Love Brussel Sprouts? Here is the side dish for you! Toss sliced Sprouts in good olive oil, salt & pepper, crushed red chili flake & juice & zest of 1 lemon and red or white wine vinegar. I lightly sautéed down some salami in good olive oil, or you can use bacon, in a large cast iron. I used green and purple Brussel Sprouts and sautéed them down, stirring the salami off the bottom of the pan so it doesn’t burn. Finished them off in a preheated 450 degree oven until fork tender with a crisp bite. Sprouts from @imperfectproduce

For almost ten years my career involved fairly extensive travel and lots of hotel stays & restaurant meals. Staying at an @airbnb on this work trip was the best decision and made taking my five month old along for the ride a no brainer. I have all the fall feels and so does my kitchen. This easy turkey skillet dinner is fall-ized with butternut squash and pumpkin seeds. While southwest seasoning, diced tomatoes and green chilies bring the spice. This will be a weekly staple at our house.
Southwest Turkey & Squash Skillet
2 tbl olive oil
1 small yellow onion (or half of a large yellow onion), chopped
1 butternut squash, chopped into small cubes (approximately 2 cups)
1 lb ground turkey
1 tbl your favorite Southwest/taco seasoning (I make my own with even parts smoked paprika, chili powder, oregano, onion powder, garlic powder)
1 tsp salt
1 - 15 oz can diced tomatoes
1 - 4 oz can chopped green chilies
1/4 cup water
Handful (or two of spinach)
Brown rice, halved cherry tomatoes and roasted/salted pumpkin seeds for serving.
Heat olive oil in cast iron or large skillet over medium-high heat. Once hot, but not smoking add the onion and squash. Sauté until the vegetables start to soften.
Once the vegetables have softened and onions are getting translucent, add the ground turkey, Southwest seasoning and salt. Break apart meat and cook turkey for approximately 8-10 minutes until the meat is almost cooked through.
Add tomatoes, green chilies and water. Bring to a boil and then reduce to a simmer. Let the dish simmer for 5-8 minutes until it reaches a thick consistency. Take off the heat, add the spinach and stir around until the spinach cooks. Season with salt and pepper if needed.
Serve over brown rice with tomatoes and pumpkin seeds on top.

I had a mad craving for tacos today, maybe it’s full moon fever or maybe it’s just another Tuesday, either way I knew I had to have these! ~Chipotle Sweet Potato and Black Bean Tacos with Drunken Craisins 😊 ~I sautéed 2 diced sweet potatoes in olive oil and s&p until lightly browned, but still firm. Added some diced red onion, cumin, oregano, a can of rinsed and drained black beans, fresh squeezed lime juice, a finely chopped chipotle and a spoonful of adobo (from a can of chipotles in adobo) to taste. The final kicker was the craisins I had soaked in tequila all afternoon which when added helped pull together this amazing sauce of sorts (more like a coating). I sautéed the mixture until the sweet potatoes were cooked through and all the flavors had melded. I spooned it on warmed corn tortillas and topped them off with sliced avocados, cilantro, toasted pepitas (pumpkin seeds) and a drizzle of chipotle crema (Greek yogurt, honey, fresh squeezed lime, grind of salt and adobo to taste). The result was a smokey, earthy and spicy taco with a burst of sweetness from the rehydrated boozy craisins. It’s SO good, it’s one of those dishes I could eat every night this week and never tire of it 🌮🍹
~Unlike baking, which I enjoy too, I love the creativity and flexibility that come with cooking. I’ve learned to adjust the ingredients to my liking and taste as I go to figure out if I need more acid, sweetness, spice etc.. that way you can’t go wrong (we’ll most of the time ;-)
Salt and Pepper Prawns 🍤(and chicken because Harry eats a lot and I didn’t think we’d have enough shrimp)
Coat the shrimp in corn starch, salt and pepper. Fry in canola oil in small batches. Set aside to drain. Add garlic, green onions, and chilies to the wok and cook until fragrant. Toss the shrimp back in the wok and coat it with all the spicy, garlicky goodness. Sprinkle your finished product with sea salt and fresh cracked black pepper. 10/10 would make again.

It was a perfectly gloomy fall day here in Cleveland (am I the only one who sort of likes these once in a while?). Since I didn’t do much dinner prep on Sunday, this week is all about easy meals that don’t require much chopping. This slow cooker lentil chili from @budgetbytes is a good one, guys. And aside from cutting an onion, everything else was just pantry staples and spices. 🙌🏻🙌🏻🙌🏻
I love to develop recipes for my blog. It’s a dream come true because working women with children generally don’t have much (any) free time to pursue their real (unpaid) passions. So now, every week I create new recipes because being MEtired has given me the gift of time.
This desire to create original content does not, however, keep me from really admiring and enjoying the work of others.
Although I don’t know her personally, Chungha Rhee and I share a love for our dogs (both of whom are a bit nuts) and flavorful, easy recipes that home cooks can master. Like this one! Shrimp Scampi Gnocchi. Crispy and buttery little gnocchi swimming around in a pool of garlicky shrimp. It’s an amazingly clever and creative recipe and I hope you will go visit it @damn_delicious as fast as you can.
And while you’re at it, check out her Insta Stories in which she ridicules her dog, Butters. This dog’s antics (and fashionable, sporty outfits) will make you laugh your head off.

Crispy tortellini with bacon and peas.... would you believe me if I told you that this entire dish took less than 15 minuets from start to finish? And would you believe it if I told you that it took only one pan, and that you can cook the tortellini straight from the freezer in a skillet ? Well, it’s all true! The original recipe from @smittenkitchen ( her recipes are amazing )calls for prosciutto, I didn’t have any so I used bacon. She also garnished with fresh mint but I didn’t have that either so I used chives. It was so quick, so easy, and so delicious! Weeknight meals don’t need to be fast food but with a little creativity you can make good food fast!

•1 Brooklyn Bred Pizza Crust
•2 tablespoons spicy, brown mustard
•1 tablespoon olive oil
•1/4 cup red onions, thinly sliced
•1 package Kielbasa, thinly sliced
•1/4 cup Gouda cheese, cut into pieces •1/2 cup Granny Smith apples
•1/2 cup arugula
1.Preheat oven to 350°F. Spread mustard evenly over Brooklyn Bred Pizza Crust; set aside.
2.Heat olive oil in medium-sized skillet, over medium heat, add red onions and cook for about 2 minutes
3.Add Kielbasa slices and cook for about 5 minutes, stirring frequently. Remove mixture from skillet and top pizza crust.
4.Add cheese and bake in pre-heated oven for about 8-10 minutes, until crust is crispy and cheese is melted. Top with arugula & apples right before serving. Enjoy with a cold beer and good friends 🍻
