated the wings overnight with some salt, pepper, paprika and garlic powder, then bake in a 200degree celcius oven for about 30mins. When done, toss with buffalo wings sauce (frank's hot sauce with butter).
Found a good recipe for the blue cheese sauce: 1/8cup crumbled blue cheese + 1/8cup greek yoghurt or sour cream + 1tsp minced garlic + 1tsp mayo + 2tbsp milk + salt & pepper... So good! 😋

How is your Monday going so far?😇 Mine is going pretty well: I went to my first two classes which were actually quite interesting and got off Uni at 11:45am so I thought why not have some pancakes as a second breakki as I saw @naturallystefanie protein pancake recipe yesterday. They turned out AMAZING and are so satisfying. I did mine with some apples, topped it with berries and maple syrup and enjoyed it while watching some YouTube videos. I’m now about to get back to organizing and working on my to do list, I hope your Monday is filled with motivation, sunshine and productivity as well 😇 have a great week!! RECIPE:

TUNA PASTA BAKE

An oldie but a goldie!
I don't know any child that doesn't like pasta, and I know that my daughter would eat it for breakfast, lunch, and dinner if she could.

This meal is so easy and cheap too!

Ingredients
•red onion
•pasta
•tinned tuna, drained
•peas
•passata
•cheese

What I did
1. boil the pasta until 75% cooked
2. add red onion to a pan and cook until soft, then add the tuna
3. once the tuna has been mixed with the onion, add the passata and stir.
4. turn off the heat and add some peas, and then the pasta
mix it all up and pop it into a casserole dish, then add some cheese
5. cook it for about 20 mins or until the cheese is golden and bubbly

Lovely served with a side salad and potato salad 🥗

Low carb Peanut Butter & Raspberry BlackBerry Chia Jelly chocolate super messy looking 😊 no bake PROTEIN Cookies ( 9g protein per serve, 142 cals approx). I had a massive peanut butter jelly choc craving yesterday so made these. As always I used @natvianaturalsweetener to sweeten the the peanut butter protein portion of the cookie, and I also used @natvianaturalsweetener to sweeten the jam which worked perfectly. Who else loves the combo of peanut butter, jelly & chocolate? ❤

Eating healthy really isn’t difficult when you stick to a whole-food diet as you’ll be able to eat in ABUNDANCE

Tips to staying plant-based & HEALTHY:
✨Choose healthy options: eg. Healthy carbs🍠sweet potatoes, oats, fruit, butternut squash instead of processed carbs like breads, cereals and whole wheat pasta✨
✨Reduce your sugar intake: It’s in almost every processed food! Sugar makes your body crave sweet foods constantly & can make you more stressed and tired✨
✨Plan your meals: Write out & save several meal options that sound appealing to you & go and buy the necessary ingredients to help prevent you from making unhealthy choices✨
✨Make time for your health: It’s easy to say you don’t have time to eat well but take a look at your day. Take an hour a week to prepare some healthy snacks & meals✨
BUT of course everything in moderation & treating yourself is 100% necessary. Not a specific cheat day though, I treat myself everyday!
